GINGERBREAD MAN CHALLENGE
BADGE
Hello, and welcome to 2nd Spixworth Brownies (near Norwich) Gingerbread man
Challenge Badge. This challenge was the idea of Robin, one of our leaders who
is simply Gingerbread man mad!!
There are plenty of activities that can be completed in your unit meeting or why not
incorporate the whole badge as part of your next holiday/camp or sleepover.
There is no set amount of challenges you need to complete in order to gain the
challenge badge its up to you to decide if you feel you have done enough. We suggest
about 5, complete section 1 and a further 4 challenges from sections 2, 3 & 4.
Badges cost £1 each plus postage, any profit made will go to our packs fund's to help
in future costs of holidays and outings.

Section 1
Make and Decorate a
Gingerbread Man
Gingerbread man recipe
Ingredients
125g butter
95g soft brown sugar
115g syrup
1 egg
250g plain flour
40g self raising flour
1 tablespoon ground ginger
1 teaspoon bicarbonate of soda
To decorate
Jelly tots or chocolate beans (for buttons), chocolate drops, raisins
Tubes of different coloured icing
Line baking tray with greaseproof paper and preheat oven to 180˚C (350˚F/Gas 4).
Using electric beater beat, butter, sugar, syrup in a large bowl until light and creamy.
Add the egg and beat well. Sift the flours, ginger and bicarbonate of soda into the bowl and mix
with a palette knife until well combined.
Gather the dough up into a ball and knead gently with a well floured hand until smooth, but not
too much or the dough will become tough.
Roll out the dough until about 5mm thick (1/4 inch) on a piece of greaseproof paper on a board.
Place the board and dough into the fridge for 15 minutes until firm enough to cut, cut the
dough into shapes using a gingerbread man cutter. Press remaining dough together and re roll
and cut into more shapes.
Place cut out shapes onto the prepared baking tins and place in the oven for about 10 minutes
or until lightly browned. Allow them to cool .
The comes the fun part, decorate your gingerbread men however you like!

Ginger Cake
Ginger cake
Ingredients
175 g butter
175 g soft brown sugar
175 g golden syrup
200 ml milk
2 eggs, whisked
325 g self-raising flour
2 tsp ground ginger
1½ tsp bicarbonate of soda
Method
Heat oven to Gas 2, 150°C, 300°F. Butter and line a 1kg (2lb) loaf tin with baking paper.
Melt butter, sugar and syrup in a pan on a low heat, mix so that the sugar has melted into the
butter and syrup. remove from the heat, add the milk and blend until smooth, add the eggs and
mix in. Finally fold in the flour, ginger and bicarbonate of soda, pour into the prepared loaf tin.
Bake for 1 hour, then cover with baking paper and bake for another 30 minutes. To check that
the cake is cooked insert a knife into the middle and it should come out clean.
Remove cake from the oven and leave for 5 minutes, then turn out of the baking tin and cool. If
possible, wrap cake in greaseproof paper and leave it in a tin to enrich for a week as it improves
with age.

Ginger Biscuits
Ginger Biscuits
Ingredients
2 cups (225 g) 8 oz flour
2 teaspoons ground ginger
2 teaspoons baking powder
4 oz (100 g) margarine
1/2 cup (100 g) 4 oz sugar
1/2 teaspoon Bicarbonate of soda (Baking soda) dissolved in 1 teaspoon hot water
2 large tablespoons golden syrup (substitute light corn syrup), warmed
Method
1. Sift the flour, ginger and baking powder into a bowl.
2. Rub in the margarine. Add the sugar, then mix to a dough with the bicarbonate of soda
mixture and syrup.
3. Roll the mixture into walnut-sized balls and place them on greased baking sheets.
4. Press down the centre of each ball with your thumb.
5. Bake in a preheated moderately hot oven 200°C (400°F) Gas mark 6 for about 10 minutes.

Ginger Snaps
Old-Fashioned Ginger Snaps
Ingredients:
2 3/4 cups self-rising flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ginger
1/4 teaspoon cloves
1 cup brown sugar, packed
3/4 cup margarine or butter, softened
1 egg
1/4 cup light molasses
Preparation:
Combine flour, soda, and spices in a bowl and set aside. Cream sugar and margarine. Beat in egg
and molasses until light and fluffy. Stir in flour mixture just until blended. Chill for 2 hours or
more. Preheat oven to 375 degrees. Shape dough into 3/4-inch balls, roll in granulated sugar,
and place on lightly greased baking sheets about 2 inches apart. Flatten each ball with the
bottom of a glass dipped in sugar. Bake about 8 to 10 minutes, until set.
Makes 8 dozen cookies.

Gingerbread cupcakes
Ingredients
•
150 g butter, room temperature
•
150 g soft brown sugar
•
3 eggs
•
150 g self-raising flour
•
1 tsp ground ginger
•
½ tsp ground cinnamon
•
pinch freshly grated nutmeg (optional)
•
1 tbsp milk
For the frosting
•
200 g butter, at room temperature
•
50 g soft brown sugar
•
3 tbsp milk
•
200 g icing sugar
•
pinch ground cinnamon
Method
1.
Preheat the oven to 180C/160C fan/ gas 4.
2.
Cream together the butter and sugar until light and fluffy.
3.
Sift the flour together with the spices.
4.
Gradually mix the eggs into the creamed butter and sugar alternating with the flour to stop the
mix from curdling. Finally, stir through the milk.
5.
Place 12 paper cupcake cases into a muffin tin and divide the mixture between them.
6.
Bake for 15-20 minutes until golden and springy to the touch. Remove from the oven and cool
on a wire rack.
7.
For the frosting: while the cupcakes are cooking place 50 grams of the butter in a pan with the
brown sugar and cook over a low heat until melted. Add 2 tablespoons of the milk and stir to
form a thick glossy toffee sauce. Leave to one side to cool to room temperature. 7. In a large
mixing bowl beat the butter until smooth, then start to sift in the icing sugar, stirring regularly.
Add the toffee sauce and stir until thoroughly incorporated. Add a splash more of milk if the
mixture seems too thick - the frosting should be light and creamy.
8.
Put the frosting in a piping bag and pipe onto the cupcakes. Sprinkle with ground cinnamon
before serving.

pens, paints or even glitter

Section 3 - Make it
Gingerbread Man Greetings Card
You will need
1 x card blank or 1 sheet white A4 Card
folded in half.
1 x gingerbread man template
Some coloured papers for the background.
Brown card or brown funky foam.
Beads, small pom-poms or small buttons for
eyes and buttons.
Anything you can use to decorate your
gingerbread man with.
Glue and scissors.
Felt tip pens.
1. First cut out your background paper and glue
onto the card.
4. Decorate your gingerbread man, using beads or
buttons for the buttons.
5. Make a bow tie by making a small fan, with some
left over paper.
6. Draw on a face using felt tips.
2. Draw around your template onto the brown
card/foam and cut out the gingerbread man
3. Stick the template onto the middle of the card

Gingerbread Man friendship ring
1. Draw around a plate or use a compass to draw a circle
on a piece of paper
2. Cut out the circle
3. Fold the circle in half, 3 times to create a triangle
shape
4. Draw a ginger bread man on the triangle (see above)
5. Cut out the shape, remember to keep the gingerbread
man joined at the hands and feet
6. Unfold and decorate. The gingerbread men can be
the same or all different

Run, run as fast as you can
relay race
1. Print and cut out 1 gingerbread man per team and cut along the lines as indicated.
2. Place puzzle pieces at far end of allocated running distance for each team.
3. Place a marker halfway along each teams track (this is where each team member
has to put together the puzzle)
4. Ready, steady, run.. one at a time in relay style they run to the end, pick up one
piece of puzzle, stop at the marker match up the piece and then tag the next team
member. The first team to finish and put the puzzle together correctly wins the
game.
