The whole month of December is dominated by Christmas. In
most towns, the main shopping streets are decorated with fir
garlands and lights. In squares and gardens, there are Christmas
trees with fairy lights, a custom dating back to 1914, when the
first Christmas tree was lit on the Town Hall Square in
Copenhagen. In recent years, it has also become common to
cover many other trees or objects with fairy lights.

Traditions
The Church year begins on the first Sunday in
Advent, which falls on one of the seven dates
between 27 November and 3 December.
Apart from the calendar candle, the children
have one or more Advent calendars, which may
either have 24 flaps to be opened one a day or
24 small wrapped-up presents.
Most Danish homes take part in the countdown
to Christmas Eve, partly by lighting a calendar
candle every day and partly by lighting the
Advent wreath on the last four Sundays before
Christmas. The calendar candle is a Danish
tradition which was first suggested as something
to make at home with the children in 1935, but
since 1942 has been produced industrially.
Lucia Day
13 December, Lucia Day, is celebrated around
the country in nursing homes and hospitals as
well as many schools and day-care institutions.
A small group, mostly girls, processes along the
corridors while singing the Santa Lucia song.
The girls are dressed in white and the Lucia
Bride, who leads the procession, carries a
wreath with candles. The custom, which is of
Swedish origin, was introduced in Denmark by
‘Foreningen Norden’ (The Norden Association)
during the German Occupation in 1944.
The Advent wreath became really widespread
after it had been the motif on the 1946
Christmas seal, the special stamp issued for
Christmas every year. With its four candles, the
Advent wreath marks the four Sundays in the
Christian Advent, which is the New Year
period of the Church.

Christmas Lunches and Other Christmas
Parties
For most people, Christmas itself is a family
event, but in addition the Christmas Month, as
it is called, is also characterized by various
kinds of parties, of which the most common is
the annual Christmas lunch which has been
held in most workplaces since the 1940s.
Here the staff eat a typical Danish lunch, which
on this occasion should preferably consist of
special Danish dishes some of which derive
from old regional dishes. The Christmas lunch
is accompanied by beer and schnapps or wine.
Christmas Decorations
For Christmas, the breweries produce various
types of Christmas brew, which is stronger than
ordinary beer. At the Christmas lunch, where a
lot of alcohol is usually consumed, people
traditionally let their hair down and without
risk suspend some of everyday boundaries, both
in relation to the social hierarchy and generally

decorations are most common.
The Christmas tree, which is one of the most
important symbols of the secular Christmas, is
decorated either on the day before Christmas
Eve or during the day on Christmas Eve itself.
In many different contexts, people meet in a less
formal way to drink mulled wine and eat apple
dumplings. While the mulled wine is of
Swedish origin, the apple dumpling is one of the
oldest kinds of pastry known in Denmark,
where it has formed part of ordinary party fare
at least since the 17th century.
The trimmings are usually baubles, paper hearts
and cornets, tinsel, garlands of Danish flags and
especially candles, which may be either real
wax candles or chains of electric candles. In
connection with the wars against Germany and
the awakening national consciousness in the
19th century, the decorations became
dominated by the national colors, red and
white.
Many families and friends set out together to
cut down their Christmas tree on one of the last
Sundays before Christmas and afterwards often
gather around such a repast.
As far as we know, the first Christmas tree in
Denmark was lit in 1808 and within a century
the Christmas tree custom had spread to most
Danish homes.

The person who gets the almond receives the
so-called almond present, which traditionally
was a marzipan pig. With their dinner, most
people today drink red wine with the main
course and a dessert wine with the dessert. The
warm rice pudding is sometimes accompanied
by sweet light beer, also called Jule brew.
The Christmas preparations also include the
baking of various traditional cookies associated
with Christmas and the making of various types
of confectionery. The so-called pepper nuts can
be traced further back than any other cookie.
The Christmas Days
Christmas, or the Christmas Days, are 24
December, Christmas Eve, as well as Christmas
Day and Boxing Day (25 and 26 December).
On these days, most shops are closed. An
opinion poll undertaken in 1998 showed that
spending time with the family over Christmas
was important to 78% of those questioned. But
for many people it is also customary to attend
the daytime Christmas church service on
Christmas Eve. This is so to speak the start of
the Christmas festival and one of the few days
in the year when the churches are packed.
The second highlight of the evening starts with
the lighting of the Christmas tree candles,
whereupon people ‘dance around the Christmas
tree’, which means that they walk around the
tree holding hands while singing Christmas
hymns and songs. Underneath the Christmas
tree are the Christmas presents, which are then
distributed.
In homes with children, it may be Father
Christmas in the form of a dressed-up member
of the family, who brings the presents. In
Denmark, the presents were originally brought
by the pixie, the old farm leprechaun or
household god, who dates back to the preChristian era, but was associated with
Christmas in the 19th century.
In most homes, Christmas Eve starts with
Christmas dinner, where the main course is
roast goose, duck or pork with sour-sweet red
cabbage and caramelized potatoes. The other
important item is the Christmas rice pudding,
which is either served warm as a starter or cold
as rice à l’impératrice with cherry sauce as a
dessert. In this connection, it is important that
there is one whole almond in either the warm or
cold pudding.

Father Christmas arrived in Denmark in the late
19th century, literally on the postcards sent
home from America by Danish emigrants and
others. He gradually took over the pixie’s old
role as present-bringer.
New Year
Unlike Christmas, which most people spend
with their family, New Year is celebrated with
the friends. New Year’s Eve is framed by two
important items broadcast on television and
radio, viz. respectively the monarch’s New Year
Speech at 6pm and the striking of midnight by
the Town Hall Clock in Copenhagen, which
marks the start of the new year.
During the Christmas Days, Christmas lunches
are held, usually for the family. They include
the same dishes as the other Christmas lunches
in December, although the regional dishes are
more prominent here. They may include
cabbage or kale served in various ways and the
associated meat dishes. These mainly consist of
various kinds of pork.
The monarch’s New Year Speech has virtually
become a national rallying point since it was
first made in 1942 during the German
Occupation, when the King called for national
unity.
Formerly Christmas began on the day before
Christmas Eve and continued until Candlemas
(2 February) and the widespread Christmas
open house made the period a time of much
festivity. Today, Christmas largely ends after
the Christmas Days. The many different social
activities associated with Christmas take place
earlier in December instead.
Many Danes party with various kinds of good
food followed by champagne and marzipan ring
cake at midnight. The New Year is greeted with
fireworks after midnight; they include both
noisy bangs and rockets, which light up the
night sky in many different colors. In many
parts of the country, the traditional New Year’s
Eve menu is boiled cod, the so-called New
Year’s cod, or stewed kale and cured saddle of
pork. It is characteristic of both dishes that they
are less fattening than the calorie-rich Christmas
dishes.

Gløgg
Gløgg is hot, spiced wine, perfect for cold winter
evenings. Just follow this easy Gløgg recipe to
make your own great-tasting spiced wine.
Variations are optional and add great personalized
taste to your own " Gløgg "!
Prep Time: 5 minutes
Cook Time: 45 minutes
Total Time: 50 minutes

1 bottle of red wine
0.5 Liter inexpensive brandy or vodka
10 cardamom pods
1 cinnamon stick (broken down)
1/2 orange peel (dried or fresh)
1/2 lbs sugar (regular or lumps)
Optional additions: 5 cloves, 1/2 cup raisins, 1/2 cup almonds, 5 dried figs)
Heat the wine and brandy spices, fruit, and nuts in a pot (and any optional additions you might like.)
Be careful not to boil the mixture; just let it simmer for about 45 minutes.
Then, strain through a cloth to remove all additions.
Serve your Gløgg hot over lumped sugar (or with regular granulated sugar).
Optional: You can also serve the Gløgg with raisons or almonds. If you'd like the drink to be stronger, use more brandy.
This Gløgg recipe makes approx 1.5 Liter (close to 1/2 gallon).
Christmas Cookies
1.1 pounds butter
1 cup sugar
2 cups syrup
5 oz. blanched, chopped almonds
! oz. cloves
1 oz. cinnamon
1 ! oz. cardamom
" oz. potash (you may substitute
baking soda)
! 6 ! cups flour
! finely chopped rind of 1 orange

Slowly heat the butter, syrup and sugar to a boil. Remove
from heat and stir in the spices, almonds, orange rind and
potash. Stir in the flour once the dough is lukewarm.
Shape the cold dough into rolls of the desired size. Pack each
roll in aluminum foil and freeze for a day or preferably
longer. Take the rolls directly from the freezer and cut them
into paper thin slices.
Bake at the top of the oven at 340 degrees (F) for 5-6
minutes. Put the cookies in an airtight container once they
have cooled off completely.

Roast pork with crackling
and gravy
Recipe from Claus Meyer

pork neck on the bone with skin intact 800g
coarse salt
bay leaves 10-15
water 6-7 cups
flour 2 tbsp
æblegastrik (apple syrup) 1-2 tbsp
sea salt and freshly ground pepper
Score the pork skin all over at 5mm intervals right down to the meat. With a damp hand, rub in plenty of coarse salt
and stick the bay leaves into the cuts.
Place the roast, skin-side up, on an oven rack over a deep roasting tray with 6-7 cups of water.
Roast the pork in a preheated oven at 180C/gas mark 4 for 65-70 minutes. Halfway through the cooking, pour the
liquid from the roasting tray into a saucepan and reserve for gravy – there should be around 600-700ml. Let the
saucepan stand for a moment then skim most of the fat from the liquid. Bring to the boil, and reduce to approximately
400-500ml. Turn off the heat and leave to stand. Sprinkle with flour allowing the fat to absorb it, then whisk
thoroughly and bring to the boil. Simmer the gravy for 6-7 minutes. Add the æblegastrik and season to taste. If needed,
pour the gravy through a sieve to remove any lumps before serving.
Measure the roast's core temperature with a meat thermometer before taking it out of the oven – at 65C it will be
slightly pink and juicy (cooking to a higher temperature will give a dryer roast).
Let the roast rest for at least 15 minutes before carving. Serve roast pork with boiled potatoes, red cabbage and the
gravy.

Julebryg / Juleøl (Christmas beer)
Danish breweries add to the spirit of Christmas in their own inimitable ways...
As early as an afternoon in mid November, you may see horse-drawn Tuborg
or Carlsberg wagons decked out with garlands and Danish flags delivering the
year's specially brewed Julebryg, or 'Christmas Brew', with Santa capped staff
handing out free samples.
Tuborg's Christmas beer weighs in at a powerful 5.7% alcohol, and it's arrival
is yet another reason for a party. Almost every Danish brewery now launches a
Christmas beer, some of which are even stronger than Tuborg's. However, for
the ladies, Carlsberg have considerately been providing Julepilsner, (a mere
4.6%) since the 1920's.
"J-day" (from the Danish word for Christmas beer: Juleøl) is normally the first
Friday in November. At exactly 8.59pm the Christmas beer is launched, and
you will find that practically every bar, café or pub in every town or city in
Denmark will be buzzing with young people enjoying the first Christmas beer
of the year. A great way of getting into the Christmas spirit!
Christmas Seal
The motive of the Christmas seal varies from year to year and different
artists are invited to design it every year.
The Christmas seal 2013 is created by the Danish Designer
Keith Bassford.
Where can you buy the seal?
The Christmas seal is available from post offices
nationwide as well as in many kiosks and stores. The seal
is also available from the www.julemaerket.dk, where it is
also possible to buy Christmas seals from previous years.
What are the proceeds used for?
The proceeds from the sale are used to run the so-called “Christmas seal
homes” where Danish people who are going through rough times can
get a much needed break from their everyday problems.

Christmas Paper Hearts
Christmas hearts is a unique Danish paper cut tradition
invented by the well know Danish fairytale writer Hans
Christian Andersen around 150 years ago.
Basically, a Christmas heart consists of two pieces of
folded glossy paper of different colors, which are cut in a
certain way and then woven together so that they form
the shape of a heart.

#1. You require two pieces of glazed paper, each a different color. The folding and cutting instructions
are the same for both pieces. Fold each piece in half, colored side out. From the fold and upwards, mark
off a square ( to the broken line ).
#2. Taking the top of the square as the diameter, draw a semi-circle above the square with a compass or
by means of something circular ( a glass or cup ). Cut off the shaded portion.
#3. In the two folded pieces of paper, cut from the exact middle of the fold up to the top edge of the
square.
#4. and #5. Slide the flap marked “x” through between the doubled paper at “o”.
#6. Pull flap “x” through and gently hook it over the unused flap on the left-hand half of the heart.
#7. Fit the heart with a paper handle.
A more complicated heart can be made by cutting twice in from the fold, an equal distance apart. First
you weave one flap: hook over, in between, hook over. Then the second: in between, hook over, in
between. The third flap is woven in the same way as the first flap. You can vary the appearance by
making 4 or 6 flaps, or with a wide central flap and two narrow outer flaps, or vice versa.
This takes a little practice, and if you rip any of the woven parts, just tape them up, fill them with goodies,
and go ahead and hang them on the tree!

Christmas Pixies
The “nisse” a mythical little creature, is an old Danish tradition as
well. Legend says it is an old little man dressed in red and gray
with a white beard and usually with a wooden spoon in his hand,
he was believed to be hundreds of years old.
One of the Danish traditions was to put Rice porridge out for him
at Christmas Eve, to keep the friendship with the “nisse”.
The kids have an Christmas calendar that is opened the first time
on the first day of December, they come today in a variety, some
with a picture and some with chocolate and one window is opened
every day until Christmas eve.

Santa Claus
The fact that Santa Claus lives at the North Pole is a
“modern” invention originating from ‘Christmas books’
for children. In “Father Christmas’ book”, written by
Louis Moe in 1898, the author places him so far up
north that not even Fridtjof Nansen, the famous
Norwegian scientist and explorer, had seen the smoke
from his house. This is where we for the first time
encounter the Santa Claus character we know today, as
well as the idea that he lives at the North Pole and
makes toys all year.

Christmas Markets in Copenhagen
2013
Christmas starts 16 November in central Copenhagen, when the Christmas lights are switched on.
Santa will meet the Copenhageners at Axeltorv and Tivolis own band of christmas elves, lead by Marie
Carmen Koppel, will sing Christmas songs.
The twinkling Christmas lighting on the pedestrian street Strøget, Købmagergade Grønnegade, Ny
Østergarde, Skoubogade, Pilestræde and Hovedvagtsgade will be lit at 16:00.
The parade starts at Amagertorv at 14:00 and the choir will walk through Købmagergade, Ny
Østergarde, Grønnegade and Kronprinsensgade before finally ending up at Amager Torv.

Nyhavn Christmas Market
from 15th November to 22nd December
Christmas comes to town in Copenhagen when Nyhavn, in
November and December, is transformed into one of the
city's centers for Christmas atmosphere. All along the water
in the old harbor stalls are put up and decorated with boughs
of fir and chains of lights offering traditional Danish
Christmas specialties such as æbleskiver and glögg. Every day
from 15th of November to 22nd of December, the Christmas
market offers lots of inspiration for Christmas as well as free
music and entertainment.

At Christmas each year, Tivoli Gardens is transformed into a
fantastic winter wonderland with 3 quarter of a million
colorful lights illuminating the park. Something like 60 small
shops sell all kinds of things: from gallons of delicious hot
gløgg and candied apples, to wooden toys and Royal
Copenhagen porcelain.
For the very first time in the 170-year-old history of
Copenhagen's beloved amusement park, you can spend New
Year's Eve in Tivoli Gardens with all the restaurants, stalls
and rides open.

Rosendal Christmas market

Each year, the Rosendal farm in North Sealand hosts a cozy
Christmas market featuring Christmas trees, decorations,
and sweets, to name just a few.
The Christmas Market at Rosendal Farm in North Sealand
covers an area of roughly 650 m2, including parking. The
farm was built in 1826, and creates the perfect setting for an
old-fashioned Christmas market.
The farm will serve hot mulled wine, hot chocolate and
æbleskiver. It is also home to the pigs, Miss Jensen and Miss
Pedersen, and their cousins, who include hens, ducks, turkeys,
rabbits, guinea pigs, sheep and goats.

Christmas in Tivoli – from 15th November to 31st December
Every year Tivoli offers traditional Christmas atmosphere
with elves, Christmas market, music and Christmas sweets
in abundance.
Tivoli opens on November 15th, and this year a new Russian
and Nordic theme is introduced.
Tivoli has built a 2000m2 Russian city, complete with the
St. Basil's Cathedral with a 21 meter high tower.
Tivoli is open for Christmas every year, and offers a rich
atmosphere with elves, Christmas market, music, sweets,
food, entertainment to name a few. The garden also offers a
new area with delicacies. Here you can buy specialties such
as Læsø salt, Christmas cakes and sweets, and French
and Italian delights. The Russian theme is also present here try for instance borsjtj and Stroganoff or a Russian
flødebolle with red foam.
For the very first time in the 170-year-old history of
Copenhagen's beloved amusement park, you can spend New
Year's Eve in Tivoli Gardens with all the restaurants, stalls

Royal Christmas Dinner Service Exhibition at Royal Copenhagen

The Royal Copenhagen Christmas Dinner Service Exhibition
is one of the most popular Christmas events in Copenhagen.
Every year the tables are set by new artists and are on display
on the first and second floor at the Royal Copenhagen
complex.
The tradition began in 1963 and is very popular. This
year, the extravagant Christmas tables are set by singers, who
all have written and rendered Christmas songs.
Six tables, each with their wonderful story, provide a creative
view of Christmas.
At The Royal Café, in beautiful serene surroundings, you can
have a “smushi” – the idea of sushi, but the taste of
"smørrebrød" i.e. open faced sandwich. The Royal Café
faces a small cobble stoned courtyard with an open air
Christmas market that serves Christmas smushis and
traditional holiday sweets, such as brunkager, crisp, flat
ginger cookies, ideal with a steaming cup of hot chocolate or
glögg.

100 Lucia procession participants will fill the Tivoli

As according to tradition the Lucia girls will walk with
