TORRE DE OÑA RESERVA 2007
THE 2007 HARVEST
The growth cycle and ripening process were slow, leading to a
leisurely, selective harvest, in which we obtained first class
grapes, also thanks to a moderate yield. The grapes were picked
by hand, lot by lot, depending on each vineyard’s ripening
process. Most of the grapes thus reached the winery at their best,
with excellent health and a good balance between acidity and
polyphenols, ideal for musts of great aromatic expression.
THE VINEYARD AND THE GRAPES
Tempranillo with a small percentage of Mazuelo (5%), from the
vineyards on the Altos Vallecilla, Calvo and Camino de la Iglesia
lots near the Torre de Oña winery.
PRODUCTION
The grapes were harvested into 400 kg cases and delivered to the
winery on refrigerated trucks, where they remained until the
temperature was 4⁰C. The grapes were then de-stemmed and
pressed and stored in stainless steel tanks for 3 days at under
12⁰C, to obtain pre-fermentation maceration while cold, to
highlight the grapes’ characteristics. Alcoholic fermentation took
15 days at a controlled temperature of 27⁰C. Fifty-one per cent
(51%) of this wine’s coupage underwent malolactic fermentation
in new French and American oak casks, with a weekly battonage
throughout the process (46 days). The rest of the wine underwent
malolactic fermentation in stainless steel tanks for 34 days,
moving the lees every 15 days.
AGEING
21 months in French (68.8%), Caucasian (20.8%) and American
oak casks. It was traditionally racked three times using the caskto-cask process, and the final coupage took place in February
2010.

TASTING NOTES
Medium robe, bright cherry red colour with pink hints on the rim
of the glass. Clean, frank aroma with a predominance of
blackberries, blueberries and a spicy background acquired while it
was aged in casks. Balanced to the palate, it has a medium body
and polished, silky tannins, pleasantly reminiscent of wine from
Rioja Alavesa. Medium aftertaste, which will become long and
highly complex in the bottle.
