WHISKY vs. WHISKEY
There are four distinct styles of whisky or whiskey in the world (the "e" is used in the United
States and Ireland, whereas Canadian and Scotch take their whisky without the "e") each with its
own particular characteristics. While all are produced in a broadly similar way, there are substantial differences between different countries' products including the choice of grains, number
of distillations, type of stills used, maturation period and type of oak barrels used. Each country's
style has its own special characteristics to discover and savor. Irish and Scotch are often compared to each other just as American and Canadian have broadly similar characteristics.
SCOTCH WHISKY
Single Malt Scotch
ABERFELDY 12- Great depth; flavors of sweet golden syrup and honey followed by spices
and a zesty hint of orange peel in a dry finish $12.00
ABERLOUR 16- Nose; Gentle, but complex. Sultana cake, baked fruits, wild flowers, melting

ABERLOUR A’BUNDAH- Highland Single Malt Scotch Cask Strength, Non-Chill Fil-
tered. A 19th-century-style whisky matured exclusively in Spanish oak Oloroso sherry butts, then
bottled at cask strength. Dark, luxurious and powerful; a superb after-dinner malt. Orange, black
cherries, dried fruit and ginger, spiked with dark bitter chocolate and enriched with sherry and

AUCHENTOSHAN THREE WOOD- The Three Wood is intense, sweet and complex.

Aged 21 Years, a marriage of rare Balvenie is transferred
to port casks, or pipes, which have held fine port wines. This scotch is silky and creamy with

BALVENIE PEATED CASK 17- Finished in new American oak casks, this complex
single malt is rich and spicy with layers of smokiness that reveals oaky honey and vanilla flavors. $28.00
BALVENIE RUM CASK 17- 17 year old Balvenie finished in a Jamaican rum cask, appeals to fans of the successful 14yo Rum Wood released three years previously. $24.00
BALVENIE SINGLE BARRELL 15- Rich and complex, suggestive of years of careful
ageing, it has a honeyed maltiness with vanilla, oak flavors and delicate spice notes. $14.50
BOWMORE ISLAY 12- It's a refreshing change of pace to see an Islay Scotch that's not
teeming with peatiness. Instead, this honey-colored spirit offers a well-balanced mix of smoke and
caramel, with a malty, cookie-dough sweetness in the background, finishing with allspice. $9.00
BUNNAHABHAIN 12-Fresh on the nose, with light peat and discreet smoke. More overt
peat on the nutty and fruity palate, but still restrained for an Islay. The finish is full-bodied and
lingering, with a hint of vanilla and some smoke. $9.00
CAOL ILA 12- Drinks well at natural strength; sweet start; pleasant, light fragrant smoki-
ness and a lengthy finish. Smooth, pleasant mouth-feel; with water light acidity, some salt and
still the sweeter notes. A complex balance of primary tastes. $10.50
CLYNELISH 14- It's the texture that makes this dram: a creamy, velvety mouth filling
sweetness, with a slightly metallic finish. Lots of tropical fruits, a thread of smoke and scented
candle character on the nose. $14.00
CRAGGANMORE 12- With wild aromas of ripe pear, quince, golden honey and oatmeal
raisin cookie (malt), it is a very accessible dram. $13.50
DALWHINNIE 15-
Smooth and somewhat waxy; tangy and mouth drying; easy to drink.
The overall flavor is dry with a bitter finish and aftertaste. Some heather flowers. $13.50
DALMORE 15- Flavors of zesty orange, chocolate, winter spice, and a hint of anise and
hickory with a malty barley and smoky espresso finish $12.00
DEANSTON 12-
Awonderful light citrusy syrup with a dash of cinnamon and allspice. Some
tart sour apple flavors developing mid palate help to balance out the afore-mentioned sweetness;
ending with a dry citrus finish $12.00
GLENFIDDICH 12- Our original, signature single malt Scotch whisky has matured for at
least 12 years in American and European oak casks. Elegantly rounded flavors with notes of
fresh pear and subtle oak. $10.00
GLENFIDDICH 18-
Remarkably rich aroma with ripe orchard fruit, spiced apple and a
robust oakiness. Richly delivers luxurious dried fruit, candy peel and dates overlaid with elegant oak notes. $14.50
GLENFIDDICH 21- This exceptional 21-Year-Old single malt Scotch whisky has been finished for four months in barrels that once contained rum from the Caribbean, infusing the
whisky with rich and indulgent toffee sweetness. $17.50
GLENGARIOCH-
Characterized by sweet vanilla, butterscotch and fresh green fruits; flavors of sweet butter cream and citrus cleanliness result in a fresh, gentle finish. $13.00
GLENKINCHIE 12-

GLENMORANGIE NECTAR D’OR-
The nose is full of dessert wines, a little fruitiness
with a good barley sweetness. The palate is quite full with more dessert wine notes, but with cereal notes and barley, a touch of malty spice and berry fruits with good oaky tannins and little
herbal notes. The finish is long with a good oaked note and more noble rot. $13.00
GLENMORANGIE FINEALTA-
Mandarin, marmalade and hints of cherry brandy
combine with the spiciness of nutmeg and ginger before icing sugar, chewy meringue and violet
build up slowly on the palate. $12.00
GLENMORANGIE QUINTA RUBAN-
The darkest, most intense whisky in the extra matured range. Tastes of mint chocolate and walnuts envelop the palate like velvet, laying
the foundations for rose, Turkish delight and sweet Seville oranges. $12.00
GLENROTHES 1998 -
1998 is more viscous and heavier in weight. It shows bright fruit
(lemon, caramelized pineapple, tangerine), honeyed vanilla, and marzipan with a peppering of
cinnamon and ginger. $13.00
HIGHLAND PARK 15-
A smooth, easy to drink single malt with a rich initially sweet
flavor developing into a dry smokiness with a long medium sweet then medium dry finish. $14.00
HIGHLAND PARK 18- Opens with a sweet and smoky fragrance of peat with notes of
honey and fruit. The palate is exceptionally smooth and light, with a bright, velvet texture and a
subtle smokiness. $16.00
LAPHROAIG 10-
In making Laphroaig, malted barley is dried over a peat fire. The smoke
from this peat, found only on Islay, gives Laphroaig its particularly rich flavor and earthy aromas of blue peat smoke, sweet nuttiness of barley, and the delicate heathery perfume of Islay's
streams. $9.00
MACALLAN 12-
The secret of The Macallan lies in defiant adherence to traditional
methods and ingredients. The continued use of finest Golden Promise barley and the insistence on
the finest oak casks are just two of the pre-requisites for perfection. $13.50
MACALLAN 18-
A quick jab of Sherry, followed by a nice smoky-oakiness, most definitely
from the cask. It's not slam-your-head-on-a-table obvious, but it rather apparent. $28.50
OBAN 14-
Mouth-filling autumn fruits - dried figs and honey-sweet spices; followed by a
smoky malty dryness. Smooth-sweet finish with oak-wood, dryness and a grain of salt. $14.50
OLD PULTENEY 12- Pale honey hue. The sense is greeted by a polite maltiness that’s more
dry than sweet. Starts out prickly at palate entry, then turns concentrated, malty and moderately smoky. Finishes in a warming, zesty flurry that displays maritime nuances of brine. $9.00
SCAPA 16- Scapa 16 year old has a sweet, rich, yet mellow malt fragrance that follows into
the palate where it mixes with a velvety, slightly bitter peat, floral citrus and overall brighter
profile than many Scotches. $12.00
TALISKER 10-
Powerful peat-smoke with seawater saltiness; the liquor of fresh oysters. A
rich, dried-fruit sweetness with clouds of smoke and strong barley-malt flavors, warming and

YAMAZAKI 12- This is a medium-bodied whisky with the aromas of dried fruits and honey.
It has a delicate, mellow taste with a lingering, woody, dry finish. $11.00

CHIVAS 12-
Round and creamy on the palate, Chivas 12 bursts with the rich taste of ripe,
honeyed apples, and notes of vanilla, hazelnut and butterscotch. $11.00
CHIVAS ROYAL SALUTE-
On the nose, this Scotch presents a fruity and smoky aroma,
as well as a very distinctive floral aroma. On the palate, you'll get nutty, buttery, and sweet

COMPASS BOX ASYLA- A blended Scotch whisky. Asyla was named for the plural of
asylum, this is a thick, fruity offering from Compass Box. With melon and ripe apple taste, with a

COMPASS BOX HEDONISM-
A terrific vatted grain whisky (the first of its type) from
tireless innovators Compass Box. Supple & silky, with elegant, rich flavors of vanilla, toffee,

CUTTY SARK-

Red Label, with its combination of light whiskies from Scotland’s east coast and dark, peaty whiskies from the west coast, created a blend with an extraordinary depth of flavor. $9.50
PIGS NOSE 5 YEAR- The color of Pig's Nose is golden amber and the nose is bold but
youthful. There is plenty of caramel and green fruit up front (think of apples and pears, especially peardrops) and these are followed by some distinct cereal grains and dried fruit (imagine
sultanas). In the background there is a hint of a slightly acidic aroma that is reminiscent of vinegar. The finish is of decent length, although the youthfulness of the spirit comes through and it
becomes quite sharp and dry right at the end. $12.00
IRISH WHISKEY
RED BREAST 12-
Irish Single Malt
Redbreast is a very special whiskey within the Irish Distillers fortified as
it's the only 12 year old Pure Pot Still available. It was first launched in 1939 as the brand name
given to the pot still whiskey supplied by Jameson to whiskey bon
ders before bottling at the distillery became the norm in 1968. Stocks of whiskey in bonders' stores
petered out, and thus Redbreast all but disappeared until its re-launch by the distillery in the
1990s as a single pot still whiskey. This pure pot still whiskey is matured for a minimum of 12
years in sherry casks and Bourbon barrels. Like all good pot still whiskeys, it is strongly flavoured and assertive, making it a rare treat for the connoisseur of fine old whiskey. $14.00
TYRCONNELL-
This pure pot still single malt whiskey uses only the most natural Irish ingredients of barley and fresh spring water. The resulting whiskey is then left to peacefully mature in oak casks stored in 200 year old granite warehouses allowing it to develop its full flavour
and character. Light on the palate, this whiskey has a fruity taste to it, but not as overpowering
as the nose. The finish is quite long and sweet. $8.00
Irish Blends
BUSHMILLS-
Aged for at least 5 years in used American bourbon and Spanish Oloroso
sherry casks. This inviting whiskey has a light and fruity spicy aroma, with spicy vanilla and
oak notes. $8.75
BUSHMILLS 16- Bushmills 16 Yr old Single Malt is comprised of whiskey distilled three
times. A portion of the whiskey is aged in American oak bourbon casks and a portion is aged in
Oloroso sherry oak casks. All of the whiskey is aged for 16 or more years. The final whiskey is
blended prior to finishing in old oak Port wine pipes. With such a variety of oak used in the
aging and finishing in there is the potential for great complexity. $12.00
JAMESON-
Jameson is made with precisely the right amount of malted barley and exactly
the right amount of unmalted barley, triple distilled, and matured in sherry and bourbon casks.
It holds a sweet fragrance of malted barley with butter tones and subtle oak. The palate is
marked by the same, with the grain turning darker and more apparent and notes of spicy nut
mixing in and out. $9.50
JAMESON GOLD RESERVE- A creative blend of three whiskeys of advanced years, one
of which is uniquely matured in virgin oak barrels. It’s the inspired choice of this virgin oak,
coupled with the bourbon barrels and sherry casks, that account for the whiskey’s satisfying
complexity and honey toasted sweetness. Round and smooth with sweet, spicy, toasted woodnotes

The superlative Jameson 18yo has long been considered one of the brightest

a mild whiskey that opens with lemon and malt notes with slight

Bourbon
BAKERS BOURBON-
Palate entry is integrated, sweet, and slightly peppery; at midpalate there’s a sweet oak/vanilla rush that backs off prior to the finish, leaving behind taste traces
of spirity heat, vanilla extract, cake frosting, butter cream and resin. $12.50
BASIL HAYDEN- Aged eight years at a relatively mild 80 proof, Basil Hayden's has a
broad appeal and is equally enjoyable alone or in cocktails such as a Juicy Basil and
Basil Bubbly. $12.00
BLANTON’S BOURBON- Blanton’s was the first single barrel bourbon. It is aged in one
barrel, and unlike most others, never blended with any other Bourbon. Sweet start, then going
dry quickly, creamy roundness to it, corn and rye. Touch of persimmon perhaps, char and rye.
Smooth whisper of a finish. $14.50
BOOKER NOES- Booker's Bourbon is the only uncut, unfiltered, straight-from-the-barrel,
connoisseur's sipping bourbon available today. It's bottled at its natural proof of
between 121 and 127, and aged between six and eight years. $12.00
BUFFALO TRACE-
Buffalo Trace Kentucky Straight Bourbon Whiskey is distilled, aged
and bottled at the most award-winning distillery in the world. Made from the finest corn, rye
and barley malt, this whiskey ages in new oak barrels for years in century old warehouses until
the peak of maturity. The taste is rich and complex, with hints of vanilla, toffee and candied
fruit. The smooth finish lingers on the palate. This will never change. $13.50
BULLEIT-
Initial nosing’s pick up soft, even flowery scents of violets and juniper; later whiffs
identify melded aromas of dried herbs, hay, dry cereal, wild flowers, mushrooms and spice.
Plenty of grip at palate entry; midpalate is plump and sweet corn-like. Finish is moderately
sweet and long. $9.00
BULLEIT 10- Bulleit 10 is light brown in color and looks like it’s been chill filtered. From the
start, Bulleit 10′s time in oak is apparent with a solid oak-dominant nose. While the oak notes in
the nose are strong, they aren’t overwhelming and they are well balanced with a nice cinnamon
spice and a very slight undertone of vanilla and marzipan. Bulleit 10 leads with oak on the entry, strong but not overwhelming. The oak is supported by a really nice cinnamon spice, vanilla,
and rye grain. The cinnamon spice intensifies in the midpalate coming to near parity with the
oak and then leads to a slightly spicy finish. $11.00
EAGLE RARE-
The body is full, while the palate offers a complexity that's hard to find in
most bourbon--deep fruit, a touch of honey, and even some smokiness. $9.50
ELIJAH CRAIG 12- The nose is quite thick and full. There is a beautiful sweetness with
notes of toasty oak, toffee, spicy stewed fruits, a touch of resin and a lovely crème anglaise character. The palate is full and sublimely smooth with notes if stewed Bramley apples, malmsey, a
touch of aniseed and a hint of spice. The finish is of good length with toasty oak notes and a
creamy sweetness. $8.00
ELIJAH CRAIG 18-
Elijah Craig 18, the oldest Single Barrel Bourbon available in the world,
is bottled solely from one barrel hand-selected by Master Distiller Parker Beam. Only a handful
of the millions of barrels of Bourbon aging in Kentucky have been allowed to mature this long.
The brand is named for Rev. Elijah Craig, the man who discovered the method of making true
Kentucky Bourbon when he stored his wares in barrels that had been charred by fire. $12.00
EVAN WILLIAMS HONEY RESERVE- Evan Williams Honey Reserve draws on the
equity of the Evan Williams brand franchise, but with a contemporary flair. At an approachable
70 proof, and with the addition of pure honey that gives it a sweet, easy-to-drink Bourbon flavor,
Evan Williams Honey Reserve lives up to its tagline of "All Flavor. No Sting. $9.00
JIM BEAM- Aromas of vanilla and delicate floral notes on the nose. This four-year-old Bourbon is initially sweet, with restrained vanilla, and then drier, oaky notes develop, fading into
furniture polish and soft malt in the finish. $9.25
KNOB CREEK-
This nine-year-old Bourbon is made with the same high-rye formula as Basil
Hayden’s. It has a nutty nose of sweet, tangy fruit and rye, with malt, spice and nuts on the palate, drying in the finish with notes of vanilla. $10.50
MAKERS MARK-
A comparatively soft and gentle spirit, which becomes very mellow as
it matures. A subtle, complex, clean nose with vanilla and spice aromas, a delicate floral note of
roses, plus lime and cocoa beans. $10.25
MAKERs MARK 46-
This is original “Red Wax” Maker’s Mark bourbon that received
additional aging in barrels containing internal “seared” French Oak staves. The French Oak
staves in “46” add firm, complex, dry spices, herb, and some polished leather “grip”, which dovetails well with Maker’s trademark layered sweetness. $9.00
OLD GRAND DAD-
Old Grand-Dad's lovely and buttery feel on the palate soars with
tangy fruit and baked pie flavors. An iconic brand, it remains true to its label of "straight"
bourbon. $9.00
RUSSELL’S RESERVE 10- A heady quaff with a nose of sweet vanilla and buttery cinnamon toast. In the mouth, it shows its age--woodier than other Wild Turkey products. It is very
sweet without being cloying, but also informed with the tang of orange peel and some spiciness.
The finish is all maple candy. In short, it's a warming tonic for when the weather turns cold.

WILD TURKEY 81- A deep, rich amber color, and a nose full of fruit, butterscotch, toffee
and toasted oak. On the tongue, you discover cigar-box sweetness, caramel, vanilla and pear,
