1/2 Cup Dry Quinoa
1 Cup Water (you provide)
1 Avocado, diced
1 Cup Grape Tomatoes, Cut in Half
1 1/2 Ounces Baby Spinach, Roughly Chopped
2 Green Onions, Chopped Just Past the Green
1/4 Teaspoon Salt (you provide)
Salad Dressing Ingredients
3/4 Teaspoon Freeze Dried Minced Garlic
(1 Clove Fresh)
1 Tablespoon Red Wine Vinegar
1 Tablespoon Olive Oil (you provide)
Dash of Salt (you provide)

While quinoa is cooking, make the salad dressing in a small
bowl by whisking together 3/4 tsp freeze dried minced garlic,
1 Tbs. red wine vinegar, 1 Tbs. olive oil (provided by you)
and a dash of salt (provided by you).
Set mixture aside.
Boil 1 cup of water in a small sauce pan with lid. Once
boiling add 1/4 tsp. salt and 1/2 cup quinoa. Stir, cover and
reduce heat to low and simmer for 20 minutes.

Slice the green onions, halve the grape tomatoes and
dice the avocado, leave these on the cutting board.
Roughly chop the spinach and put it in a medium to
large serving bowl.

Slice the turkey
sausage on a
diagonal/bias.
Get a skillet. Put
the skillet over
medium-high heat
and add 1/2 Tbs. olive oil. Once the oil is hot, add the sliced
smoked turkey sausage in the skillet. Caramelize the sausage
medallions until they become a deep brown color. When
sausage is warmed through and caramelized turn heat to low
to keep warm until the rest of the meal is complete.

While the meat is cooking you can make the mustard sauce
for the meat. Combine 1 1/2 packets of mayonnaise,
1/2 packet of honey and 1 packet of mustard & mix.

The quinoa should be about done now. Once it has cooked
for 20 minutes remove it from the heat and let it sit for 1
minute. Add quinoa to bowl of spinach and toss. The heat
from the quinoa will slightly wilt the spinach.

Add the avocados, tomatoes and green onions to the serving
bowl with the quinoa and spinach. Add the salad
dressing that you made and gently toss it all together.
Set aside until meat is done.
This salad is served at room temperature.
Your meat should be
warmed through and
caramelized now.
Serve turkey sausage
medallions drizzled
with the mustard
sauce and a side of the
quinoa salad.
Serve with fresh grapes and
