Fresh Pineapple Salsa
Ingredients:
•1/2 cup Vidalia Onion, chopped
•1/2 cup Green Pepper, seeded & chopped
•1/2 cup Yellow Bell Pepper, seeded & chopped
•1 small Jalapeno Pepper, seeded & chopped
•1 clove Garlic, minced
•1/2 cup Cilantro, chopped
•1 1/2 cups fresh Pineapple, divided
•1/4 cup Oliveto Pineapple Balsamic Vinegar
•3 Tbs Oliveto Lime Olive Oil
Method
Finely chop onion, pepper, garlic, cilantro and 1 cup pineapple
or place in a food processor and pulse until finely chopped.
Mix in Pineapple Balsamic Vinegar and Lime Olive Oil. Dice
remaining 1/2 cup pineapples and stir into salsa.
To Serve
Chill at least 1 hour to allow flavors to blend. Serve With
tortilla chips or with grilled chicken, pork, or seafood.
