For questions or submissions of future events, please contact Cindy Buckler at: 757-385-0602 15 Polynesian Watermelon Drink Lemon Almond Tea Ingredients: Ingredients: 1 seedless watermelon, halved and sliced 2 family-sized black tea bags 3 cups water 4 cups boiling water 1 (15.25 ounce) can crushed pineapple 2 lemons, thinly sliced 1 (12 fluid ounce) can evaporated milk 1 cup sugar 1/2 cup shredded coconut 1 tablespoon almond extract 2 tablespoons white sugar, or to taste (optional) 2 teaspoons vanilla extract 1/2 lime, juiced 1 (2 liter) bottle lemon-lime flavored carbonated beverage, chilled Steps: Steps: 1. Grate watermelon with a fork from the rind into a large bowl, leaving no large chunks. 1. In a saucepan, brew tea bags in hot water for 15 minutes. While waiting for tea to brew, squeeze the lemon slices as you put them into a large pitcher. Pour in sugar. 2. Stir water, pineapple, evaporated milk and coconut into the grated watermelon. 3. Add sugar, stir until dissolved 4. Squeeze lime juice into the watermelon mixture. Serve and Enjoy! 2. Pour brewed tea into the pitcher with the sugar and lemons. You can let this sit in the refrigerator for up to 1 day, or use it right away. 3. When ready to serve, stir in almond and vanilla extracts and lemon-lime soda. Enjoy! Citrus Blueberry Slush Orange Pineapple Drink Ingredients: 1 (16 ounce) can frozen orange juice concentrate Ingredients: 6 fluid ounces water 2/3 cup orange juice 1 cup fresh blueberries 1/3 cup pineapple juice 4 cubes of ice 3 scoops orange sherbet 2 pineapple rings Steps: Steps: 1. In a blender, combine water, blueberries, orange juice concentrate and ice cubes. 1. Place orange juice, pineapple juice, and orange sherbet into a blender and blend until smooth. Pour into two glasses; garnish each with a pineapple ring. 2. Blend until slushy. 3. Pour into glasses and serve. Enjoy! Serve cold and enjoy! For questions or submissions of future events, please contact Cindy Buckler at: 757-385-0602 16 Rosemary Ranch Chicken Kabobs Ingredients: 1/2 cup olive oil 1 teaspoon lemon juice 1/2 cup ranch dressing 1 teaspoon white vinegar 3 tablespoons Worcestershire 1/4 teaspoon ground black pepper, sauce 1 tablespoon minced fresh rosemary 1 tablespoon white sugar, or to taste 2 teaspoons salt 5 skinless, boneless chicken breasts Steps: 1. In a medium bowl, stir together the olive oil, ranch dressing, Worcestershire sauce, rosemary, salt, lemon juice, white vinegar, pepper and sugar. Let stand for 5 minutes. Place chicken in the bowl, and stir to coat with the marinade. Cover and refrigerate for 30 minutes. 2. Preheat the grill for medium-high heat. Thread chicken onto skewers and discard marinade. 3. Lightly oil the grill grate. Grill skewers for 8 to 12 minutes or until the chicken is no longer pink in the center and the juices run clear. Remove from grill. Serve and Enjoy! Mini Cheesecakes Ingredients: Crust: 1/3 cup graham cracker crumbs Filling: 1 tablespoon white sugar 1 (8 ounce) package cream cheese 1/2 teaspoon grated lemon zest 1 tablespoon margarine, melted 1/4 cup white sugar 1/4 teaspoon vanilla extract 1 1/2 teaspoons lemon juice 1 egg Steps: Preheat oven to 325 degrees F. Grease a 6-cup muffin pan. In a medium bowl, mix together the graham cracker crumbs, sugar and margarine with a fork until combined. Measure a rounded tablespoon of the mixture into the bottom of each muffin cup, pressing firmly. Bake in the pre-heated oven for 5 minutes, then remove to cool. Keep the oven on. Beat together the cream cheese, sugar, lemon juice, lemon zest and vanilla until fluffy. Mix in the egg. Pour the cream cheese mixture into the muffin cups, filling each until 3/4 full. Bake at 325 degrees F for 25 minutes. Cool completely in pan before removing. Refrigerate until ready to serve. Top with your choice of fruit filling and Enjoy!
