Baked Apples
Microwave Meals
Serves 4
What do I need?
4 apples i.e. Granny Smiths
Juice of half a lemon or 1 tablespoon bottled lemon juice
2 tablespoons honey
3 tablespoons raisins
2 teaspoons cinnamon
2 teaspoons brown sugar
What do I do?
1. Slice the top off the apples and save for later. Core the apples,
leaving the bottom intact (about ½ inch).
2. In another bowl, mix together the lemon juice, honey, raisins and
cinnamon.
3. Divide and spoon the mixture into each of the apples.
4. Place the apples in a deep microwavable bowl and put the apple
tops back on.
5. Sprinkle the apples with a little brown sugar and cover with a plate
(this allows the apples to steam, creating the “baked” effect).
6. Put in the microwave for 5 minutes, allowing 2 extra minutes if the
apples are still hard.
Top tip
 Try using different dried fruits such as sultanas, chopped apricots,
cranberries or a dried fruit and nut mix.
