Asian Beef + Broccoli

–Large nonstick skillet with lid
1. Place steak in freezer (trust us).
What You Need
–1 teaspoon all-purpose flour
–1 tablespoon canola oil
–Kosher or flake sea salt
–Coarsely ground black pepper

–5 ounces (√ cup) jasmine rice
–1 ounce sliced scallions
–.3 ounces sesame oil
–1 ounce soy sauce
–1 tablespoon apple cider vinegar
–1 tablespoon honey
–∑ teaspoon crushed red pepper
–12 ounces skirt steak
–7 ounces broccoli
–.35 ounces minced ginger
–.3 ounces minced garlic

sesame oil will love a floral but spicy
Syrah.

The fruity hop characteristics of a West
Coast IPA will cut the richness of the
beef and still hold up to the bold flavors
of the dish.
2. Cook Rice: In a small saucepan, over
high heat, bring 1¼ cups water and
¼ teaspoon salt to a boil. Stir in rice and
return to a boil. Reduce heat to low, cover
and simmer 15 minutes. Turn off heat
and let sit, covered for 5 minutes. Just
before serving, stir in all but 2 tablespoons
scallions (save the rest for garnish).
5. Cook Steak: Heat 1 tablespoon canola
oil and sesame oil in a large nonstick
skillet over medium-high heat. Cook
steak, stirring frequently, until liquid is
released and beef is browned (about 5
minutes). Remove from skillet and
keep warm.
6. Steam Broccoli: Add broccoli, ginger,
and garlic to skillet; sauté 1 minute. Add
∏ cup water; cover and steam 5 minutes
or until broccoli is crisp-tender.
3. Make Sauce: While rice is cooking,
in a small mixing bowl whisk together
soy sauce, vinegar, honey, ONLY 1/4
teaspoon crushed red pepper, 1 teaspoon
all-purpose flour, and 2 tablespoons
water. Set aside.
7. Finish Dish: Add steak and sauce
to the skillet with the broccoli. Cook,
tossing, for 2 minutes.
To Serve: Serve beef and broccoli over
rice and garnish with reserved scallions.
4. Slice Steak: Remove steak from
freezer and thinly slice against the grain;
sprinkle slices with ∑ teaspoon each salt
and pepper.
