Huh? What Did You Say?

O
ver the next several issues of
Kerr County People, I will discuss
various topics related to Hearing
Health and Hearing Conservation.
Noise exposure is the number ONE
reason Americans have hearing loss,
followed by Presbycusis (the aging
process). Other causes include acoustic trauma (sudden VERY loud sounds),
blows to the head, various illnesses,
ototoxic (OTO-Latin for ear; TOXICself explanatory) medications to name
a few.
Historically, men predominantly have
had more incidence of hearing loss
than women. This is due to the fact
that men were more exposed to loud
noises. Men used to be the ones fighting the wars, working in refineries
and foundries and manufacturing facilities. With the changes in society,
women are now catching up with a
more balanced percentage with men
for hearing loss (usually due to noise
exposure).
What are some signs or symptoms
pointing to a hearing problem? First,
many people are not truly aware they
even have a hearing loss. Family members are often the first alert. Family members ask the hearing impaired
person to turn down the TV. Hearing
impairment causes people to concentrate harder when listening to conversations. Noisy situations like talking
while driving in a car, or in a restaurant are often problem areas. I frequently hear a spouse say, “We were
driving along, and I told Joe, ‘Look, at
the deer’. He will then say “WHAT?
What beer?” Difficulty understanding speech is the most common issue.
People hear, but often DO NOT understand WHAT was said. Other signs
of a hearing loss are asking people to
repeat more often, making mistakes
with things that are said. Sometimes
this is worth a good laugh, but many
times the laugh comes at the expense
of the person having the hearing impairment.

If you think you have a hearing loss,
you should get an Audiometric Evaluation. The United States Department of
Health recommends a complete physical annually for every American age
50 and over. This includes a hearing
evaluation, but if you are not saying,
“Huh?” during your doctor’s appointment, he may not require it. I’ll have
more info in the next edition of Kerr
County People! Stay tuned!!!
Next, a little bit about Kevin . . . he is a
5th generation Texan. Kevin’s father grew
up west of Fredericksburg in the Pilot
Knob area (towards Doss) and his family
still own the ranch where his dad grew up.
Kevin’s mother was a native of Stonewall;
her home place is now part of the LBJ State
Park. One of the dog-run style log cabins
at the visitor’s center was built by Kevin’s
great, great, great grandfather. So, he has
deep roots in the Hill Country.
Professionally, Kevin has been working
with hearing impaired in the Hill Country
for almost 12 years now. He truly loves his
work. Kevin often chuckles that he may
be at the office 60 hours/week, but the 15
hours paying bills and doing administrative
duties is the only time he really works.

Barbecue Kerrville Style
“Barbecue” or “Bar-b-que”. However you spell it, expect many opinions from folks all over the country.
It might be “pulled pork” served over
corn cakes in middle Tennessee or ribs
in Memphis or mutton in East Kentucky, beef in Kansas City or seafood
in New Orleans. In Texas, BEEF rules
in the form of
brisket, ribs and
sausage. And, of
course, chicken
and turkey are
found on many
pits. The marinade, rubs and
sauces make a
great difference
in the taste of
the meats and
are usually family secrets not shared by the pit masters. All agree good barbecue is not
done on an open grill in a few minutes.
It is cooked on a closed grill where the
smoke is allowed to flavor the meat
over a long period of time – 8 to 12
hours are not uncommon.
In this area, we are fortunate to be
able to enjoy exceptional barbecue—
at social functions or in restaurants. At
Buzzie’s Bar-B-Que, 213 Schreiner
Street, near downtown Kerrville, my
favorite is the slow cooked brisket
(usually on a bun) with their great

sauce. The meat has always been moist
and well flavored from the rubs and
smoke. The slaw and potato salad are
great sides and I have found the beans
to be exceptional. I’ve eaten the ribs,
chicken and sausage at Buzzie’s; all
are excellent, but I usually stick with
the brisket. Someday I’ll have to try
the ham and turkey.
The “new” look at Buzzie’s is clean,
fresh and a great place to entertain
out of town guests. Texas Monthly
has rated them as one of the 50 “Best
BBQ joints in Texas.” Try them and
I’m sure you’ll agree. They’re open
Tuesday through Saturday from 11 am
until 8 pm and Sundays 11 am until 3
pm. Call them at 830-257-4540.
At Bill’s Bar-B-Que, 1909 Junction Highway, between Kerrville and
Ingram, you’ll find an old-fashioned
Texas barbecue establishment. To
enter you must walk by the smoking pits, which sets your taste buds.
Nothing is fancy here, but you’re in
for a feast. The dining room reaches
out to the past, with newspaper clippings, mounts, photographs and other
memorabilia on the walls—even a
photograph of the late movie star Jane
Mansfield (maybe you’re too young to
remember?).
Here my choice is always the pork
ribs, which fall off the bone. Actually, some of the best I’ve had any-

where. My wife loves the pork loin
and for good reason—always moist
and flavorful. We rate both as excellent. We also enjoy the potato salad,
slaw and beans. Their desserts are
wonderful.
Bill’s also serves brisket, sausage,
chicken and turkey. Several times,
Bill’s has been voted best bar-b-que in
Kerr County. Stop by and you’ll taste
why. Since Bill’s is on my way home
to Hunt, I often stop by for takeout.
They’re open Tuesday through Saturday from 11 am until 7 pm and may be

In this quest to report on barbecue,
I ate at two other establishments, but
will reserve comment for another
time. Take your family out and enjoy
yourselves . . . things will get better.

Kitchen Design Part 2 … for those who care
H
ome Designing is one of my
favorite topics. Because I really
enjoy eating, the kitchen gets a
lot of my attention. Here are two more
major areas of kitchen design that often
fall into the “I wish I’d thought of that
earlier” category.
side corner cabinets, appliances usually end up in one or both corners with
only one way in and out. If you add an
island, it often becomes a “turn-style”
as people circle around it trying to stay
out of the cook’s way. A “U” shaped
kitchen needs to be at least 400 square
feet of floor space to compensate for
the weaknesses of the layout.
Kitchen Layout
Kitchens seem to be designed in one of
three basic floor plans:

Galley kitchens with a straight
run of cabinets on each side.
“L” shaped kitchens with or
without an island.
“U” shaped kitchens
with or without an
island.

Galley kitchens are usually small
and require less walking for the cook,
with two ways in and out. They rarely
have separate preparation and cleaning areas. I don’t like mixing germs
from used dishes with my food prep
area. A small galley kitchen usually
compromises appliance placement and
adequate storage for the three types of
storage discussed in the last issue.
“L” shaped kitchens are my
personal favorite. These are
usually open to the rest of the
home with two ways in and out.
This layout also lends itself to a
rectangular or neo-angle island
with room for seating and serving. A weakness of this design
is placing appliances or sinks in
the corner, losing good storage
in the corner cabinets.
“U” shaped kitchens are my
least favorite. Having two in8

Appliances create the traffic patterns
in your kitchen. The sink, cook top and
refrigerator need to be placed correctly
to create a favorable traffic pattern.
Here are a few simple rules about appliance placement.

Never put appliances or the sink
in a corner. This blocks both
countertop work surfaces and
both sets of doors and drawers by the
person using the appliance.
Don’t place sinks or cook tops at
the end of a countertop or island.
Most of us like to wash dishes and
use our cook top from our left to our
right. Counter space is needed on each
side, minimum of 18”.

Never place the refrigerator on
“the other side” of the cooking
area. The refrigerator should be
on the outside edge of the kitchen to
keep people from crossing the cooking
area.
Don’t place a cook top in an
island or peninsula where you
plan to sit and eat. Cook tops are
hot and messy and not conducive to an
enjoyable serving and eating area.

Obviously, new design is easier, but
care should be taken when remodeling.
Consider bringing in more space by removing a wall or incorporating a seldom used breakfast nook. Remember
to think outside the box and create your
own personally enjoyable kitchen.

sold in 2005 to pursue residential remodeling.

internationally acclaimed master
furniture maker, teacher and
mentor, Michael C. Fortune of
Ontario, Canada; Asa Christiana
of Newton, Connecticut, Editor
of Fine Woodworking Magazine;
and Paul Sellers, dean of the
Homestead Heritage Woodworking
School of Woodworking, in Waco,
Texas. Over $8,000 in prizes were
presented at the awards ceremony
on November 1.
With its surface crafted ffrom a single board of curly mahogany
harvested in Honduras iin 1985, a conference table is possibly
the most imposing entry
entry, while perhaps the most ornate piece
is a lighted contempor
contemporary design fashioned from acrylic
plastic and reminiscen
reminiscent of the throne chair of Egyptian
Queen Hetepheres. This year’s show
includes the work of twenty-one new
artists among the fifty-six selected to
display their work.
Complementing the furniture show
again this year is the Hill Country
Turners Exhibit, a display of
decorative and functional woodturned
art, which opens November 6 and
runs through December 7.

s I entered the Inn of the Hills Conference Center on October 7th, camera in hand, I was overwhelmed to see six
hundred people amidst pink balloons and tables laden with
pastel pink roses. The excitement in the room was electric and everyone appeared to be having a great time.

ut this wasn’t your ordinary luncheon and fashion show. The
Executive Women’s Club hosts this event each October to
raise money for the Peterson Regional Medical Center Breast
Cancer Patient Assistance Fund. This fund assists local breast cancer
patients with the costs of their treatment and recovery. For instance,
the fund might help someone purchase a wig or medication. In 2008
much of the assistance came in the form of gasoline! During the
past six years, The Executive Women’s Club has donated more than
$55,000 to the fund and every dime remains in our community.

Upper Back & Rib Pain
S
it or stand quietly. Take a few
slow, deep breaths. Do you
feel a sense of calm and relaxation? Or do you experience a sharp stabbing pain that won’t
go away even if you shift your position a dozen different ways? If the latter is true, you’re probably suffering
from subluxation. Subluxation occurs
when a vertebra, or more commonly a rib, comes slightly out of place
and pinches a nerve, causing muscle
spasms.
The medical establishment lists the
causes of upper back pain as poor
posture, overuse of muscles, osteoporosis, ruptured disc, heart disease, and
arthritis. But the fact is that close to
99 percent of all upper back and rib
pain is due to something the medical
community never mentions: subluxation.
Standard medical treatment for upper back and/or rib pain usually involves X-rays (which will never show
a subluxation), an MRI (which rarely,
if ever, shows the cause of the pain),
painkillers, physical therapy, massage, correction posture, a new bed,
a new computer chair––and yes, even
surgery! If you have a pinched nerve,
none of these remedies will cure your
back pain.

However, subluxations are easy for
a chiropractor to fix. Through palpitation, the irritated area can be isolated. Some chiropractors use therapy
to relax muscles and ease soreness.
To actually correct the subluxation,
a chiropractor folds your arms across
your chest, then places a fist under
your spine and applies pressure on
your folded arms and rib cage. The rib
that is out of place instantly pops back
into position.
Ribs can pop out of place in the
spine as a result of accidents, athletic
exertion or strains,
coughing, vomiting—sometimes
it “just happens”
with no apparent
cause. Regardless
of the problem’s
origin, the treatment is the same.
That’s
because
the pain is due to
a pinched nerve,
and when the
pressure on the
nerve is relieved
the pain subsides.
Occasionally—in
about one case out
of one hundred––
heart disease, bone
cancer, ruptured
disc, or some other condition may
be responsible for
upper back or rib
pain.

through a complete medical examination, with X-rays and perhaps an
MRI to rule out rare causes such as
bone cancer, fracture, etc., at a cost of
thousands of dollars. It’s more likely,
though, that a chiropractor can help

nemy Way is designed
to develop personal freedom- meaning simply to
be in the world with other people
and events without reacting—
therefore without suffering. An
emotional reaction seems to create
suffering. Suffering could be high
blood pressure, anger, sadness,
self-pity or even fear.
In Enemy Way, we choose to
look for those occasions when
we react, to people or events. We can
find our reactive nature in two powerful ways—when we have judgmental,
critical thoughts and when we feel an
unpleasant feeling in our physical body.
This feeling could be a tight stomach,
choking throat or even a headache.
Holistic Medicine seems to teach that
repeating these reactions can even create dis-ease in the body, if done long
enough. Many medical doctors have
spoken about stress and
the effects on the body.
In Enemy Way we take
responsibility for creating our emotions with
our thoughts—believing that thoughts
create emotions—not people or events
outside of ourselves. Our thoughts create our stress.
Therefore, I begin to search for whom
I react to, and when I react. I am “stalking” myself—like hunting. I stalk my
thoughts and reactions. I stalk to find
when I judge, feel self-pity, fear or selfimportance. These thoughts are called
the “Four Voices”. These Four Voices
were given to me around age two or
three—when I was taught to think in a
certain way. It seems important to realize that judging others is not really my

fault, as I was taught to think this way
by parents, teachers, peers and maybe
even churches. It is however, my responsibility to drop the Four Voices if
I do not like the effect on my body and
relationships. This is called being aware
and responsible—aware of my thoughts
and the emotions they create and being
responsible for changing them. Some
self-judgmental thoughts begin with “I
should, I ought to, I need to, I must, I
have to, I’ve got to, I am supposed to or
myself, I do not care if someone is
critical of me. So, if I use the mirror, I can learn about myself without asking someone else to tell me
how I am—I can use my relationships to see what I react to and have
some awareness and choice. Many
people dislike the idea that I hate
in others the disowned part of myself. In Enemy Way we accept that
this is a reality, and a useful way
of discovering my programming—
because I was taught to judge and
there is no anger or guilt without
judgment. I may have even been taught
that anger is wrong, instead of an alternate belief that my anger is a useful way
to find my judgment of others or myself. Enemy Way even uses the belief
that Spirit sends me people that I react
to, to help me find my reactions, my
judgment, my fear, my self-importance
and my self-pity. I might even marry
the person—I might find that I have
married my greatest spiritual teacher.
A quick summary might
suggest: stalk my thoughts
and body reactions, see if
the Four Voices are my
way of thinking, choose
to think love and acceptance of myself
and others, and use other people to find
my reactions and critical evaluations,
then providing choice for a new way
of thinking—in effect—to “change my
mind. “
Again, I thank and honor my Teacher,
Germaine Sitting Crow, a respected Elder in the Wase Wakpah Community in
South Dakota. She is my older Sister,
my Teacher and she may have saved
my life and spirit from being consumed
by the demon composed of the Four
Voices.
“...if I do not criticize myself, I do not
care if someone is critical of me.”
I better”. Some self-important thoughts
begin with “you should, you ought to,
etc.” We can delete these words from
our thoughts and dialogue and relationships seem to go much better. It appears
that teaching children goes remarkably
better when these words are not used.
Another part of Enemy Way is the use
of the “mirror.” This means that if I react to angry people, then there is some
unexpressed or hidden anger within me
that I have denied. If I react to criticism
and judgment from others, it shows me
that I must judge and criticize myself.
The belief is that if I do not criticize

to look at an ugly tree cage. Native

the landscape has increased
each year. The list of plants
successful “outside the fence”
grows shorter and shorter. A local

garden for butterflies, hummingbirds and other types of wildlife.
Physical barriers like fences are always best, and they don’t necessarily have to be 8’ tall game fences.
A good rule of thumb is that the
closer the fence is to the house say
40’ to 20’ the shorter the fence or
enclosure can be.
Some native plant and wildscape
enthusiasts have built enclosures
around desirable trees such as Escarpment Black Cherry. By surrounding these trees with a 4’ tall
welded wire fence, they protect
this area from deer browse. An
incredible seed bank exists in our
native soils. Many shoots of desirable and colorful wildflowers and
ornamental woodies are browsed
out by hungry deer. By simply taking that pressure off the plants, we
are rewarded with diverse and colorful wildscapes.

for assisted living clients
History of non-compliance or mismanagement of medications is the
number one reason for hospitalization in the elderly.
T
he elderly are at risk for exacerbation of their disease
primarily because they do not
take their medications as prescribed.
Administering medications by professionals is the most effective measure to ensure the elderly take their
medications as prescribed by their
physician. In addition, education
and teaching on the medications as to
their effects on the patient’s disease
process is the second most beneficial
factor in preventing the patient from
simply not taking their medications
or just taking them at random times.
Patients in an Assisted Living environment often need additional help
in receiving their daily medications.
Medication Management Programs
provided by home health agencies to
patients in an Assisted Living environment can be extremely helpful in
ensuring patients take their medications as prescribed by their physician.
Medication administration is not
considered a reimbursable service by
Medicare or Medicaid. Therefore,
Medication Management is paid for
by the patient or family members.
Remember, taking ones medications
as prescribed by the physician is essential in controlling the disease process. You can make a difference in
your health care by actively participating and seeking the assistance of
professionals.

in a timely manner, or
● Patients who do not take the appropriate
amount prescribed by the physician; or
● Patients who simply want the expertise of a
skilled nurse managing their medications.
HOW TO GET STARTED ON A MEDICATION MANGEMENT PLAN: Contact
a home health agency that provides Medication
Management Services. The home health agency
will arrange for an assessment by an RN who
will review the patient’s medications and coordinate with the attending physician regarding
the right dose, right route, right medication and
the reason for such medication.

Big Brothers Big Sisters (BBBS) is a mentoring program
