Chef. Go! Our premier Chef, Eric Adjepong brings to you another delectable way to nourish your body and treat family/friends to an incredible meal. RECIPE COUSCOUS SALAD W/ GRILLED SHRIMP & CORIANDER VINAIGRETTE WITH CHEF ERIC ADJEPONG BODY Ingredients Coriander Vinaigrette 2 Tablespoon – whole coriander seeds 1 cup – extra virgin olive oil 1/2 cup – shallots, minced 4 Tablespoons – white balsamic vinegar 2 each – garlic clove TT – salt, fresh ground pepper. Couscous 10 oz – couscous 1 ½ cup – chicken or vegetable stock 1/2 bunch – parsley, finely chopped 16oz – cherry tomatoes, halved 2 each scallions 8 oz – snap peas; blanched, trimmed and Shrimp 1 lbs – 16/20 shrimp cleaned and de-veined 2 Tablespoons - Extra-Virgin Olive Oil As needed Coriander Vinaigrette cut RECIPE COUSCOUS SALAD W/ GRILLED SHRIMP & CORIANDER VINAIGRETTE WITH CHEF ERIC ADJEPONG BODY Instructions Heat coriander over medium flame until fragrant (about 3 minutes). Cool then grind in using spice grinder or mortar with pestle. Heat one tablespoon of oil over medium heat in the same pan and saute the shallots until translucent, (about 4 minutes). Transfer to a bowl with the crushed coriander. Add vinegar, salt and pepper. Slowly 1 cup oil. Refrigerate vinaigrette reserve half for couscous and the other half to marinate the shrimp for 30 minutes. While vinaigrette is being refrigerated, heat chicken stock until simmer. Cut tomatoes in half, small dice scallions, and blanch then shock the snap peas. Place couscous in a bowl, add in hot chicken stock. Cover and let sit for 5 minutes, then fluff with a fork. Grill or broil shrimp for 5 minutes on each side. Allow to cool down slightly. Add mixed vegetables with couscous, pour chilled vinaigrette over and mix well with spatula.
