OUR MILK, A FAMILY HISTORY Since 1972 our milk is the main ingredient of our work, the only one that speaks of us, of our passion, of our family. Our adventure starts with our grandfather in a land full of history, in which our cows found their perfect habitat. Nowadays we continue our grandfather activity, with the same passion and the same enthusiasm, offering our customers high quality product. LOVE FOR OUR LAND In the Murgia, a hilly, fertile and rich in pastures area, in the apulian countryside, our company born. In a land of thick forests and extended steppe, inhabited by the typical Mediterranean vegetation, our cattle produces milk of which we know the origin, unmistakable and of quality. Not only our cows, but also those of other farms controlled by us, are nourished in the most natural way possible and let it graze freely. A PROTAGONIST, OUR MILK Thanks to our land, we manage to always produce a fresh and healthy milk. A milk that we work within few hours after the milking in order to maintain all its original characteristics, without altering them. It is worked according to the ancient craft dairy traditions handed down for generations. A fresh, sweet, delicate and unmistakable smell as that of our beloved land. IF THEY’RE GOOD, THEY’RE MALDERA Our products are the real protagonists of our story. They are the result of the experience and the passion that guided us along these years. The attention in the production and the quality of the material let our products become the expression of our land and of its unique flavors. Starting with Burrata, the heart of our production and of apulian dairy tradition, in the years we manage to modify, to improve and to differentiate the product until we obtain four different typologies of it. Our production includes mozzarella in its different making of fiordilatte, nodding and trecce; stracciatella, another product of the tradition; fresh cheese as giuncata; smoked cheese. Each product is unique in its flavor but they all have something in common: our milk and our tradition. OUR BURRATA HAS REACHED PERFECTION As said before, the burrata is our beloved product. We have always loved the fruit of our work, faithful memory of a handed down tradition. Only with the passing time we managed to get a burrata which today is a source of pride for us. The burrata is our core business, still produced through the typical craft process, available in different shapes and making as burratine or the ones with and without tuft or that in the leaf or even the frozen one. All of them, without exception, are considered heritage of our country. classic line biologic line OUR SOULS, CLASSIC, BIOLOGIC AND FROZEN After all these years dedicated to the production of our classic products, we decided to satisfy the growing request for products not only healthy and fresh, but also biologic. The breeding of cows is practiced according to ancient methods. We promote transhumance pastures during which they can eat organic food without herbicides, pesticides and fertilizers. Their milk allows us to get dairy products from authentic flavor and extraordinary antioxidant power rich in Omega 3 and with higher content of vitamins A and E. We make also the frozen burrata, a modern idea that makes possibile to extend the expiring date up to 12 months, preserving the organoleptic characteristics. Our experience, our products, always in step with the times, at the service of our customers. BURRATA traditional The burrata is our specialty, a creamy cheese similar to the mozzarella, but that in its inside hide a buttery heart of cream and frayed mozzarella. It’s made of a layer of stretched curd. After the stuffing it is closed on the top and hand-tied in order to create the typical tuft. Nowadays it is considered one of the most delicious specialties of Apulian dairy tradition. Ingredients Milk, cream / hut, salt, rennet. Preservative free. Gastronomic matches Excellent with tomatoes and extra-virgin olive oil, with fresh truffle, with salami, or in the making of main courses. BURRATA wrapped in leaf The burrata in leaf is a creamy cheese wrapped in a leaf in order to preserve its soft consistency. It looks like mozzarella, but in its inside held a buttery heart of stracciatella, a mix of cream and frayed mozzarella. Obtained by a layer of stretched curd, it is stuffed, closed on the top and hand-tied in order to create the typical tuft. It is, nowadays, considered the most delicious product of Apulian dairy production. Ingredients Milk, cream / hut, salt, rennet. Preservative free. Gastronomic matches Excellent with tomatoes and extra-virgin olive oil, with fresh truffle, with salami, or in the making of main courses. BURRATINE with or without tuft The burratina is a little burrata, a creamy cheese with an heart of stracciatella. It’s made by a layer of spoon paste, stuffed and closed on the top. The one with tuft is closed by forming a knot, in the one without tuft the surplus is stung. Available also in the Frozen version, with an expiration time of 12 months. It is, nowadays, considered the most delicious product of Apulian dairy production. Ingredients Milk, cream / hut, salt, rennet. Preservative free. Gastronomic matches Extra-virgin olive oil, ham, nuts, crudités. TRECCIA Treccia mozzarella derives its name from the braid shape given by our cheese-makers who manually braid together the strips. Its consistence is more elastic and nervous than that of the classic mozzarella. Ingredients Whole cow’s milk, salt, rennet. Preservative free. Gastronomic matches To be enjoyed cold, with tomatoes, salads and vegetable dips or to prepare hot dishes. FIOR DI LATTE quadrifoglio Fiordilatte mozzarella represents the classic, integral part of the dairy heritage of the Italian Mezzogiorno. Made of stretched curd, it’s a mozzarella with a soft, milky and delicate heart to which we give the unusual shape of a four-leaf clover. Ingredients Whole cow’s milk, salt, rennet. Preservative free. Gastronomic matches Ideal for caprese salad, to enrich salads or for the classic “mozzarella in carrozza” (french toast). NODINI Nodini belongs to the mozzarella category. They have a soft and elastic consistence. They are obtained cutting a portion of stretched curd braided and tied to form a knot. Ingredients Whole cow’s milk, salt, rennet. Preservative free. Gastronomic matches To be enjoyed cold, with tomatoes, salads and vegetable dips or to prepare hot dishes. GIUNCATA classic or with rocket The name “giuncata”, of ancient tradition, derives from the word “giunchi” which identifies the ancient method of braiding the strips of wood to form its container. It’s a fresh cheese with a delicate flavor, produced in two versions: the traditional one enriched with fresh rocket. Ingredients Low-fat milk, milk, salt, rennet. 5% of rocket in the rocket variant. Preservative free. Gastronomic matches To be enjoyed natural or with extra virgin olive oil. Excellent to enrich salads and bruschette. STRACCIATELLA Stracciatella has a semi-liquid consistence. It is formed by frayed mozzarella drowned in a buttery mousse of fresh cream. Nowadays, the mozzarella spun paste from which the frayed mozzarella is obtained is hand-frayed, as tradition. Ingredients Whole cow’s milk, pasteurized cream / hut, salt, rennet. Preservative free. Gastronomic matches Excellent with tomatoes and extra-virgin olive oil, with fresh truffle, with salami, with bruschette and in the making of main courses. SCAMORZA classic or smoked Scamorza is a stretched curd cheese. It takes its name from the verb “scamozzare” which means “to remove a part”. In origin, the dairymaids cut the stretched curd by hand and giving it a pear shape. It can become smoked by passing in the smokehouse in order to acquire the classic and characteristic aspects and aroma. Its consistence, either in the traditional and in the smoked one, is compact but soft. Ingredients Whole cow’s milk. salt, rennet. Preservative free. Smoked with liquid smoke. Gastronomic matches Perfect to enrich appetizers, starters, salads, baked or tasted with smoked cold meats. PERLINE Perline are fanciful and versatile product. The rounded shape of a peanut dimension give them their name. They are obtained by the stretchedcurd of the scamorza and after the dairymaids gives them their shape they passes in the smokehouse. SMOKED STICKS Among the newest product our dairy has created the smoked stick. They take their name from their sticky shape. As the perline, they are produced with the scamorza’s stretched curd and after the “spinning”, which gives them the shape, they are held in the smokehouse in order to acquire their characteristic aroma.
