Pasta Primavera Ingredients: 6 quarts water 1 Tablespoon of Sea Salt 1 package (8 oz) uncooked spaghetti or short pasta of your choice ¼ cup olive oil 3 large cloves of garlic, minced 1 package (10oz ) frozen mixed vegetables, thawed or fresh vegetables in season (washed and chopped) 1 cup grated Romano Cheese Directions: 1. Bring water and salt to boil in large pot. 2. Add spaghetti; boil 8 to 10 minutes, or until spaghetti is al dente (firm but tender). 3. While pasta is cooking, heat olive oil in large skillet; add garlic and sauté until vegetables are hot, but still firm and crisp. 4. Add thawed or fresh vegetables to garlic; stir-fry over medium heat until vegetables are hot, but still firm and crisp. 5. Drain spaghetti or short pasta of your choice; divide among four plates. 6. Top each portion of pasta with one-fourth of the vegetable mixture. 7. Serve at once. Pass the cheese for those who desire it. Leftover pasta and vegetables can be mixed, refrigerated, then reheated.
