Scholars agree it dates back to at least the fifth millennium BC; and it was recorded in the written history of ancient Egypt and Mesopotamia. Chemical tests of ancient pottery jars reveal that beer was produced as far back as about 7,000 years ago in what is today Iran. This discovery reveals one of the earliest known uses of fermentation and is the earliest evidence of brewing to date. In Mesopotamia, the oldest evidence of beer is believed to be a 6,000-year-old Sumerian tablet depicting people drinking a beverage through reed straws from a communal bowl. The invention of bread and beer has been argued to be responsible for humanity's ability to develop technology and build civilization. Wine Spectator is our Rolling Stone. The wine industry, like music, is a complex and difficult industry to categorize and generalize. Terroir and other descriptors continue to evolve as a terms in current and anything but common usage. In every case there is a constant element: the winemaker. You will find reverence paid to both the “overproduced” and “mainstream” to the “small terroir-driven” and “minimalist”. Here, both the “top 40” and the “bootleg B-sides” will receive equal play. It takes immense talent to turn a bottle of wine into either a teenage dream or to follow someone into the dark. Winemaker: Benoit Toquette “For me it’s all about the mindset, about what kind of freedom you’re going to get. I’m the kind of person who likes to build something, not just maintain it.” Benoit Toquette is touted as one of the great young winemakers of today. He found his passion working on a bottling line in Bordeaux. But he was not born into a winemaking family, a near absolute prerequisite for success in France. Armed with his Masters degrees of Oenology and Chemistry he set out on a journey with his mentor and friend to realize his goal of making limited production wines of high quality. After graduation he began work with consulting winemaker Andy Erickson of Screaming Eagle fame, ultimately forming a consulting business of his own. Named for the union between mother nature, the land, and mankind, each of his wines is a 55 case masterpiece. Historically a noble varietal in the region of Alsace, much of what has been popular over the past 20 years has been thin and without much to say about it. The rest of the page includes fantastic international varietals that are light to medium bodied for those of us who enjoy the style. Albariño and Verdejo are iconic crisp whites for Spain. Albariño is tropical and fruit forward, while Verdejo in age can be almost nutty and both are wonderful with food. It’s floral almost like perfume; tastes of apple and other tree fruits, and due to its rich acidity cries out for food. This rich and esteemed white wine is no longer just for the connoisseur or discerning palate. Over recent years haute diners have made it a trend. If you prefer less sweet, stick with Alsace where there they tend to be drier; we prefer sweet with spice. But what, pray tell is Grüner Veltliner? The prize of Austria this lime and lemon, nectarineflavored wine is the Swiss army knife of food pairings. Be it artichoke or kale, game of fish, it is more difficult to miss a pairing than to find one. Malbec historically is known as a blending varietal in Bordeaux and classically found in the Cahors. Yet it seems now most at home in Argentina. Years of cultivation have transformed the original Crljenak Kastelanski (ancient Croatian varietal) into something truly unique and American, but Zinfandel is not indigenous to California. And while I generally agree with Miles in his explanation that few people ever remember, it took years for consumers to return to this noble varietal. Done well its wines are velvet in a glass and as cool as the other side of the pillow. Cabernet Franc (one parent to Cabernet Sauvignon) joins seamlessly with Merlot in the right bank of Bordeaux.
