GRILLED PRIME PORK CHOP WITH PINEAPPLE JICAMA SLAW Ingredients Ingredient Ingredient Quantity 2 ea Rastelli Prime pork chops 1 tbsp. Agave or honey 1 tbsp. Brown sugar 2 tbsp.Ketchup 0.25 tsp. chipotle chili powder 1 tsp. olive oil-coat pork ------- to taste kosher salt ------- to taste fresh cracked pepper 1/2 small pineapple peeled, cored and julienne 1/2Jicama peeled, julienne 1 small red pepper- julienne/thin slice 1 small bermuda onion-thin slice 1 tsp cilantro or italian parsley chopped 2tbsp.olive oil 1 tbsp. Champagne or apple cider vinegar 1 tbsp. Agave or honey Method Heat grill to medium high heat. Coat pork chops with tsp. of olive oil, salt and pepper. Grill on each side for about 5 minutes. While pork is grilling, blend the brown sugar, agave or honey, ketchup, and chipotle pepper in a small bowl. In the last few minutes of cooking start basting the pork with ketchup glaze on both sides. In a separate bowl, mix the pineapple, jicama, red pepper, bermuda onion, olive oil, vinegar, agave, and season with salt and pepper. *Remove pork chops from grill when internal temp reaches 150-155 degrees, meat thermometer recommended* Place a large portion of slaw on center of plate.
