In the background there is a hint of a slightly acidic aroma that is reminiscent of vinegar. The finish is of decent length, although the youthfulness of the spirit comes through and it becomes quite sharp and dry right at the end. $12.00 IRISH WHISKEY RED BREAST 12- Irish Single Malt Redbreast is a very special whiskey within the Irish Distillers fortified as it's the only 12 year old Pure Pot Still available. It was first launched in 1939 as the brand name given to the pot still whiskey supplied by Jameson to whiskey bon ders before bottling at the distillery became the norm in 1968. Stocks of whiskey in bonders' stores petered out, and thus Redbreast all but disappeared until its re-launch by the distillery in the 1990s as a single pot still whiskey. This pure pot still whiskey is matured for a minimum of 12 years in sherry casks and Bourbon barrels. Like all good pot still whiskeys, it is strongly flavoured and assertive, making it a rare treat for the connoisseur of fine old whiskey. $14.00 TYRCONNELL- This pure pot still single malt whiskey uses only the most natural Irish ingredients of barley and fresh spring water. The resulting whiskey is then left to peacefully mature in oak casks stored in 200 year old granite warehouses allowing it to develop its full flavour and character. Light on the palate, this whiskey has a fruity taste to it, but not as overpowering as the nose. The finish is quite long and sweet. $8.00 Irish Blends BUSHMILLS- Aged for at least 5 years in used American bourbon and Spanish Oloroso sherry casks. A portion of the whiskey is aged in American oak bourbon casks and a portion is aged in Oloroso sherry oak casks. All of the whiskey is aged for 16 or more years. The final whiskey is blended prior to finishing in old oak Port wine pipes. With such a variety of oak used in the aging and finishing in there is the potential for great complexity. $12.00 JAMESON- Jameson is made with precisely the right amount of malted barley and exactly the right amount of unmalted barley, triple distilled, and matured in sherry and bourbon casks. Finish is moderately sweet and long. $9.00 BULLEIT 10- Bulleit 10 is light brown in color and looks like it’s been chill filtered. From the start, Bulleit 10′s time in oak is apparent with a solid oak-dominant nose. While the oak notes in the nose are strong, they aren’t overwhelming and they are well balanced with a nice cinnamon spice and a very slight undertone of vanilla and marzipan. Bulleit 10 leads with oak on the entry, strong but not overwhelming. The oak is supported by a really nice cinnamon spice, vanilla, and rye grain.
