COMMUNITY NEWS Week of October 27, 2014 Anticipated Produce This Week ~ ~ ~ ~ ~ ~ ~ ~ Broccoli Carrots Celeriac Collards Leeks Watermelon Radishes Yukon Gold Potatoes Choice of Greens: Spinach, Arugula or Lettuce Mix Field Notes This week we will focus on preparing various root crops for winter storage. We plan on harvesting the winter storage carrot patch first, and then move on to celeriac this week. After that we still have radishes, turnips, parsnips, leeks and cabbages to harvest, and prepare for long term winter storage in our refrigerator. New this week is the vibrantly colored watermelon radish. You may even find a freshly harvested batch of sweet peppers in your share, if Monday morning’s frost doesn’t get too cold. Farm Fresh Recipe Radish and Carrot Confetti Salad This recipe can be adapted to accommodate more or fewer radishes or carrots, depending on what you have on hand and the flavor you prefer. I particularly love this salad with colored carrots, such as purple or yellow. 2 large watermelon radishes 1 1/2 lb carrots 1/4 cup Fresh feta cheese, crumbled 1/4 cup olive oil 2-3 Tbsp rice wine vinegar 2 Tbsp chopped fresh mint 2 Tbsp choppped fresh parsley salt and pepper to taste ~ Finely chop or grate radishes and carrots. ~ Add chopped herbs and feta cheese. ~ In a separate bowl, combine olive oil, vinegar, salt and pepper and whisk until combined. ~ Drizzle over confetti, toss and serve. Toss with leafy greens, grated carrot, cabbage, or any other salad of your choice — Peel the radish and slice it into this half moons to serve on a cheese or lunch plate. — Slice the radish thinly in rounds or wedges and marinate in red wine vinegar and olive oil for use in salads, layered into sandwiches as a garnish, or as a condiment alongside soups.
