Traditional recipe
from Cetara
Linguine or Spaghetti with
colatura di alici di Cetara
(4 people recipe)
Boil 400 gr of pasta in
unsalted water.
Meanwhile mince together
parsley, garlic, hot pepper
(if appreciated), add 8 spoons
of Extra virgin olive oil,
and 4 spoons of Colatura
di Alici “Delfino”.
Blend together the sauce and the
pasta “al dente”, and serve it.
The “colatura di alici,” with its
unique aroma, can be used as
a sobstitution of salt, with the
addition of extra virgin olive oil,
to give more flavour to fresh or
boild vegetables, cereal soup,
and many fish dishes.
