Reimagining the hot dog? You should. Customers are looking for
something they can go to for high-quality ingredients, but with a
lower cost. With the demand for dogs increasing, chefs from across
the country are reinventing the classic hot dog—maybe it’s something
you should be trying?
Americans love hot dogs, and for simple reasons. They’re inexpensive,
portable, and satisfy the appetite. But for operators, it’s a flexible
format for using your imagination—so get creative!
Someone once dreamed of duck sausage on a bed of pâté, with red
wine-infused mustard in New York. In California, a chicken sausage
was paired with spicy peanut-coconut satay dressing, cilantro-carrot
slaw, crushed peanuts, and Sriracha-infused aioli. Other operators on
the West Coast are skipping the traditional bun and wrapping the
dog in bacon, served with grilled onions and jalapeños. Chicago
grillers came up with a spicy option using andouille, pumpkin purée,
beer-braised pork, roasted green chilies, cinnamon crema, pumpkin
seeds, orange, and cilantro. Skip the ketchup and mustard and wrap
your dog in something fresh and fun.
