Saturday, September 26 Today’s Featured Oysters Today’s Selection of Oysters on the Half Shell (All orders are by the half dozen.) COROMANDEL (New Zealand) They possess rocky, fluted shells tinted with burnt orange and copper. The meat is pillowy white, skirted with a dramatic black mantle, and on the chewier side. -22 KUMAMOTO (Washington) Kumamotos have highly sculptured fluted shells with very deep cups. These cups hold large amounts of delicious nectar. Distinctly colored meats are firm and crisp. Their luscious flavor is fruity and slightly briny. -19 BELON (Maine) Here in the US, you can’t import French Belon oysters, but you can get ones grown in Maine. They are relatively rare and expensive, they pack a powerful punch of sea and mineral, with complex fish and celery notes, and a metallic zinc finish. If you’re feeling daring, take a chance to feast on the oyster that King Louis XIV would have enjoyed! -19 HARKER’S ISLAND (North Carolina) These are North Carolina’s most famous oyster. They are washed twice daily by the tides and are high in salinity. -15 SALT NUGGET (Washington) From the Western side of the Hood Canal, these oysters are crisp and very briny for a Pacific oyster. The meat fills the shell and the flavor is awesome… very sweet, fruity taste with just a hint of salt and cucumber in the background. -19 PIRATE PEARL (North Carolina) The flavor of these oysters is fantastic, with a medium salinity that works well raw on the half shell. They taste delicious, are a consistent size and have a pretty shell that presents beautifully. -15 FRENCH KISS (New Brunswick, Canada) These oysters have full, plump meats with medium body, a sharp brininess followed by a mild sweetness on the finish. -20 JAMES RIVER (Virginia) The James River, the southernmost river on the Chesapeake, is a famous old name for oysters.
