The last thing you need is a complicated recipe after a long day at work, but with our 5 grains you can create a delicious, nutritious dish in just 10 minutes – leaving you time to put your feet up and relax! Cook the 5 grains in the same way you do for rice: • Combine ½ cup grains and 1 cup water or broth in a 2 quart pot. • Bring to a boil over high heat, reduce to low, cover and cook for 10 minutes. • Remove from heat and let grains stand 5 minutes in covered saucepot. • Drain any excess water. • Add salt to taste if desired. You can simply season with a drizzle of good extra virgin olive oil and a sprinkle of Parmesan cheese, and garnish with basil. For a richer taste in a skillet gently heat your favourite pasta sauce (Bolognese, Alfredo, Garden vegetable, Marinara, etc.), stir in the 5 grains and cook for 1 minute over medium heat, stirring lightly to mix. Sprinkle generously with Parmesan cheese before serving. Chef’s tip: you can make your own veggy sauce by pan-frying finely chopped onion, carrot and courgette in 2 tbsp extra virgin olive oil, adding tomato puree and cooking for 10 minutes. ½ cup grains = 80 g 1 cup water = 240 ml 2. Boiled 1. 2. 3. Cook the 5 grains in the same way you do for pasta: • Bring a large pan of water to a boil. Add a pinch of salt if required. • Add ½ cup grains per person and simmer for 10 minutes. • Drain through a sieve. For a light meal simply season with a good extra virgin olive oil and Parmesan cheese. If you are in a hurry and want a tastier dish choose your favourite pasta sauce, heat it up gently in the microwave then pour on the grains and stir well. A generous sprinkle with Parmesan cheese is always recommended. Chef’s tip: try the 5 grains stir fried and you will get amazed! Cook the 5 grains as above explained, at the same time in a skillet add 2 tbsp olive oil and stir finely chopped vegetables (onion, carrot, peppers, courgette) for about 5 minutes. Add ham cubes, the cooked grains and 2 eggs, then stir fry for a few minutes. Season with salt and pepper to taste and serve hot. ½ cup grains = 80 g 3. Summer Salad 1. 2. 3. 5 grains is a wonderful base for summer salads: • Bring a large pan of water to the boil. Add a pinch of salt if required. • Add ½ cup grains per person and simmer for 10-12 minutes. • Drain through a sieve and rinse with cold water. • Add all ready to eat ingredients you wish such as vegetables, cheese, meat, poultry, fish, etc. For a typical Mediterranean salad stir in Feta cheese, tomato cherries, green and black olives. Drizzle with extra virgin olive oil and with fresh herbs, such as basil, parsley, chives. Buon appetito! ½ cup grains = 80 g 4. Soup 1. 2. 3. For a 4 serving soup: • Bring 5 cups water or broth to the boil. • Add 1 ½ cup grains, together with some chopped vegetables (carrots, celery, potatoes, courgettes), meat (bacon or ham) and cream if desired. • Cook for 10-12 minutes or until all ingredients are cooked. Add salt and pepper to taste if desired. • Serve hot with 1 tbsp extra virgin olive oil and a sprinkle of Parmesan cheese. Garnish with crusty bread. Short cut: you can add the grains to a ready soup or broth, bring to the boil and cook for 10-12 minutes. Chef’s tip: try the 5 grains in a sweet potato soup with cumin, cayenne pepper and fresh cilantro. 5 cups water = 1.25 l 1 ½ cups grains = 250 g 5. Risotto 1. 2. 3. How to prepare a veggy risotto for 3-4 persons: • In a large pot bring to the boil 6 cups broth. • Finely chop the desired vegetables (courgette, broccoli, pumpkin, asparagus, etc.). • In a pot fry the shallot in extra virgin olive oil. Add the vegetables, cook for a few minutes, then stir in 1 ½ cups grains. • Add the stock little by little, stirring and allowing it to be absorbed before adding more liquid. • When cooked (after about 12 minutes) add the salt and pepper to taste, butter, grated Parmesan cheese and mix together. • Cover and let stand for a few minutes. • Sprinkle generously with Parmesan cheese on top and garnish with parsley before serving. Chef’s tip: for a perfect Italian style mushrooms risotto substitute vegetables with 30 g dry Porcini mushrooms. Soak them in lukewarm water for 10 minutes, then wash, chop finely and add to the fried shallot. 6 cups broth = 1.5 l 1 ½ cups grains = 250 g 4. 6. Microwave 1. 2. 3. Microwave directions: • • • • Combine ½ cup grains and 1 cup water or broth in a 2 quart microwave safe bowl. Cover with plastic wrap and microwave on high power for 6 minutes. Carefully remove bowl from microwave and let grains stand 5 minutes. Drain any excess water, then fluff with a fork and season to taste.
