Dining B8 Jan. 28–Feb. 3, 2016 www.TheEpochTimes.com Sugar Cane Maui Restaurant and Rum House Has a Great View, Great Food, and Great Service ALL PHOTOS BY STEPHANIE CHASE By Stephanie Chase Master Chef Philippe Chin has opened a lovely restaurant in the middle of Front Street in Lahaina town on the island of Maui, Hawaii. Serving locally caught fish in unique ways, Chef Philippe is bringing his extraordinary cooking experience to the historic little fishing community and tourist town. The view is amazing from the second floor restaurant, and it’s a comfortable spot to hang loose, have a specialty cocktail, and enjoy the birds-eye view of downtown Lahaina. You can people watch while you enjoy the sun setting over the off-shore island of Lana’i. The service is excellent. Amanda can give you the details of the drinks and some of the ingredients, while Robbie can tell you the history of the restaurant, and make some excellent recommendations. You can start your meal with any of a nice selection of cocktails, rum, beers, or wines. My favorite is the Lilikoi Coconut Margarita. It’s made with Camarema tequila, 1800 coconut tequila, lilikoi juice, house-made lime sour, and shaved coconut. It’s refreshing and sweet, and tastes like Hawaii. You can also try the Dragon Fruit Cooler. It’s a mix of Dragonberry rum, Maui lychee, pressed upcountry lime, pineapple juice, and cranberry juice. It’s delicious! There’s also a Lana’i Iced Tea, a version of the Long Island Tea, but made with Old Lahaina Rum, a local favorite. Sugar Cane also offers such unique cocktails as a Guava Caipriniha, a Hawaiian Chili Chef Philippe Chin with fresh fish of the day. Both the drinks and the view are remarkable. Water Mojito, and a Sugar Cane Mai Tai. You can’t go wrong. There is also a wide selection of rum. Old Lahaina white, dark, and gold are all on the menu. Sammy’s Red Head is a must! It’s a locally-made sugar cane rum, with a macadamia nut infusion. Kona Brewing Company beers are on tap, and you can also choose from a good selection of bottled beers, as well as some very nice wines. The food is as varied as the drink. Daily fresh fish, house smoked meats, and local produce create the palette for your culinary adventure. The tried and true local favorite “pupu” (appetizer) is Chef Philippe’s Ahi Tuna Nachos. They’re very popular amongst the locals, and everyone in town seems to know about sea you can choose a fresh linecaught Macadamia Nut Crusted Mahi-Mahi with coconut rice, pineapple salsa, and Thai curry cream. Chef Philippe also makes a delicious Roasted Hawaiian Monchong, with Kula leek and edamame fondue, coconut rice, and lilikoi berre blanc. The fish is caught daily, and delivered whole to the restaurant, where they serve it fresh. The Lobster Risotto is superb, and is topped with half a pound of warm pacific lobster rail, and combined with kale, baby bok choy, edamame, and smoked portabello, in a lobster oil. From the land you have the choice of of Chin-Choy Short Ribs, Sugar Cane Glazed Pork Chop, Lamb Osso Bucco, a Prime Rib of Beef, or a Crab-Crusted them. Chef Philippe takes freshly caught sesame seared ahi tuna, cubed, and combines it with wonton chips and a trio of special sauces. It’s a delicious afternoon snack or a meal in itself. The Braised Pork Belly is savory, and comes with a bacon jam jus. You can also choose from Sesame Steamed Edamame, Kung Pao Calamari, and Burnt Butter Brussel Sprouts. The Sprouts are flavored with ground Maui vanilla, and are sweet and flavorful. There are a number of soups and salads, including Chin’s Spicy Thai Chowder. The chowder includes daily fresh fish, clams, coconut milk, and comes with a slice of focaccia. For your entrée, you can choose from “Aina” which is land, and “Kai” which is sea. From the Hale Malu Chicken Breast. The Sugar Cane Kai-Aina is the surf and turf, and comes with half a pound of lobster, Kona coffee crusted flatiron steak, sriracha compound butter, and winter vegetables. There’s a nice selection of sinful desserts. The Maui Gold Pineapple Upside-down Cake is perfect, and is my top choice. It’s sweet and creamy and comes with caramel sauce and Macadamia nut ice cream. You can also choose a Local-style Panna Cota, with house-made upcountry mint chocolate cookies, and Kula strawberries. There’s also a classic crème brûlée on the menu, as well as a Warm Flourless Chocolate Cake with Molokai macadamia nuts.
