This is cold enough to cause frostbite and requires safety precautions. Staff should be trained to handle dryice with care and to always securely close Mistystix capsules before serving to guests. Food-grade dryice pellets are available in most cities. One pound of dryice pellets can be enough to serve about 50 drinks. The challenge is that dryice sublimates at a rate of five pounds per day in a cooler. This means it's important to have dryice delivered as close as possible to the time of use.
