Before modern science and advances in medicine rendered this ancient technology obsolete, when you
were sick or feeling “off” you were generally given a potion from your local apothecary. These
handcrafted potions by your highly knowledgeable and well-stocked apothecary (the original pharmacist)
made the world a better place. In the 19th and the 20th centuries, a great return to the highly skilled

distilled here in Colorado. We proudly use local bitters from Cocktailpunk. Our partnership with the
distilleries above (est. 8-2016) for our “well” is a reflection of our commitment to our growing craft spirits
industry and supporting local products whenever possible.
Our bartenders continue their experiments beyond our seasonally-changing cocktail list. Amber created
our own house-made Orangecello using fresh ingredients and locally distilled vodka.

We live in the “Napa Valley of Beer” and are proud of it. Denver is home to the “Great American Beer
Festival”, and there are 19 breweries within five square miles of The Ritz-Carlton, Denver. We are
privileged to be in the “Malted Mecca”, and additionally have rounded up the usual suspects in our
domestics and imports.
Our Brews have been organized for you from light to full body; and where available the international
bitterness units (IBU) and alcohol by volume (ABV) are included. Our great city has been the home since
its inception in 1982 of the Great American Beer Festival. The most recent 2015 34th Great American
Beer Festival held at the Denver Convention Center sampled over 3,500 brews from 750 breweries across
the country. Beers that have won either a gold, silver, or bronze medal in the past five years have been
notated.

Brews
Beer is perhaps the oldest beverage. Scholars agree it dates back to at least the fifth millennium BC; and it
was recorded in the written history of ancient Egypt and Mesopotamia. Chemical tests of ancient pottery
jars reveal that beer was produced as far back as about 7,000 years ago in what is today Iran. This
discovery reveals one of the earliest known uses of fermentation and is the earliest evidence of brewing
to date. In Mesopotamia, the oldest evidence of beer is believed to be a 6,000-year-old Sumerian tablet
depicting people drinking a beverage through reed straws from a communal bowl. The invention of
bread and beer has been argued to be responsible for humanity's ability to develop technology and build
civilization.

Better know a winemaker
I often tell my friends and family that wine is much like music; those of us who pull corks and share
stories are the music critics to the winemaker’s rock star. Wine Spectator is our Rolling Stone.
The wine industry, like music, is a complex and difficult industry to categorize and generalize. Terroir and
other descriptors continue to evolve as a terms in current and anything but common usage. In every case
there is a constant element: the winemaker.
You will find reverence paid to both the “overproduced” and “mainstream” to the “small terroir-driven”
and “minimalist”. Here, both the “top 40” and the “bootleg B-sides” will receive equal play. It takes
immense talent to turn a bottle of wine into either a teenage dream or to follow someone into the dark.
Winemaker:
Benoit Toquette
“For me it’s all about the mindset, about what kind of freedom you’re going to get. I’m the kind of person who likes to build
something, not just maintain it.”
Benoit Toquette is touted as one of the great young winemakers of today. He found his passion working
on a bottling line in Bordeaux. But he was not born into a winemaking family, a near absolute prerequisite
for success in France. Armed with his Masters degrees of Oenology and Chemistry he set out on a
journey with his mentor and friend to realize his goal of making limited production wines of high quality.
After graduation he began work with consulting winemaker Andy Erickson of Screaming Eagle fame,
ultimately forming a consulting business of his own. His résumé includes some of the biggest names in
the Valley: Arietta, Hartwell, Kata, Ovid, Screaming Eagle, and joined Realm in 2011 as winemaker and partner.

our dining scene continues to grow and thrive. In a counter-culture effort, we decided to dedicate this
page to return us to a more traditional recreational drug and kick it old school…circa Mesopotamia.
These wines below are on the list for no other reason than they are outstanding. It’s not always
something esoteric like Dornfelder or Refosco; nor will it be the latest and greatest cult wine. Guests

have asked me why I am willing to spend so much money on a bottle of wine. This quote above is my

white wine. Americans of course don't recognize the convention, so it becomes that thing of calling all of
their sparkling white "champagne", even though by definition they're not.

Pinot Gris, Albariño and the Softer Side
Wine much like clothes goes in and out of fashion. Pinot Gris (or Pinot Grigio in Italy), perhaps more
than any other white, has seen its share of cycles. Historically a noble varietal in the region of Alsace,
much of what has been popular over the past 20 years has been thin and without much to say about it.
The rest of the page includes fantastic international varietals that are light to medium bodied for those of
us who enjoy the style. Albariño and Verdejo are iconic crisp whites for Spain. Albariño is tropical and fruit
forward, while Verdejo in age can be almost nutty and both are wonderful with food.
Schipetto’s Friulano mutes that classic and oft-maligned almond notes and extends its aromas of pear and
apricot to a harmonized round finish. Finally, the Marchese exhibits lemon and clementine flavors and
earns its complexity from blending Grechetto, Sémillon and Chardonnay with a touch of oak aging. We
collected a diversity of style and have arranged them light to full for you.

Riesling and Grüner Veltliner
A truly noble varietal Riesling is more than just a sweet wine. It’s floral almost like perfume; tastes of
apple and other tree fruits, and due to its rich acidity cries out for food. This rich and esteemed white
wine is no longer just for the connoisseur or discerning palate. Over recent years haute diners have made
it a trend. If you prefer less sweet, stick with Alsace where there they tend to be drier; we prefer sweet
with spice. But what, pray tell is Grüner Veltliner? The prize of Austria this lime and lemon, nectarineflavored wine is the Swiss army knife of food pairings. Be it artichoke or kale, game of fish, it is more
difficult to miss a pairing than to find one. With a quality wine like Riesling or Grüner, both wines
improve greatly with age from top producers.

Sauvignon Blanc
One of the parents (along with Cabernet Franc) of Cabernet Sauvignon, this noble varietal of Bordeaux
has many different styles across the world. In California, where for a time it was called Fumé Blanc, it has
a more rounded style with hints of melon. In New Zealand it is more brazen, with intense acidity,
grapefruit, and in its most gravitas wines. Classically in France it has been used in Bordeaux as a blending
wine and produces some of the most food friendly, simply beautiful wines in the Loire Valley.

While Sauvignon Blanc and Chardonnay get all the press there are many more outstanding full-bodied
whites that deserve all of our attention. Just like the trend in red wines, blends have become increasing
more popular as wine lovers return to the wines of the Rhône and seek out new fun wines from the world’s
top wine producers. This page on most lists called “Interesting Whites” or some other boring and
meaningless title is our collection of white and rosé wines that carry with them weight. We cannot force you
into these wines; but we will certainly attempt to convince you.

Maya: Why are you so in to Pinot? I mean, it's like a thing with you.
Miles Raymond: Uh, I don't know, I don't know. Um, it's a hard grape to grow, as you know. Right? It's uh,
it's thin-skinned, temperamental, ripens early. It's, you know, it's not a survivor like Cabernet, which can
just grow anywhere and uh, thrive even when it's neglected. No, Pinot needs constant care and attention.
You know? And in fact it can only grow in these really specific, little, tucked away corners of the world.
And, and only the most patient and nurturing of growers can do it, really. Only somebody who really
takes the time to understand Pinot's potential can then coax it into its fullest expression. Then, I mean, oh
its flavors, they're just the most haunting and brilliant and thrilling and subtle and…ancient on the planet.

“The line I have used a thousand times, somewhat sarcastically of course is, ‘Grenache delivers what Pinot
Noir promises’. To me, a great Grenache, maybe particularly so from California, has these gorgeous, fruit
forward, perfume(y) aromatics – somewhat reminiscent of a great Pinot Noir. It has a feminine, silky
texture – also somewhat akin to a top flight Pinot. But unlike many Pinot Noirs, Grenache also has this
full, mouth-coating, all enveloping and long palate presence. In other words the nose and the palate are in
synch delivering a cascade of pleasure. That is, or perhaps should be, the character of California Grenache.
It doesn’t just wink at you, but then no dice. It delivers the goods.”

Often overlooked at steakhouses where Cabernet, Malbec and more full-bodied varietals dominate lists,
the “Rhône Reds” can be an excellent match for our hand-cut steaks. They can range from racy and ripe in

Tempranillo
Tempranillo is the prize of Spain; their crown jewel of wine is bold, rich, spicy and earthy. It is a personal
favorite of mine with a nice juicy ribeye steak. Certainly Rioja is where the world looks for great
Tempranillo, but great value can be found in Castilla y León and the Ribera del Duero.

Malbec & Zinfandel
Malbec and Zinfandel are the posh divas of the red wine world. They are the hot (both popular and
generally high octane) wines of today. If you enjoy red wines with body, intense colors, ripe fruit and a
long and lingering dry finish…look no further. Malbec historically is known as a blending varietal in
Bordeaux and classically found in the Cahors. Yet it seems now most at home in Argentina.
Years of cultivation have transformed the original Crljenak Kastelanski (ancient Croatian varietal) into
something truly unique and American, but Zinfandel is not indigenous to California. This grape loves the
sun and can produce wines that border on the fortified side of alcohol.

These words dropped Merlot sales by 25% in less than a year. And while I generally agree with Miles in
his explanation that few people ever remember, it took years for consumers to return to this noble
varietal. Done well its wines are velvet in a glass and as cool as the other side of the pillow. Cabernet
Franc (one parent to Cabernet Sauvignon) joins seamlessly with Merlot in the right bank of Bordeaux.
Earthy with rich dried fruits on its own in the Loire, it has recently found its place with winemakers in
the cooler regions of California and Washington.
