Instructions: You don't need any fancy tools to mix your dressing. A bowl and wisk works well for most vinaigrette's
but a small food processor or bullet blender is best for creamy dressings. Alternatively, you can even combine all
ingredients for the vinaigrette in an old jar or salad dressing shaker container. Use the ratios as a guide. Depending on
the type of acid you may want more or less oil (i.e., lemon juice is more acidic than some vinegars so it's important to
taste). the dressing before you apply to your salad. A touch of salt or honey can often be the key missing ingredient.
Notes: The real secret to a great salad is in the dressing. The right dressing will enhance the flavors of the salad and
take it from good to great. Experiment with your dressing, careful not to overdo the other seasonings until you create
the flavor you like best. I like to have tubes of fresh herbs on hand to save time and for when you find yourself
without a fresh ingredient (i.e. , garlic, basil, cilantro, ginger, etc.) .

Balsamic Vinaigrette :
1/2 cup EVOO
1/4 cup balsamic vinegar
1-2 minced shallots or garlic (1-2 cloves minced or 1 tsp powder)
1/2-1 tsp honey
Salt & fresh ground pepper to taste
Optional: Dijon mustard, minced fresh or dried herbs of your choice
Asian Vinaigrette:
2 Tbsp soy or tamari sauce
2 Tbsp lemon juice
2 1/2 Tbsp. grapeseed oil
1/2 tbsp sesame oil
1 teaspoon grated, fresh ginger
2 tsp honey
1 garlic clove, crushed
