House rules We always go large, so 50ml measures are served as standard. 25ml measures are available on request as are 125ml glasses of wine. Don’t ask for less ice, it is there to keep your drink cold and undiluted, so it is perfect from first to last sip. Remember our neighbours and exit the bar quietly. English Garden Hendricks gin, fresh cucumber, fresh mint, elderflower cordial and ginger beer. The Passionate Piña A timeless combination of Olmeca Altos Reposado tequila with Orange Curaçao, orange juice and passionfruit. Caipirinha The national drink of Brazil. With Germana 2YO Cachaça, fresh lime and brown sugar. Great with passionfruit, or switch cachaça for Absolut vodka in a Caipirovska. Kir Royale *£8.50 Briottet Crème de Cassis (blackcurrant liqueur) and Perrier-Jouët Grand Brut Champagne. Bellini *£8.50 Your choice of Boiron peach, pineapple or raspberry purée and Perrier-Jouët. Jalisco Flower *£8.50 Champagne and tequila might not be natural bedfellows, but here Olmeca Altos reposado tequila with St Germain and pressed pink grapefruit juice makes the perfect foil for the delicacy of Perrier-Jouët. Champagne cobbler£8.50 A summery modern classic created by the godfather of bartenders, Dale DeGroff. Classically cobblers were fruit based shaken drinks and popular in the 19th century. DeGroff adds champagne to a base of pineapple, lemon and orange with Luxardo maraschino liqueur. Classic Champagne £11.50 A sugar cube dowsed in bitters, then submerged in your choice of Martell VSOP Cognac or Pyrat Pistol rum. Finished with Perrier-Jouët. The martini The mixed drink in it’s simplest form - gin (or vodka if you must) flavoured with the delicate botanicals of vermouth. Although the word Martini has in recent times come to mean anything that is served in the classic V-shaped glass. Most martinis nowadays are dry martinis, with dry vermouth, although your preference as to how much is used determines how wet or dry the martini is. After prohibition, as the quality of base spirits improved and martinis have been getting drier and drier, with ratios of 11:1 now common. We suggest you take it stirred and with either a lemon twist or an olive garnish. Dry Martini £9.50 Millers Gin and Noilly Prat vermouth. Served on the wet side of medium and garnished with an olive. Martinez £9.50 Beefeater gin, Maraschino liqueur, Noilly Prat vermouth and orange bitters. The slightly sweeter progenitor of the dry martini updated for a modern palate. Vesper £9.50 Beefeater gin, Absolut vodka, Lillet Blanc aperitif. James Bond’s martini, although we chose to stir it for lighter aeration and a smoother drink. We also add a tiny drop of angostura bitters, to recereate the flavour of the original kina lillet used in the book. Your martini... From £9.50 Let your bartender know which gin (or vodka) you would like and how dry you want it served. The manhattan Supposedly Named after the Manhattan Club in New York, and created for Lady Randolph Churchill. Although The appearance of a Manhattan cocktail in early cocktail records suggest that the formula (which originally included orange Curaçao) was already in use from the 1860s onwards. Think of it as a whisky version of a martini, where you have a choice of dry (with dry vermouth) sweet (with sweet vermouth) or perfect (with a mixture of both). the flavour is further enhanced by the addition of bitters and in the case of sweet Manhattans, Maraschino cherry syrup. Our Manhattan £9.50 Makers Mark bourbon, Noilly Prat and Punt e Mes vermouths, cherry syrup and Angostura bitters. Served just on the sweet side of perfect. Your Manhattan... From £9.50 Your choice of Bourbon or Rye whisky, bitters and vermouth to your specification: dry, perfect or sweet. El Presidente £8.50 Havana Club Barrel Proof rum, Punt e Mes Italian vermouth, orange curaçao, Briottet orange bitters and a dash of homemade grenadine. A superb rum twist on the classic Manhattan. “I have taken more out of alcohol than alcohol has taken out of me.” – Winston Churchill The Daiquiri A sublime and simple example of perfect balance. Supposedly invented by Jennings Cox, an American stationed in Cuba with the Spanish-American Iron Company who ran out of his usual gin and turned to rum to refresh his guests. He mixed it with lime and sugar to make it more palatable, although we have the British Navy to thank for that, whose grog consisted of lime or lemon (to fight scurvy) the rum ration and sugar to balance. Natural Daiquiri £7.50 Havana 3YO rum, fresh lime juice and sugar syrup. Flavoured Daiquiri £7.50 Choose from Raspberry, pineapple, vanilla or peach. We add a dash of Licor 43 to our Vanilla Daiquiri as well to give it an edge! Hemingway £8.50 Havana 3YO rum, Maraschino liqueur, grapefruit juice, lime juice and a dash of sugar. Hemingway, legendary alcoholic and also a diabetic, favoured a sour Daiquiri balanced with grapefruit and cherry liqueur - we add a bit of sugar to make it more approachable! “My mojito in La Bodeguita, my daiquiri in El Floridita” – Ernest Hemingway Tiki Style Fond memories of trips to the Caribbean during prohibition, combined with the experience of American troops stationed in the Pacific during World War II came together to create not just a style of drink but a veritable life choice. Visually it is all loud shirts, thatch, grass skirts and other kitsch interpretations of Polynesian culture, but the principle of using delicious fresh fruit and fruit liqueurs, rums, and spices like nutmeg and cinnamon has become timeless. No introduction to Tiki style drinks can exclude mention of Donn Beach and Victor Bergeron, whose bars (Don the Beachcomber and Trader Vic’s) were the original Tiki joints. The tropical style of cocktail that is their legacy was almost entirely created in their bars. Notoriously protective of their recipes, there are many interpretations of these drinks. After much research, however, we think we have some drinks that we think the guys would be proud of. Manuia! Mai Tai £7.50 The Classic tiki cocktail, and indeed one both Donn and Victor claim to have invented. Their versions are quite different, and so it comes down to personal preference but we have plumped with the Trader Vic style for our menu. Appleton 8, Edmond Briottet Orange Curaçao, orgeat (almond) syrup, and fresh lime juice served short over cubed ice with a Goslings 151 float. Passionfruit 13 Punch £7.50 Our own contribution to the tropical category, this long refreshing cocktail mixes Goslings Black seal, Havana Club Anejo Especial, fresh passionfruit, fresh lime juice, orgeat, passionfruit syrup, pressed pineapple juice and a dash of Campari. Tiki Style Zombie £8.50 Another of Victor Bergeron’s creations, this longer version of the Mai Tai mixes just about everything Tiki in a potent but delicious drink. Its also worryingly moreish. Appleton 8, Goslings 151, Taylor’s Velvet Falernum, pressed orange juice, fresh lime juice, pressed pink grapefruit juice, cinnamon, homemade grenadine, Angostura bitters and a dash of Absinthe. Fogcutter £7.50 Another classic, this time from Donn Beach. Only a handful of cocktails successfully mix more than one base spirit, but the rum, cognac and gin used here work together in smaller quantities to create a rounded cocktail that is deceptively strong. We use Havana Club 3YO, Martell VS, Beefeater, fresh lime juice and fresh lemon juice and a float of Cherry Heering liqueur and serve it in a goblet with loads of garnish. “Anybody who says I didn’t create the Mai Tai is a dirty rotten stinker.” –Vic Bergeron “There can be no truer form of flattery than when other people claim credit for your concepts and ideas and use them for their own benefit.” –Donn Beach Cocktails & Fancy drinks Jerry Thomas, author of the original cocktail guide “How to Mix Drinks, or The Bon Vivant’s Companion” is the inspiration behind these drinks. His guide shows how mixed drinks used to before the dark ages of the 70s and 80s made them the artificial, mixer-heavy travesties familiar to many today. We have tried to stay true to his memory by avoiding artificial ingredients and wherever possible making them ourselves. Mata Hari £8.50 A sumptuous blend of Martell VSOP cognac, Punt e Mes vermouth, our homemade chai rooibos syrup, fresh pomegranate juice and Sicilian lemon juice. Our own take on a drink from the fabulous Employees Only Speakeasy in NYC. The Sour £8.50 A venerable cocktail style that takes a strongly flavoured spirit or liqueur, mixes it with a citrus juice and some sugar, flavours with bitters and smooths with egg white. We use pasteurized egg white and suggest some of the following choices of base: Luxardo Amaretto, Makers Mark Bourbon, 1615 Pisco or Frangelico. Chocolate Martini £7.50 Choose between white or dark chocolate. With Absolut vodka, Mozart Chocolate liqueur and milk. Chocolate Orange Martini #1 £8.50 Orange infused Absolut vodka, Mozart Black chocolate liqueur, Regans orange and chocolate bitters. For those who want chocolate without the heaviness of Milk. Cocktails & fancy drinks Pisco Punch £8.50 Classically punch is served in a bowl for sharing, but here we have reduced it to glass quantities. As well as fine Peruvian 1615 Pisco we use homemade spiced pineapple syrup, pineapple purée, fresh lime juice, Sicilian lemon juice and some Bitter Truth Celery bitters. Euromillions £8.50 A rich and decadent whisky drink with Makers Mark bourbon, Grand Marnier, homemade grenadine, absinthe, lemon juice and pasteurized egg white. Our own twist on the classic Millionaire cocktail. Exclamation Mark £8.50 One for Malt Whisky fans: Ardbeg 10YO Islay, Chartreuse Vert herbal liqueur, Maraschino cherry liqueur and fresh lime juice. The Last Word on which this was based was a popular choice on our last menu so we thought we’d try this whisky variant this time around. No-groni £8.50 “The best drink I’ve had this year” is how manager Tim described this cocktail after tasting. Enough said. Like a Negroni but with Byrrh Grand Quinquinoa instead of Campari, Beefeater gin and Punt e Mes vermouth. French Calypso £8.50 A much more flavoursome Espresso Martini, with Havana 7YO rum, Byrrh Grand Quinquinoa, fresh espresso coffee, fresh mint and a dash of homemade cinnamon syrup. Absolutely delicious! Non-alcoholic Cocktails We can’t always go large - so for those of your who are on the wagon, here are some suggestions... ALL £3.50 Immaculate Conception Ginger beer, lime and Tabasco. A spicy little number that while it doesn’t contain any liquor it certainly packs a punch! Apple Mojito Like a Mojito, but with pressed apple juice in place of the rum. Moneypenny Raspberry, passionfruit, pressed apple juice and orange juice. Lemonade Delicious homemade lemonade, “justa like mamma used to make!” Cherrylacious Black cherry, chocolate, milk and almond. You might not be drinking but you can still spoil yourself! Frappuccino A favourite of the bar team when needing a cold pick-meup (other than a beer) we thought we’d put our secretrecipe frappé latte on the menu. An easy-drinking, well balanced Champagne. Perrier-Jouët Blason Rosé NV£60 Soft fruit aromas of ripe strawberries and raspberry jam, leafy notes with traces of petals. Pale pink in colour with a firm palate and good structure. Perrier-Jouët Belle Epoque £130 Fifty percent Chardonnay adds finesse and elegance to complement the robust Pinot Noir. A fine vintage Champagne that is typical of the house style, with delicate floral aromas and a soft palate showing hints of honey and nougat. Perrier-Jouët Belle Epoque Rosé £250 Pink in colour with salmon tones. Light and fruity, floral notes with aromas of wild strawberry, raspberry and forest fruits. A delightful pale gold in colour; the mousse is light and persistent.
