I hope everyone had a wonderful Holiday Season and here is to a great new year! Our Member Guest Event on January 19-21 is sold out, however if anyone is wanting to play, we would love to have a few teams on the waiting list; historically there has always been a couple of last minute cancellations so if anyone would like to play and has the flexibility to be on standby, there’s an excellent chance we will need you to play. I wanted to give everyone an Agronomy update. We recently over seeded the Copperhead and the course is looking great! We applied 12 lbs per 1000 square feet of Poa Trivialis on the Greens, 350 lbs per acre on the Fairways, 400 lbs per acre on the Tees and 175 lbs per acre in the Roughs. With the exception of the Poa Trivialis that is used on the Greens, we use a Winter Ryegrass on the rest of the golf course. The South Course was over seeded at the end of October and has grown in very nicely. Similar to the Copperhead, Poa Trivialis is used on the Greens and Ryegrass is used everywhere else. The application rate on the South was 10 lbs per 1000 square feet on the Greens, 350 lbs on the Fairways and Tees and 150 lbs in the Rough. Bobby Barnes pipeline | 3 Something that I’m very excited about is a change in our Agronomy Program on the Island and North Courses this winter. As many of you know, we have not over seeded the Island Greens in over 5 years and they couldn’t be healthier. This winter, for the first time, we are expanding this practice to include the North Course. This means that the only over seeding that is taking place on both the Island and North is on the Tees. We have applied 400 lbs per acre on all the Par 3 Tee Boxes (along with #5 & #6) on the Island and 350 lbs per acre on all of the North Tee Boxes. Dinner Reservations deadline is February10, 2017. pipeline | 25 Dine Well with Executive Chef Thomas McKinney-Stehr Tuna and Avocado Tartare with Caviar on Sesame Wonton Crisps Servings: 8 Crisps Ingredients: 12 wonton wrappers, each cut diagonally in half to form 2 triangles, Olive oil (for brushing) and Sesame seeds. Tartare Ingredients: 2 tablespoons soy sauce 1 tablespoon unseasoned rice vinegar 1 medium avocado, halved, pitted, peeled, cut into 1/3 inch cubes 1 tablespoon fresh lemon juice 1 cup, 1/3 inch cubes seeded English cucumber 1 1/2 teaspoons wasabi paste 1 green onion, finely chopped 3/4 teaspoon Asian sesame oil Toasted Sesame seeds 8 ounces sushi quality Ahi tuna steak, cut into 1/3 inch cubes Chopped fresh chive American caviar Method of Preparation for Crisps: Preheat oven to 350°F. Line large rimmed baking sheet with parchment paper. Arrange wonton triangles on sheet; brush each with olive oil and sprinkle with sesame seeds. Bake until triangles are golden brown, about 9 minutes. Cool on sheet. Do ahead. Can be made 8 hours ahead. Let stand at room temperature. p i p e l i n e | 26 For Tartare: Whisk first 5 ingredients in medium bowl to blend. Add tuna, avocado, cucumber, and green onion; stir gently to coat. Spoon tartare into bowl; sprinkle with sesame seeds and chives and place on platter. Spoon caviar into small bowl and place alongside. Surround with crisps. Fragrant Asian Gazpacho Servings: 4 Ingredients: 1 ea cucumber 1 bu scallions 1 oz. ginger root 1 teaspoon chile garlic sauce 2 tablespoons lime juice 3 cups chicken stock 1/2 oz. fresh mint 6 ea Roma tomatoes 2 ea avocados 1 ea papaya 1 ea mango 1/2 oz. fresh cilantro 1/2 oz. fresh basil 1 ea jalopeno (optional) 1 ea grilled scallops 1 ea grilled shrimp Method of Preparation Seed cucumber, cut into long strips and dice. Seed Roma tomatoes and dice. Peel avocados and mangos and dice into cubes. Scallions should be dice on angle to preserve flavor. Peel and grate ginger root. Chop fresh herbs separately, add to chicken stock. Combine with chile sauce, lime juice, and ginger. Mix the diced fruits and vegetables in a large bowl. Coat the fruits and vegetables with the chicken stock. Let sit for 3 to 4 hours to enhance the flavors. Serve in a bowl and garnish with the grilled scallops and shrimp. Rice Paper Wraps with Vegetable Ingredients: Warm water, for soaking rice paper wrappers 1 package rice paper wrappers 1/4 cup cilantro leaves 1/2 cup julienned red bell pepper 1/2 cup julienned yellow bell pepper 1 cup snow peas, stringed and julienned 3 1/2 ounce package enoki mushrooms 1 cup bean sprouts 1/4 cup pickled ginger Kosher salt and freshly ground black pepper 2 tablespoons black sesame seeds 1 cup seasoned buckwheat or soba Noodles 1 teaspoon sesame oil 1 teaspoon rice wine vinegar 1 cup cooked buckwheat noodles Method of Preparation: In a medium sized bowl, whisk together the sesame oil and rice wine vinegar. Toss the cooked buckwheat noodles in the sesame mixture. Set aside. In a large bowl filled with warm water, soak 1 rice paper wrapper for about 20 seconds or until soft. Lay wrapper out on a tea towel to absorb excess water. Transfer wrapper to a flat surface. About 1/3 from the bottom of the wrapper, create a 3 inch long row by placing some cilantro leaves followed by some red pepper, yellow pepper, snow peas, mushrooms, bean sprouts, buckwheat noodles and a little ginger. Season, to taste, with salt and pepper. Sprinkle the top 1/3 of the rice wrapper with black sesame seeds. Carefully fold the bottom of the rice paper wrapper over the vegetables. Turn in the sides and continue rolling up from the bottom. To serve, slice the roll in half on a bias. Serve with Orange Chili Dipping Sauce Orange Chili Dipping Sauce Ingredients: 2 teaspoons lime juice, about 1/2 lime 1 tablespoon sesame oil 1 tablespoon balsamic vinegar 1 teaspoon chili flakes 1 teaspoon Kosher salt Method of Preparation: Whisk together all the ingredients in a mixing bowl. Allow the sauce to stand for 30 minutes so that the flavors can infuse. Even there it is uncommon, with widely scattered pairs nesting along the edges of woods in the central part of the state. It seldom perches in the open; when hunting, it regularly soars very high, where it may go unnoticed by the observer on the ground. Unlike most of the Buteo hawks, the Short-tail feeds mostly on small birds, dropping from the sky to take them by surprise. This small raptor occurs in both the light and dark phase. Florida hosts fewer than 500 of these hawks. I was fortunate enough to see one in action on the North course at Innisbrook on hole 6.
