Salt, kosher 1 Tbsp 1 tsp 2 Tbsp 2 tsp 4. Slowly add flour to melted butter to make a roux. Cook roux over medium heat for 10 minutes. Remove roux from pot, set aside. Pepper, white, ground 3/4 tsp 1-1/2 tsp 5. Pour milk into empty roux pot. Bring milk to simmer over medium heat. Onion, granulated 2-3/4 tsp 1 Tbsp 2-1/2 tsp 6. Add kosher salt, white pepper, and granulated onion to simmering milk. Gently stir to mix well. Milk, whole, 3.25% 1 gal 1-3/4 cup 2 gal 3-1/2 cup 7. Add roux slowly to simmering milk, continue to stir well. Continue to cook roux/milk sauce on low heat until sauce thickens and is smooth. Add shredded cheddar cheese, 1/2 cup at a time, stirring continuously until cheese melts and sauce is smooth. FOR THE TOPPING: 10. Remove sauce from heat. Pour into 12" x 20" x 2" pan for 50 servings OR two pans for 100 servings to cool. CCP: Cool to 75° F within 2 hours and from 75° F to 41° F within 4 hours. 3 lb 2 oz Cheese, cheddar, yellow, reduced fat, shredded 6 lb 4 oz 11. Mix cooked macaroni and cheese sauce in a 18" x 26" x 9" food container on the same day of service. 12. Portion 3/4 cup of cheese sauce and marcaroni mixture into individual ovenable trays. 13. Top each individual serving of macaroni and cheese with 2 Tbsp of shredded cheddar cheese. Hold in refrigerator at 41° F or lower. CCP: Hold in refrigerator at 41° F or lower. 14. Preheat convection oven 325° F OR conventional oven 350° F. Cook for approximately 20 minutes. CCP: Heat to 165° F for at least 15 seconds. 15. Serve one individual container of macaroni and cheese (9.5 ounces) for each serving.
