Big news at the club!
The Windermere Club welcomes Food
and Beverage Director Darrell Hanshaw
and Marketing Director Cathy Cobbs to its
staff. Darrell, a recently retired
restauranteur, has more than 30 years in
the food industry. He has already made a
significant impact, working as a consultant

during the Member-Guest tournament to
ensure the our golfers and their guests were well-fed during
the three-day event. He has many great ideas about how to
enhance the dining experience at the club, and has been
working with Chef Chris Hyler developing menus for future
events.
“We’ve played a lot of

world and we’ve enjoyed
this one as much or
more than any of them.
I’d love to retire here.”

Thirty-three teams teed off Thursday, April 29 for The Windermere Club’s
annual Member-Guest Tournament. After a wonderful day playing the
practice round, the group was treated to entertainment by Jim LeBlanc
and Chef Hyler’s barbeque dinner, followed by the
calcutta.

Refreshed and ready, the golfers reconvened the following day for three
9-hole matches. The final day, after two nine-hole matches, the event was
topped off by a gala dinner for 100 in the upstairs ballroom, awards and
great music provided by the “No Holes Barred” band.

This event was a huge success, thanks to the hours of hard work by the
men’s golf committee, headed by Gene Bobrow. In addition, the lovely
ladies of Windermere— Cathy Anderson, Judy Hegler and Margie
Randolph—kept registration running smoothly. Helping with the hole-inone contest on Saturday were Karen Bobrow, Beth Cunningham, Ann
Dedman, and Cathy Anderson. Al Brazell was also integral to the process,
assisting with cart beverages and monitoring hole #17. A big thanks to
Kelly LeBruyere ([email protected]), who shot pictures of each team
to commemorate the event.

Shrimp and
Tasso Gravy
with Grits
The Story behind
the Recipe…..
Shrimp and grits
have been a staple in
the south for centuries, to the point that
the southern states
from the Carolinas to
Louisiana are known
as the “Grit Belt.”
This recipe from Chef
Hyler embraces all
that is great about
this traditional dish.
You can find all of
these ingredients,
including tasso ham
and crab base, at
grocery stores like
Publix, Whole Foods
or the Fresh Market.
Ingredients for the shrimp and tasso gravy:
1/2 lb. butter
2 yellow onions, diced
1 green bell pepper
1 jalapeno, minced
1 and 1/2 cup flour
2 tbsp. crab base
1 pint heavy cream
2 quarts water
1 and 1/2 lbs. chopped tasso ham
2 lbs. shrimp
Saute the veggies in the butter for 10 minutes in a stockpot. Add flour and stir for
two minutes over medium heat. Add water, heavy cream and crab base. Bring to a
slow boil. Remove from heat and add shrimp and tasso ham. Salt and pepper to
taste.
Ingredients for grits
2 quarts water
1 quart half and half
2 tbsp. chicken base
3 cups of stone ground grits
1 8-oz. package cream cheese
Salt and pepper to taste
Bring water, half and half, chicken base and salt and pepper to a boil. Slowly stir in
the grits and cut back heat to medium low. Simmer slowly for 35-40 minutes, whisking often. Remove from heat when grits are to your liking, and add the cream
cheese. Whisk until smooth. Serves 10-12

Member profile – Rob Szwec and Kathy Ponton
Can you tell that these two are “big” tennis fans? And they show
it by going above and beyond in drying out the courts so that
play can continue, no matter the weather. “Our philosophy is to
always make things happen,” said Rob. “If it means drying off the
courts before a match, then that’s what we do.”
Owner John Bakhaus said Rob and Kathy saved many an event
by bringing over his automatic scrubber and removing excess
water from the indoor courts.
“No two members have worked hard in terms of leading the
club’s USTA teams as captains and proactively helping to enhance our facilities. Both Rob and Kathy have been very active
in recruiting members for the club, and we appreciate them more than they know.”

As you can see from the picture, Rob (4.0) and Kathy (3.0) are big tennis fans, currently playing on six
teams. Rob captains four of them, and Kathy one. They love the atmosphere at Windermere, and felt
the camaraderie when they first joined the club almost six years ago.” We immediately enjoyed the
atmosphere and have made so many great friends through the tennis community,” Rob said.

and our tennis and swim communities have something to offer everyone.”
Cathy Cobbs, our new marketing director, has 35
years of experience in the fields of marketing,
journalism, and public relations. Her focus will be
on updating and improving the Windermere website, keeping the community informed of upcoming
events, and helping to grow membership on all
fronts.
“The Windermere Club has a great story to tell,”
she said. “My job is to get that story out to the
community.”

News from the Pool!
Along with the opening of the pool last Saturday comes some exciting news
about our summer programs.
We are happy to welcome David Beavans to our staff this summer. David is a
senior at USC, but is originally from Union, South Carolina where he was an
Eagle Scout and played soccer for his high school. He has joined our staff to
help run our summer programs. He is a young fun-loving high-energy individual
who is determined to keep your kids active all summer long, and maybe even
help your child discover a new sport. David will be touch with you and your
children about all the new summer programs coming soon! Contact David at

The Windermere Ladies’ Memorial Day Mimosa event was a great hit, with
28 women hitting the courts, despite the threat of Bonnie! Thanks to Rob
and Reed for all their hard work in making sure the courts were dry and
ready for play!
