Homemade Dressings Once you have the basic vinaigrette down, there are so many variations you can make based on what you have on hand. Here are a few multiple purpose dressings. They are all quite easy to make. Basic Balsamic Vinaigrette • 1 tbsp balsamic vinegar • 1/2 tsp Dijon mustard • 1/4 tsp sea salt • 1/8 tsp ground black pepper • 3 tbsp extra-virgin olive oil Whisk all ingredients together until well blended. Basic Vinaigrette • 1/2 cup olive oil • 1/4 cup organic apple cider vinegar • 2 tbsp Dijon Whisk all ingredients together until well blended. Sweet Cider Dressing • 1 tbsp pure maple syrup • 2 tbsp olive oil • 1 tbsp cider vinegar • 1 tsp lemon juice Whisk all ingredients together until well blended. Creamy Sweet Dressing • 1/2 cup plain Greek yogurt • 1 tsp Dijon mustard • 1/2 tsp honey • 2 tsp water • 2 tsp lemon juice • Salt and pepper to taste Whisk all ingredients together until well blended. Honey Mustard • 1/2 cup mayonnaise • 1/4 cup olive oil • 1 tsp mustard • 1 tbsp honey Whisk all ingredients together until well blended. Italian Dressing • 1 cup olive oil • 1 clove garlic minced • 1/4 cup balsamic vinegar • 1 tsp dried oregano • 1 tbsp honey Whisk all ingredients together until well blended. Buttermilk Ranch • 1 clove garlic, minced or pressed • 2 chives, finely chopped • 1/2 cup buttermilk • 1/2 cup plain Greek yogurt • 1 tbsp lemon juice • 1/3 cup flat leaf parsley, finely chopped • Salt to taste Combine all ingredients in a medium bowl. Whisk to until well blended. Chill until ready to use. Store in fridge for up to a week. Onion Dressing • 1/2 tbsp finely minced or grated onion • 1/2 tbsp Dijon-type mustard • 1/4 tsp salt • 1/2 tbsp balsamic vinegar • 1/3 to 1/2 cup olive oil • 1/8 tsp freshly ground pepper Whisk all ingredients together until well blended. Homemade Condiments Homemade Mayonnaise • 1 large egg • 1 tbsp Dijon mustard • 1 1/3 cups light olive oil or canola oil • 4 tsp white wine vinegar or freshly squeezed lemon juice Combine egg and mustard in the bowl of a food processor fitted with a blade attachment. Process until mixture is evenly combined. Homemade Mustard (Makes 1/4 cup) • 4 tbsp dry ground mustard (mustard flour) • 1/4 cup water • 3 tbsp white distilled vinegar • 1/2 tsp flour • 1/4 tsp plus 1/8 tsp salt • 1/8 tsp turmeric • Pinch garlic powder • Pinch paprika With the processor running, slowly add oil in a thin stream until completely combined. Combine all ingredients in a small saucepan over medium heat. Whisk until smooth. Add vinegar or lemon juice and pulse until smooth. Season to taste with salt and pepper. When mixture comes to a boil, reduce heat and simmer for 5 to 10 minutes, stirring often. Variation (hand-whisked method): Combine egg yolk only and mustard in a bowl and whisk until well mixed. Whisking constantly, add oil in a thin stream until completely incorporated and mayo is thick (when the whisk is lifted, the mayo should hang off but not fall). Whisk in vinegar or lemon juice and season with salt and pepper to taste. Remove pan from heat. Leave uncovered for 1 minute, then cover pan with a lid until cool. Chill and store in a covered container. Homemade Ketchup • 6 ounces tomato paste • 2/3 cup apple cider vinegar • 1/3 cup water • 2 tbsp pure maple syrup or organic honey • 2 tbsp onions • 2 cloves garlic • 1 tsp salt • 1/8 tsp ground allspice • 1/8 tsp ground cloves • 1/8 tsp pepper Combine ingredients in food processor and blend until the onion disappears. Spoon mixture into an airtight container and store in the refrigerator. Avocado Garlic Aioli • 1 large avocado, halved and pitted • 1 large or 2 small garlic cloves • 1/2 tbsp fresh lemon juice • 1/4 cup mayonnaise (or vegan mayo of your choice) • Fine grain sea salt and freshly ground black pepper, to taste Add garlic into food processor and process until minced. Add the rest of the ingredients and process until smooth, scraping down the bowl as needed. Add salt and pepper, to taste. Chipotle Mayo (makes 1/2 cup) • 1/2 cup mayonnaise • 1/2 tsp water • 2 tsp lime juice • 1/4 tsp salt • 1 tsp organic sugar • 1/4 tsp garlic powder • 1 tsp minced fresh cilantro • 1/2 tsp ground chipotle chile • 1/2 tsp paprika • pinch dried thyme • 1/2 tsp white vinegar • pinch ground cumin Combine ingredients in a small bowl. Cover and chill for at least 1 hour before using.
