DISCOVERING THE SUBLIME WORLD OF WINE
The Cape Wine Academy offers a range of entertaining and educational wine courses for members of
the public, travel & tourism industries. Tailor-made wine tasting events are available for corporate
groups. Our courses are held in Johannesburg, Pretoria and other areas on request.
THE SOUTH AFRICAN WINE COURSE
The essential introductory course! Topics encompass wine styles, cause and effect, vineyard practises
and winemaking. Lectures incorporate tutored wine tastings.
CERTIFICATE WINE COURSE
An in-depth course on South African wine. Covering viticulture, winemaking, distillation, fortification,
sweet and sparkling wines. Consisting of seven lectures, conducted every fortnight, or over a period of
three months. Tasting skills are fine tuned. Introduction to South African Wine course is a pre-requisite
to attend.
INTRODUCTION TO WINES OF THE WORLD COURSE
An introduction to the major winemaking areas around the world, learn the wine styles, varieties grown
and understand foreign wine terminology. Consisting of six lectures, conducted once a week. Taste
South African wines and compare them to their foreign counterparts.
DIPLOMA
A magnificent way to realise the world through a glass of wine! Four modules consisting of 7 lectures,
held fortnightly. This 2 year course details the wine regions of the Old & New World with relevant subject
tastings. Certificate wine course is a pre-requisite to attend.

Module 2: Wines of France
Module 3: Wines of the Old World (excluding France)
Module 4: Wines of the New World
WINE AND FOOD
We focus on the combination of wine and food, highlighting its effect on taste.
After a short lecture on wine etiquette, glasses and wine accessories, you will try eight (starter
portioned) food dishes, which you will match and compare to eight different wines, under the guidance of
our presenter.
CAPE SOMMELIER™
A seven module course for those who have completed one year practical experience in the hospitality
industry.

CAPE SOMMELIER™ PROGRAMME
The Cape Wine Academy is pleased to announce the launch of its Cape Sommelier™ programme. Due to
a huge demand and support from the hospitality industry for a suitable qualification and having researched
many options among English speaking countries, the following programme has been implemented in South Africa.
Cape Sommelier™
There will be seven modules to this qualification.
Once modules 1 to 5 have been completed, the student registers for the Cape Sommelier™ qualification,
receiving Module 6 assignments. Once these have been passed, the candidate proceeds to Module 7.
These will consist of:

 Module two:

South African Wine Course (theory only) 16hrs learning.
The Certificate Course, which includes both a written and a practical
wine tasting examination. 45 hrs learning.
Module three: Wines of the World course (theory only) 28 hrs learning (or completion of the
Diploma wine course would fulfil this requirement)
Module four: Experience - Practical training in a fine dining establishment that serves wine and
food, for a minimum of one year (references are required). This is not organised
by the CWA.
Module five: Wine and Food course. 4 hrs learning.
Module six:
Submission of three assignments (eg. drawing up a wine list) 9 hrs learning
Module seven: Practical presentation of wine and food session. 3 hours.
*This requires the candidate to organise a minimum of a three course meal, at the
restaurant at which they are currently employed in either Johannesburg/Stellenbosch or
Cape Town, presenting wine and food chosen to demonstrate the candidate’s ability to
act as a Sommelier. This is for the candidate’s own account. Three qualified judges
plus one Cape Wine Academy judge will be present.
Total number of learning hours: 105 hours, plus one year practical experience.
Successful candidates will receive both a certificate and an official badge CAPE SOMMELIER
Costs: Individual per module as per course attending, however, if Modules 1 – 5 have been completed, the
price for Modules 6 and 7 is the sum of R3 950.
*Note prices include VAT and are valid for courses being held until end Dec 2016 only, all courses in 2017 are subject
to to a price increase.

 Upon receiving your application a confirmation letter will be sent to you, notifying you whether you qualify
to continue onto the assignments, which will be sent to you electronically.

 You are required to pay in advance to be part of the sommelier programme.
