The Palm Lake Resort Truganina Social Club organised a very
memorable ‘Masked’ New Year’s Eve function featuring the
amazing Phil Golotta on vocals. Extra tables and chairs had
to be brought in to manage the approximately 170 residents
who were in attendance. Everyone brought their own nibbles
and drinks, and the masks were amazing! The dance floor
was filled to the brim with our baby boomers dancing like no

one else can – like nobody is watching! It surely was a sight to
behold and even better to be a part of. The 50s and 60s music
was ever so popular, as was the Macarena! Phil knew exactly
what the crowd wanted.
Everyone looked happy at the event and it was a good day
to belong to this amazing community. Thanks to the Social
Club members who arranged the evening for us to enjoy and
thanks to those who were around to help set up and clean up.

A MESSAGE FROM
YOUR RESORT MANAGERS
Welcome to 2017 everyone! Stage 4 is filling fast
and we welcome all new residents to our resort.
Our 2016 Christmas dinners were filled with
festive spirit. Residents decorated and added
beautiful Christmas décor to their tables. Some
residents volunteered their time to sing Christmas
carols accompanied by our own pianist Joe,
entertaining both evening meals. We shouldn’t
forget our staff who did an amazing job in catering
and supporting the event, like they always do
throughout the year. Our staff are always there
to multitask! A big thanks also goes to the Social
Club for organising a fun-filled evening to see in
the New Year. Residents, family and guests were
entertained by our own muso ‘Phil’ and many
participated in the masquerade theme as you can
see by the images on the front of this newsletter. A
great night was enjoyed by all, especially watching
the fireworks from along the back patio.
The resort was busy in the lead up to 2017 with
the swimming pool booked for maintenance. The
rails have now been reinforced. The clubhouse also
had a fresh coat of paint and blinds have been
installed in the golf simulator and Recreational
Room. We thank you all for your patience. We have
some exciting times ahead of us, with Stage 4 near
completion and the expansion of the Paradise
Palms Clubhouse. We’re sure 2017 will be a buzz of
excitement.
Leaving behind 2016 we have farewelled some
residents and staff. We would like to wish Chris
and Lyn all the best with their future endeavours
and welcome Tania to our team! We also have
many people to thank. You all know who you
are. A special thanks goes to John (Villa 167) for
his continued support with his fine carpentry
skills around the resort, and Chris (Villa 186) for
providing us with so many lovely photos!

Information session
Come along to our next information session to be held in our
Paradise Palms Cinema at 10am on Tuesday February 21. Learn how
easy it is to move to our village and change your lifestyle. Morning
tea will be provided.
Save the date: International Food Day
On Saturday March 25 we will be holding a Food Festival in our
Paradise Palms Clubhouse. We will have some international foods
for guests to try and some international dancers to entertain us. It
will be a blast! Invites will be sent out soon with more details.

Where did you grow up?
I grew up in England and moved to Australia in
1980.
What do/did you do for work?
I worked in Westpac Financial Markets as a team
coordinator for 13 years.
What drew you to Palm Lake Resort Truganina?
I went to visit my sister who lives in Palm Lake
Resort Eagleby and thought it was fantastic. I
decided to investigate in Melbourne and found
the newest resort at Truganina was being built
just up the road from where I lived!
What are your hobbies/interests?
I love playing golf. I was Lady Captain at Werribee
Park Golf Club. I enjoy socialising and taking care
of my grandchildren.
What are the regular resort activities you never
miss and why?
Wednesday night dinners on the newbies’ table
is great. I also enjoy the Friday night single ladies
night.
Dream holiday destination?
I’ve just come back from India which was
amazing. I’d love to visit Africa to see the wildlife
and natural beauty.
Favourite Sunday night dinner?
Definitely roast pork with all the trimmings.
What makes you proud?
My children, of course, but also myself. I am proud
of all of my achievements and now that I live at
Palm Lake Resort, it’s just the icing on the cake!

The Thursday deal
All are invited to play cards in the Paradise Palms Country Club
on Thursdays at 3pm. No experience is necessary. Those wishing to learn are most welcome, come along and join in! The
group plays 500 as well as other card games.
Support is found
Residents requiring assistance with changing light bulbs,
cleaning air conditioner filters, checking smoke detectors and
other similar tasks may contact members of the Residents
Support Group directly. Please see the noticeboard in the
Paradise Palms Country Club for members’ names and more
information.
Gentle warm water exercises
Commenced in January, our gentle warm water exercise
classes are suitable for those with arthritis and/or chronic
pain. Classes are held on Mondays and Thursdays at 1.30pm.

NO BULL! ADVENTURE AWAITS THE WINNING SIMMONS
An internet savvy son with a larrikin streak helped Rodney
and Jenny Simmons to victory in Palm Lake Resort’s recent
photo competition, with the grand prize being a $69,990
Majestic Caravan.
Rodney, 70, says his son spotted the caravan competition
online and sent an email off to Seniors Newspapers to
request a sticker, telling Rodney it would be the perfect
prize for he and Jenny to try for. When the sticker arrived in
Windsor, New South Wales, where the family has lived for
all of Rodney’s life, its "Retired Not Expired" slogan struck
a chord.
"We’ve retired alright, but we’ve not had it yet," Rodney
laughs.The couple’s three sons have a small farm at Pitt
Town where the grandkids go to ride their bikes and get
away from it all – and it was there that the creative spark
arrived for the photo. Rodney, who often visits the farm to
mow the lawns for the kids, said one son had come across
a life-size bull statue some years ago which had pride of
place in the paddock, while the other had found a big black
panther that adorned the roof of the farm.
"We were walking past and my son said to his mother,
jump on that bull," Rodney recalls. "She told him she’d
never be able to get up on it and he went and got her a
ladder. ‘Old Mother’ climbed up the ladder and I pretended
to be getting chased over the fence. My son clicked and
clicked and clicked on the camera. It was funny! We were
having a scream of a laugh about it."
Rodney says in 70 years he’d never won anything of note
until now. "It doesn’t happen to us. We’re just little old
parents who’ve got three boys, two granddaughters and
four grandsons," he says. "You cannot believe how pleased
we are. It’s come at a perfect time for us. We just need to be
able to get away and relax."

Newspapers GM Geoff Crockett chose the winning entry
at Palm Lake Resort headquarters just before Christmas.
Manuel says it was a great photograph that really
captured the spirit of the sticker’s "Retired Not Expired"
motto. He says it was wonderful to see the prize going to
such a deserving family.

STUFFED BAKED POTATOES
Perfect for a last minute healthy dinner, these potatoes are
super versatile and a great ‘throw in the oven and forget’
type of meal.
Ingredients
Potatoes (regular or sweet), well washed and pricked a
few times to prevent them exploding. The size you choose
depends on your appetite, but try to pick potatoes of roughly
the same size so they cook in the same amount of time.
RHUBARB AND GINGER CRUMBLE
Rhubarb is a high fibre vegetable and in Chinese herbal
medicine, it is a rhizome used for supporting sluggish
digestion (especially treating constipation and abdominal
bloating). It has a very impressive nutrient profile including
vitamin A, C, B complex and K, as well as being a fabulous
source of many minerals. It’s one of the best plant sources of
calcium (though its oxalate content does effect absorption). It
is also a wonderful source of many protective antioxidants.
Ingredients
1 bunch of rhubarb, leaves trimmed, cut to 15cm lengths
30g (2 tablespoons) rapadura or coconut sugar
30g (¼ cup) rolled oats
25g (¼ cup) almond meal
35g (¼ cup) chopped raw almonds or almond flakes
25g (¼ cup) shredded or desiccated coconut
50g butter, at room temperature
½ teaspoon ground cinnamon
Ginger syrup
85g (¼ cup) rice malt syrup, honey or maple syrup
1 tablespoon hot water
1 tablespoon freshly grated ginger or 1 teaspoon ginger powder
Method
Preheat the oven to 180ºC. Line two small trays with baking
paper. In a small jug, mix the syrup ingredients until well
combined. Toss the rhubarb with the syrup and arrange in a
single layer on one of the trays. In a large mixing bowl combine
all of the crumble ingredients. Rub the butter into the dried
ingredients until well combined. Alternatively pulse in a food
processor. Arrange the crumble in a thin layer on the second
lined baking tray. Bake the rhubarb and crumble in the oven for
approx. 15 minutes or until the rhubarb is just cooked through.
Divide the rhubarb between serving plates, spoon over the
crumble and serve immediately with sour cream, full-fat
natural or Greek yoghurt or coconut yoghurt.

Method
Preheat the oven to 180ºC. Simply throw whole potatoes in
the oven for 40-60 minutes (depending on the size). They
are cooked when they feel soft in the middle when pierced
with a knife. If there is a vast size difference between your
potatoes, add the biggest ones first and the smaller ones
15 minutes or so later. Once cooked, cut a cross on the top,
push the potatoes apart, add a dollop of butter or a drizzle
of olive oil and fill with one or more of the following fillings.
Choose your favourite combo remembering that potato plus
a protein plus vegetables or salad will be most nourishing.
The limit really is your imagination!

• Tuna mayonnaise (mix tuna, a good quality mayonnaise
or yoghurt and diced red onion)
• Cheese of any kind, simply grated
• Full-fat sour cream or natural yoghurt
• Leftover curries or casseroles
• Leftover bolognese or nacho sauce
• Leftover roast meat, diced
• Additive-free chorizo, bacon or ham
• Baked beans
• Dhal
• Meat and coleslaw
• Garlic mushrooms are delicious
• Your favourite homemade dip
• Sauerkraut or kim chi, for a digestive boost
• Always add lots of salad (leaves, grated carrot, sprouts,
diced tomato, grated beetroot, diced red onion or spring
onion, diced capsicum, coleslaw) and even some toasted
seeds to boost the protein content.

SHE WALKS IN BEAUTY
The idea of eloping conjures up images of sublime tropical beaches, European
landmarks or even the bright lights of Las Vegas. But one Brisbane bride
eloped to Palm Lake Care Bethania recently so her father, who suffers with
dementia, was able to walk her down the aisle. In a story that touches the
hearts of all who hear it, bride Hayley McClellan (pictured above) dreamt of her
wedding day since she was a small child and wanted nothing more than for
her father to walk her down the aisle. However George, 70, is unable to leave
the Palm Lake Care Bethania facility that he has called home for the past two
years, due to his struggle with dementia. The solution was simple: Take the
wedding to George.
"Sometimes Dad will partially recognise me when I visit and sometimes he
doesn’t remember but I still really wanted him to be there on my wedding
day,"”Hayley says. "We all thought it would be too overwhelming for Dad to take
him elsewhere so we thought we’d bring the wedding to him!"
Fourteen of Hayley and new-husband Robert Hanley’s closest family members
(including Hayley’s mother Sue, who has been George’s wife for the past 47
years) joined the pair for the intimate wedding ceremony. Palm Lake Care
general manager Liz Scammell was delighted to help Hayley see her wedding
dream come true. "It’s not every day we get to host a wedding at Palm Lake
Care," Liz says. "The staff were really excited and thoroughly enjoyed the event
as much as the wedding guests!"

OLD IS THE NEW BLACK
An aged care facility in the Netherlands has recently introduced a revolutionary
concept. In exchange for free housing, university students spend 30 hours a
week socialising with residents. As there are limited housing options for Dutch
students and a lack of funding for care staff in nursing homes, this arrangement
benefits both parties. There is much to be offered by both generations in
interactions like this. Young people have a vibrancy and innocence that generally
appeals to those older. By the same token, the older generation carries wisdom
and understanding that can fascinate the youngest of minds. With so much
to offer each other, we should be encouraging intergenerational relationships.
For grandparents and grandchildren, quality time can help facilitate a positive
reciprocal relationship. But perhaps there are older adults who do not have any
grandchildren, or are not able to see them as often as they like? Young people
also often don’t have many chances to interact with older generations other than
those in their close family.
Palm Lake Resort residents across the nation are making a huge difference
in their local communities in this respect. In one of the most successful
intergenerational partnerships, Palm Lake Resort Eagleby residents are regularly
volunteering alongside students at Eagleby State School in the school’s breakfast
program, with reading and general classroom duties, woodwork club and more.
Eagleby State School principal Libby Jordan says the Palm Lake Resort volunteers
make a huge difference in the school’s community.
"The partnership with Palm Lake Resort has led to improved student outcomes
and improved community confidence and pride in our school," Libby says. "The
support we get from the residents at Palm Lake Resort will not only help our
students, but guide them to make amazing contributions to the community as
they grow older."
Libby says the programs have seen heightened results across the board, with
100 per cent parent satisfaction, significantly lower rates of suspension and
behaviour management problems as well as increased NAPLAN results.
In a win-win for all, Palm Lake Resort Eagleby resident and school volunteer
Kath says she and her neighbours find their association with the local school
rewarding and enjoyable. She says the kids gain valuable life skills, whether it
is learning how to read, using a hammer in the Palm Lake Resort workshop or
learning how to knit and sew. "Everybody who participates in the program goes
above and beyond to help make a difference in the children’s lives and the wider
community," Kath says.
