Quinoa and Fruit Salad - Family Cook Productions

 “Quinoa and Fruit Salad” Recipe by FamilyCook Productions INGREDIENTS • 1 cup Quinoa • 3 cups Arugula • 1/2 Red Bell Pepper • 1/2 Yellow or Orange Bell Pepper • 2 Peaches • 1 cup p itted Cherries or Blueberries • ½ Beet • 1 Carrot • 1/2 Red Onion • 1 Lemon • 1/4 cup Olive Oil • 2 tsp Honey OR 1 tsp Agave Prep and Cook Time: 20 min Makes: 4 servings METHOD COOK quinoa and spread in an even layer on a platter. ADD arugula on top of the quinoa, distributing evenly. SHRED beet and carrot with shredder/grater and layer over arugula. CUT peppers into rings and arrange over the shredded vegetables. CUT red onion into slivers and lay on top of the other vegetables. SLICE the peach thinly and arrange around the edges of the platter. SPRINKLE the pitted cherries or blueberries on the p latter.
