Mrs. Chen’s Chicken and Mushrooms Ingredients: I whole boneless, skinless chicken breast (cut into small pieces the size of your finger) 6 mushrooms (washed, stems removed, each mushroom cut into 4 or 5 chunks) 3 cloves of garlic (skin removed, garlic chopped into small pieces) A 1” piece of ginger root (outer layer removed, ginger chopped into small pieces) 2 spoonfuls (about 3 T.) of hot bean sauce 3 spoonfuls (about 4 T.) of dark soy sauce 3 – 4 T. cooking oil 1/3 of a spoonful of monosodium glutamate* Water Directions: 1. Put cooking oil into wok or non-stick pan, heat on medium-high heat. 2. Add ginger and garlic, stir a few minutes. 3. Add chicken, cook until outside of chicken is cooked. 4. Add bean sauce, stir. 5. Add mushrooms, stir. 6. Add about ½ cup of water to wok or pan; cover. Stir contents occasionally; add more water before contents of pan get dry. Cook until inside of chicken is no longer pink. 7. Add soy sauce; stir. 8. Add monosodium glutamate; stir. 9. Serve over rice. Eat with chopsticks and ENJOY! *optional (We made up 2 cups of instant white rice & served the chicken/mushroom dish over the rice.)
