This is a completely new variety among einkorn wheats, from the point of view
of genetics, of agronomy and of technology, owing to the following features:
- Naked kernels;
- Heavy weight of the nude seed;
- Early earing and maturation.
The feature “nakedness of seed” is very important in agronomy and technology, as it allows immediate use of the harvest, in order to the first industrial transformation (grinding)
without the necessity of divesting the kernels. This allows obvious advantages as far as
costs and eventual losses caused by breakage are concerned. This last aspect is of particular importance considering the extreme softness of the grain of Triticum monococcum.
