The same waters equally splash on the shores of all of the countries
around the vast Mediterranean Sea where, in prebiblical times, a
seafaring nation known as the Phoenicians roamed its waves.
The Phoenicians were not only expert sailors and navigators
but adventurous merchants as well. These resourceful traders,
who occupied a string of cities along the Mediterranean coast
in what is today Lebanon, brought their dye, fabric, ceramics,
glass, metals, wine, crops, spices and oil from port to port across
the pond. To promote trade, they set up colonies from North
Africa to Sicily and even around Spain, at the same time serving
as missionaries of civilization, bringing eastern Mediterranean
products and culture to cities to the west.
One might say the cuisine of Lebanon has been in the making since
those pre-biblical times. Situated between the East and the West,
Lebanon is and always has been a culinary and cultural crossroads,
and the cuisine of modern-day Phoenicians is the epitome of the
sun-drenched Mediterranean diet - fresh, diverse, flavorful,
simple but adventurous.
Phoenicia Restaurant continues this tradition on the western
shores of the New World with its famed Lebanese hospitality
and menu offerings that are a product of both the earth and the
sea.
