FESTIVE JOINTS
EXTRA MATURED LOCAL BEEF
We work closely with local farmers and suppliers to
source the best beef available. Our beef is traditionally
hung on the bone for a minimum of 21 days to enhance
flavour, quality and tenderness. There will be a variety of
joints and steaks (as well as some not-so-traditional cuts)
and our ‘Guest Beef’, available over the Festive Period.
NEW BEEF WELLINGTON
Introducing a Christmas Classic. Prime British Beef Fillet
with mushroom and chicken liver pate wrapped in
home-made lattice puff pastry.
FREE RANGE & RARE BREED PORK
Higginsons speciality. We take pride in our Free Range &
Rare Breed Pork sourced from a number of small local
producers using predominantly British Saddleback,
Tamworth and Gloucester Old Spot pigs. We will have a
variety of our excellent quality Pork joints and steaks
available over Christmas, as well as our award-winning
pork sausages, bacon and pies.
BACON & SAUSAGE
HOME CURED GAMMON & BACON
Gold Award Winning. Cured on the premises using local
pork. A Christmas must have! Eat hot or cold, easy carve
ideal for buffets and Midnight Snacks!
SAUSAGE
We will have a plentiful supply of our award winning
sausage meat, chipolatas, cocktail sausages, Cumberland
and Pigs in Blankets, as well as some festive specialities.
Gluten-free also available.
LEGENDARY PIES
PORK PIE
Try one of our famous Pork Pies. Available in a variety of
sizes. Great to have on hand for those unexpected visitors.
FESTIVE GAME PIE
Packed with rabbit, venison, guinea fowl, duck, pheasant,
home cured bacon and seasoned minced pork.
HUNTSMANS PIE
Pork Pie with a layer of fresh chicken finished with a sage &
onion stuffing.
TURKEY & CRANBERRY PIE
Fresh minced turkey blended with sweet cranberries.
SAUSAGE ROLLS & BUFFET PIES
A must for any party or buffet, ideal finger food or a quick
snack.
SUCCULENT CUMBRIAN LAMB
Supplied by local farmers, these lambs are reared on the
beautiful Cumbrian fells, valleys and marshes. Prime cuts
inc racks, shanks, steaks and chops, as well as Joints and
Boneless Mini Joints are all available for order.
VENISON - FOR A CHANGE
Lean and low cholesterol. We recommend boneless
Venison Haunch and Loin joints for roasting. Other joints
and cuts available.

CHEF MADE FORCEMEATS
Higginsons forcemeats are chef made on the premises
using the finest pork sausage meat blended with fresh
ingredients, served in ovenproof dishes for your
convenience. Traditionally forcemeat is stuffed in to the
neck cavity to compliment the flavour of the turkey.
TRAY PIES
Perfect for party catering. We offer Steak & Vegetable or
Cheese, Onion & Potato Tray Pies in either 12 or 15
servings. Made fresh to order, can be supplied cooked or
chilled. We have many more pies available to order. Email us

DELI EXTRAS
We stock lots of delicious festive Deli treats ideal for
buffets and party catering. Including:
Ready-Roasted Joints: Individually roasted Gammon Joints
ready to serve hot or cold.
Also: Cooked sliced meats, Pates & Terrines, and a fine
selection of English & Continental Cheeses

HOW TO RESERVE YOUR CHRISTMAS ORDER
You can place your Christmas order for Meat, Pies and Deli Items in the shop
where a member of staff will go through your order with you. Alternatively you can
telephone us with your order on 015395 34367. Once reserved, your order can
be collected from the shop on your specified date prior to Christmas. We offer a
Reward Card scheme that can be used over the Christmas Period.

the Free Range Bronze Turkey to
be the ultimate Christmas turkey
especially for the connoisseur.They
are slow growing traditional breeds
raised to their full maturity in large
cherry orchards in Berkshire. Raised on
an oat-rich, nutritionally - balanced, natural cereal diet, they
are plucked and dressed by hand and hung for 2 weeks to
enable the rich full flavour to develop naturally, ensuring the
finest taste and texture for Christmas Day. We are
privileged to be the ONLY supplier of Copas
Turkeys in Cumbria.
FREE RANGE FARM FRESH GEESE
The King of the speciality festive birds sourced from our
friends at Todderstaffe Hall Farm on the Fylde Coast. The
Geese are naturally reared with freedom to roam grassy
paddocks and are undoubtedly the finest around. These
beautifully presented geese have become evermore popular
for their distinctive flavour and texture. The tasty fat is
famous for making those delicious crispy roast potatoes
during the winter months! Allow approx 1kg per person.

Boneless 3 in 1 bird roast comprising of a whole farm fresh
turkey stuffed with the finest Duck and Pheasant breasts,
and finished with one of our traditional chef-made

Top quality, farm fresh turkeys reared by the Smith family at
Todderstaffe Hall Farm on the Fylde Coast especially for
Higginsons. They are naturally reared on a home produced,
cereal-based diet, and beautifully plucked and dressed for
Christmas.
BONED AND ROLLED BREAST
OF CUMBRIAN TURKEY
Lean, boneless breast meat ideal for smaller families, easy
carve no waste. Also available stuffed with our tasty
homemade forcemeats and/ or wrapped in streaky bacon.

FREE RANGE CHICKENS & COCKERELS
Again this year we are proud to offer Free Range Chickens
and Cockerels from Packington Farm in Staffordshire. By
using carefully selected slow-growing breeds, these birds
live longer, grow stronger and taste better. Fed on natural
diets and free to roam in grass pasture, the traditionally
farmed Cockerels are a return to by-gone days, with bags of
flavour and perfect texture.
FREE RANGE DEVONSHIRE DUCKLING
These Free Range Ducklings are reared in small flocks with
daytime access to grassy paddocks and ponds. Their simple,
GM-free diet allows slow growth and fantastic flavour.
Available from approx 2.5kg- 3.5kg. A 2.5kg duck will feed
approx. 4-6 people.
BALLOTINE OF TURKEY BREAST
Boneless Turkey Breast filled with our home-made
forcemeat, and EITHER chicken, duck, pheasant or guinea
fowl breast. A wonderful, easy-carve, no waste roast.
Optionally wrapped in Streaky Bacon.
CONNOISSEURS FIVE BIRD ROAST
Hand-tied, boneless five in one bird roast comprising of a
whole farm fresh turkey, filled with fresh duck breasts,
guinea fowl, corn-fed chicken fillets, local pheasant breasts
and finished with our traditional chef-made forcemeat. Easy

Fresh boneless Guinea Fowl filled with tasty Pheasant
