you may be judged by a deity of your choice at a later date ). We do this because
we love you and look forward to you returning to us in good health.

From the Barrel
“But the other barrel”, said the bartender, “did you ever put on a straw hat with a yellow band around it and go up in
a balloon with a pretty girl, with $8,000,000 in your pocket all at the same time? That’s what 30 drops of it would
make you feel like. With two fingers of it inside you, you would bury your face in your hands and cry because there
wasn’t anything more worth while around for you to lick. Yes sir, the stuff in the second barrel was distilled elixir of
battle, money and high life. It was the colour of gold and as clear as glass, and it shone after dark like the sunshine
was still in it. A thousand years from now you’ll get a drink like that across the bar.”
Drinking is a way of
ending the day

From the Barrel….
Manhattan
19
circa 1870
Originating at the Manhattan Club in New York City in the early 1870s, it was invented by Dr.
Iain Marshall for a banquet hosted by Jennie Jerome (Lady Randolph Churchill, Winston's
mother) in honor of presidential candidate Samuel J. Tilden. The success of the banquet made the
drink fashionable.
Canadian Rye was the whisky of choice due to it’s availability during the prohibition era.
Aged 4 weeks in an American Oak whiskey barrel then bottled. Stirred with ice and fine strained.

vermouth and Angostura Bitters
Negroni
19
circa 1919
Invented in Florence, Italy in 1919, at Caffè Casoni, ex Caffè Giacosa, now called Caffè Cavalli.
Count Camillo Negroni invented it by asking the bartender, Fosco Scarselli, to strengthen his
favorite cocktail, the Americano, by adding gin rather than the normal soda water.
Aged 6 weeks in an American Oak whiskey barrel then bottled. Served over ice sphere.
Tanqueray gin, Cinzano Rosso sweet vermouth and Campari
Old Fashioned
Fashioned ( Rum )
22
circa 1880
Traditionally, the first use of the name "Old Fashioned" for a Bourbon whiskey cocktail was said
to have been, anachronistically, at the Pendennis Club, a gentlemen's club founded in 1881 in
Louisville, Kentucky. The recipe was said to have been invented by a bartender at that club in
honor of Colonel James E. Pepper, a prominent bourbon distiller, who brought it to the WaldorfAstoria Hotel bar in New York City.
Aged 4 weeks in an American Oak whiskey barrel then bottled. Served with shards of chipped ice.

From the Past
Jeremiah (Jerry) P. Thomas (1830 – December 15, 1885)
The Bartender Who Started It All. Like Davy Crockett, Daniel Boone and Buffalo Bill Cody, he was the sort of selfself
invented, semi-mythic
mythic figure that America seemed to spawn in great numbers during its rude adolescence.
I like to have a martini,
two at the very most.
After three I’m under the table,
After four I’m under the host.
- Dorothy Parker
From the Past….
Cock-tail is a stimulating liquor, composed of spirits of any kind, sugar, water, and bitters—it is
vulgarly called bittered sling, and is supposed to be an excellent electioneering potion, inasmuch as
it renders the heart stout and bold, at the same time that it fuddles the head. It is said, also to be
of great use to a democratic candidate: because a person, having swallowed a glass of it, is ready
to swallow any thing else.
― May 13, 1806, edition of The Balance and Columbian Repository

Caipirinha
17.5
The word caipirinha is the diminutive version of the word caipira, which refers to someone from
the countryside, being an almost exact equivalent of the American English hillbilly or the Lowland
Scots teuchter. The word may be used as either a masculine or a feminine noun, but when referring
to this drink it is only feminine (usage of diminutives is common in Brazil).

Moscow Mule
19
In 1941 when the first carload of Jack Morgan's Cock 'n' Bull ginger beer was railing over the
plains to give New Yorkers a happy surprise... Ice was ordered, limes procured, mugs ushered in
and the concoction put together. Cups were raised, the men counted five and down went the first
taste. It was good. It lifted the spirit to adventure. Four or five later the mixture was christened
the Moscow Mule.

From the Teetotallers
Prohibition in the United Sates began in 1920 and lasted for exactly 13 years, 10 months, 19 days, 17 hours, 32
minutes and 30 seconds. Although there was no prohibition, Australia and New Zealand had the renowned “6 o’clock
swill”. During a significant part of the 20th century, most Australian and New Zealand hotels shut their public bars
at 6 p.m. A culture developed of heavy drinking during the hour between finishing work at 5 p.m. and the bars closing
at this early hour.
“Always do sober what you said
you'd do drunk. That will teach
you to keep your mouth shut.”
- Ernest Hemingway
From the Teetotaller….

WHISK(E)Y
Whisky evolved from a Scottish drink called “uisge beatha”, which means "lively water" or "water

in the Exchequer Rolls, which were records of royal income and expenditure.

From the Vineyard
When tasting wine, hold the wine in the mouth for a moment or two and then either swallow it or, preferably, spit it
out, usually into a spittoon ( we do not encourage that here ). A really good wine will have a long aftertaste, while an
inferior wine will have a short aftertaste.
I cook with wine, sometimes
I even add it to the food.

From the Brewery
Four thousand years ago there was a beautiful tradition in Babylon: the father of the bride made a
Beer Month for the bridegroom during the first month after the wedding. This means that the
newly-married man could drink beer chock-full at his father-in-law’s expense.
Beer is proof that God loves
us and wants us to be happy.
- Franklin D Roosevelt
From the Bewery….
"The Hymn to Ninkasi", a prayer to the Mesopotamian goddess of beer, served as both a prayer and
as a method of remembering the recipe for beer in a culture.
