Peanut Butter Primer Nuts & Bolts Our fresh-ground, unsalted peanut butter contains one simple ingredient: peanuts. This means you are spreading on the nutrition from 100% peanuts without extra calories from added fat and sugar. Jarred peanut butter, on the other hand, may contain ingredients you are trying to avoid or limit for health reasons, like: Hydrogenated Oils — Hydrogenation is the process of passing heated vegetable oil through hydrogen molecules to thicken the oil. Jarred peanut butter sometimes contains partially hydrogenated vegetable oils to prevent separation and keep the peanut butter smooth. But, partially hydrogenated oils contain trans-fatty acids. According to the American Heart Association, trans-fatty acids can have a negative effect on your blood cholesterol level. Dorothea Goat Cheese with Potato Chips — Yes, potato chips! Produced in Holland, this unusual cheese is aged for at least 60 days, during which time the temperature and humidity are adjusted to develop a nutty flavor, light cream-colored hue and firm body. Only 4,000 are made annually and the flavor is singular — one heck of a bar snack! Who’s Rich? “Le Grand Fromage,” Rich is a native New Yorker with 30+ years in the food industry. A founding employee at Macy’s Cellar and Dean & DeLuca, he has traveled the globe looking for great food on every continent except Antarctica. Humboldt Fog ® — Produced by Cypress Grove of Arcata, California in Humboldt County, Humboldt Fog is one of the first truly original U.S. artisan cheeses. Mold ripened with an edible ash that laces its center, Humboldt ripens from the outside in — fresh goat cheese surrounded by a pungent, runny shell — YUM! Or, more sophisticatedly put: creamy, light, powdery, slightly lemony and mildly goaty. How’s that? Drunken Goat — Made in the Murcia region of Spain, this cheese is bathed in Doble Pasta red wine for three days. Subsequent aging for 75 days allows the cheese and wine to mingle giving Drunken Goat its unique, rich, smooth flavor — mild and decidedly fruity. And its deep purplish rind makes for a striking presentation on a cheese board! Illustrations by James Bainbridge and Justin Guerino What’s so great about these burgers? The meat, of course. A custom, premium blend of Certified Angus Beef ®, chuck and brisket, they have a meaty history that goes back to the late 1800s. That’s when Harry Schweid first started selling the highest quality meats available to the best New York City butchers and restaurants. He and his sons have been doing it ever since but now focus on just one thing — burgers. And you can tell. Gjetost — Pronounced “YAY-toast,” meaning “goat cheese” in Norwegian, this unique cheese is made from a mixture of milk, cream and whey. It is simmered for hours on a flame, during which time the water evaporates and the milk sugar caramelizes into a sweet, dense, fudge-like texture. Eaten for breakfast, it is locally known as “candy cheese.” Montchevré Bucheron — Bucheron is one of the great French goat cheeses. Montchevré, hailing from Wisconsin, is every bit as good as the French icon — even better because they use fresh, never frozen, goat’s milk. This allows for a creamier, delicate flavor with a firm ivory center, surrounded by aged bloomy rind. A maaaa-gnificent hand-crafted cheese! Montchevré Goat Logs — These spreadable, 4 oz. goat logs in flavors such as Garlic & Herb, Honey and Plain offer the perfect opportunity to try new or try a few! Find them in our Fresh Meat Department in full-size patties and fun sliders. Fry them. Grill them. Bake or broil. We promise, they will become the best burgers you ever ate — bun deal! $7.99.
