but thoroughly festive choice at Christmas; it is naturally low in cholesterol
so a healthier option too.

How to cook the
Perfect Roast Turkey
1.
When you get your fresh Jon Thorner’s whole turkey,
place it uncovered on a plate on the lowest part of your
refrigerator. Before it goes into the the oven, the turkey
must be at room temperature, so remove from the
fridge for at least an hour before cooking.
2.
If you are stuffing your turkey, fill the neck cavity
between the flesh and skin, tuck the neck flap under the
bird’s back and secure it with a small skewer. Make sure
you weigh your turkey again to include the extra weight
of the stuffing. Spread softened butter all over the bird
and season with salt and pepper, before covering with
foil.
3.
Preheat your oven to 230°C/450°F/Gas 8 (or 210°C
for fan ovens). Place the turkey in a large roasting tin
breast side down – this keeps the breast meat succulent
while the brown meat cooks evenly.
4.
Cook at the preheated temperature for the first 30
minutes, after this reduce the oven temperature to
190°C/375°F/Gas 5 (or 170°C for fan ovens). For a turkey
over 4kg the cooking time is 20 minutes per kg plus 90
minutes and for a turkey under 4kg it is 20 minutes per
kg plus 70 minutes
5.
About half an hour before the full cooking time,
remove the foil and carefully turn the turkey over to
bronze the breast. When cooked pierce the thickest
part of the leg with a skewer and press against the leg
to see if the juices run clear without any traces of pink.
If the juices are clear, the turkey is cooked. If using a
thermometer, the internal cooked temperature will be
165°F/74°C.
6.
Cover the turkey loosely with foil and leave to rest for
30 minutes before serving.

. . and for the perfect roast potatoes
Serves 6
1.5kg Maris Piper potatoes, peeled
110g goose fat, lard or dripping
Salt and pepper
2 tbsp plain flour
Place a roasting tray with the fat in on the highest
shelf in the oven. In a pot of salted boiling water, add
the potatoes and boil for about 10 minutes. When the
outer edges of the potatoes start to go fluffy, but the
inside remains firm, the potatoes are ready - run a fork
across the surface, if it stays smooth boil for a further
few minutes.
Drain the water and with a lid on the saucepan held
down firmly, shake the saucepan vigorously up and
down. Season with salt and pepper and sprinkle the flour
over the potatoes - this is the secret to crunchy edges!
When there is an hour left of your turkey cooking time,
carefully add the potatoes into the hot fat of the roasting
tray and baste so they are completely covered in the fat.
Cook on the highest shelf of the oven. After an hour,
check the potatoes and turn and cook for a further 30
minutes until the turkey is fully rested and ready to serve.
Festive Butcher’s Tips
Turkey is still the most popluar meat to grace the dining table at Christmas. But not everyone wants
turkey or sometimes it can be too big a joint for a smaller gathering. So if you are looking for a change,
but still want the wow factor here are some suggestions for an alternative Christmas meal.
Stuffed Guinea Fowl
Venison
Our Gold award winning stuffed guinea fowl
was created especially for Christmas. The
sausagemeat stuffing has brie and blackberries
to create a wonderful festive flavour. Guinea
fowl has its own distinct taste, it’s a cross
between game and chicken, but not too
overpowering and we definitely recommend
you try it. Our 1 -1.5kg (2-3lbs) bird will feed
between 3-4 people. When cooking this bird,
treat it like a chicken, 20 minutes per 450g plus
an extra 20 minutes.
Our venison is sourced from the south of
England and is a lovely choice for a festive
meal. Venison is also naturally low in
cholesterol so a healthier option too.
We offer a boneless haunch or a premium
boneless loin roast. It’s very quick to cook, just
10 mins per 450g (1lb) plus 20 mins.
Stuffed P heasant
Using the same festive stuffing as the guinea
fowl, this creation has become an award
winner too and another great choice for
Christmas. Our stuffed boneless pheasant will
serve 2 - 3 people and takes about 1 hour and
20 minutes to cook at 180°C /350°F/Gas Mark
4, or 20-25 mins per 450g (1lb) plus 20 mins.
Saddle of Lamb
We use our garlic and rosemary stuffing in this
boneless joint of lamb; these flavours work
amazingly well together and create such a
delicious roast. We recommend about 225
– 350g (8-12oz) of raw meat per person, so
approximately a 1kg joint will feed 2 -3 people,
2kg joint will feed 5 people and a 3kg joint will
feed 8 people.
Our lamb is sourced from West Country farms
and is fantastic quality.

sizes for any non-meat eating guests. For the carnivores, try our Handmade
Beef Wellington made from the finest local beef fillet or how about our
festive Turkey En Croute with Orange & Cranberry Stuffing?

Duck and Black Cherry added to the list. Our delicious quiches, pork pies
