September 18th, 2015 Hello to everyone, Just as we approach our 31st anniversary this coming Sunday, September 20th, we have some exciting news to share. Yes the rumors are true. WE ARE MOVING! It is official, December 31st, 2015, will be our last day at our current location in Menlo Park. Our new address is 740 El Camino Real, Belmont, just north of Ralston Ave, facing the north end of the Belmont train station parking lot. While I am saddened by this at the same time, I have to admit, is very exciting. Our new digs will be smaller than our current location, without an outdoor area; however it will still have all the charm and warmth you have come to expect from Iberia Restaurant. Our menu format is going to change slightly, in as much it will be only tapas (some larger versions called raciones) and paella. And better yet the tapas menu will be available both in the dining room and the bar. The feel will be a little more casual reflecting the atmosphere of our current bar with soft leather chairs and also a fireplace. Of course, needless to say, we look forward to see you all at our new place. We are expecting to open towards the end of January and we will keep you posted as we can pin point the opening date. For now you can keep track of the building and remodeling process through our web site – iberiaresraurant.com – where we are posting pictures as things move along. In fact we broke ground yesterday!! So with that in mind here it is our cooking class schedule you all have been patiently waiting for. We plan to continue with this tradition after we move; in the meantime here it is the last hurrah at the Menlo Park location. It is, of course, the traditional manner in which paellas have been cooked for centuries. Our class is designed to make paella experts of even the most novice cooks, though grads from this class come back time after time to hone their skills and pick up more secrets! We will create both traditional and non-traditional paellas. Students will enjoy tapas and sangria while they work. It’s a day of cooking, eating, and lively discussion. HOLIDAY MEALS DECONSTRUCTED – This comprehensive workshop is designed to help make the holidays deliciously rewarding – for the cook as well as the guests! Our emphasis will be on advance organization and using fresh ingredients, including making our own turkey stock. We will prepare a fresh turkey roast, with special dark meat technique, and well as side dishes, stuffing, gravy, and fresh cranberry relish. Duck will also have a prominent place in the kitchen; we’ll make confit with the legs and roast the breast. And finally Cornish Hen, with a fruit stuffing will give you an additional, and fun, choice to present to your guests. Rounding our the class will be a workshop on using fresh pumpkins and squashes, and we will prepare a roasted winter squash bisque and pumpkin strudle from scratch. Cost $100.00. Sunday, November 15th, 10:00 am. Meet at Iberia. GUISOS AND THE ART OF BRAISING - Guisos are the favorite way for Spaniards to cook at home. Perfect for casual entertaining and potlucks, these rustic, one-pot meals are perfect for the family-on-the-go, AND they are among the tastiest dishes you will find anywhere. Some of Iberia’s all-time favorites, like ternera con nueces (veal with walnuts and olives), cordero al chilindron (lamb with sweet peppers), artichoke hearts braised with fingerling potatoes and garlic, and slow-roasted duck will be deconstructed for you. Come to this class hungry – there will be an unforgettable feast waiting at the end. Cost $110.00. Sunday, October 18th, 10:00 am. Meet at Iberia. NEW!! A LA PLANCHA!– Here it is another idea on how to use that large Paella pan you purchased: like a giant griddle! Another outdoor class that will help us enjoy sunny days. We will prepare dishes like Pinchitos (charmoula marinated chicken kabobs); Gambas a la Plancha, prawns with a Mojo Canario sauce; Montaditos de Lomo, pork loin with a oregano-lemon marinate, and a few more. In this class you will learn to make Spanish sauces like Romesco, Mojo Canario, and Chimichurri. Cost $100.00. Saturday, October 17th, 11:00 am. Saturday, November 7th, 11:00 am. Meet at Iberia. THE BASQUE COUNTRY – Many of Spain’s top chefs hail from el Pais Vasco, where a tremendous culinary tradition features food that is earthy and simple, on the one hand, and sophisticated and ethereal on the other. We will sample both: piperrada, a sweet pepper-tomato casserole; pimientos relleno de bacalao, sweet pimiento peppers stuffed with salt cod; txipirones en su tinta, baby squid in ink sauce; cordero al ajo arriero, lamb braised in vinegar with paprika and whole garlic cloves. Cost $125.00 Sunday, November 8th, 11:00 am NEW! ADVANCED TAPAS – We have plenty of students who just can’t get enough of our tapas classes, and this afternoon is designed just for them. Our focus will be on more involved recipes, like calamares rellenos stuffed squid in black ink sauce, croquetas de jamón (ham and onion croquettes), empanadillas variadas (crispy turnovers with a variety of fillings), pimientos del piquillo rellenos (sweet pepper stuffed with crab), fricando de langostinos (shrimp & shrooms in almond sauce), mejillones rellenos (stuffed mussels), albondigillas (meatballs), higadillos al jerez (chicken livers in sherry sauce) and more. As always, IBERIA’S sangria will be flowing. Cost $125.00. Sunday, November 1st, 10:30 am. Meet at Iberia. A COOK’S TOUR OF GALICIA– The finisterre region of Spain is where the infamous Francisco Franco was born. Its food shows the strong Celtic influence of this region’s first inhabitants. We will create a wonderfully varied meal, including concha de Santiago, a deliciously bubbly, creamy scallop recipe, lacón con grelos, a hearty one-pot meal that is, perhaps, the signature dish of the region, lenguado al albariño, fillet of sole in a sauce made with the indigenous white wine, setas en salsa de avellanas, wild mushrooms in hazelnut sauce, and we will end our Galician feast with filloas, dessert crepes with lemon zest.
