At that time scores of distilleries in the various Guatemala districts were producing rum for the local market. Poor transportation, language and regional differences made national distribution of any single rum all but impossible. Over the years, many of these distilleries failed, others combined their production, aging and bottling companies into what is now Industrias Licoreras de Guatemala. Today there is only one distillery making rum, as defined by the Guatemalan laws that regulate alcohol production, and several others making cane spirits called aguardente. Best known for its revolutionary politics, Nicaragua is gaining attention for its rum, especially for the brand Flor de Caña. The liquor is still aged in oak barrels along sugar fields in the northern town of Chichigalpa, where the Pellas family started its first distillery in 1890. In Nicaragua, it is the main ingredient for a new national cocktail, the Macua, which blends rum with guava juice. The rum is named for Arango Y Ferro who was nicknamed ‘Dictador’ by the local population (around 1751) as he rose to prominence in the trade and commerce between the Spanish Colonies and Spain. Pichincha is a city in Pichincha Canton in the Manabí Province in Ecuador. It is situated along the Daule River. This rum, named after the city, is aged in Pedro Ximénez sherry casks, sometimes shown by the abbreviation ‘PX’. This adds to a unique flavor and a rich, smooth finish. The rums of Dzama are sourced from sugar cane planted in three geographical areas: Nosy Be island off the northern Coast of Madagascar; and two other areas in the northwest and northeast of the mainland. Today only three rum distilleries, from originally 31 distillates at its peak in 1928, remain operational in Reunion Island, producing some of the best rum of the Indian Ocean.
