MCPD and Glycidyl Esters
Edited by Shaun MacMahon
2014. Hardback. 230 pages. ISBN 978-0-9888565-0-9. Product code 272
List: $155 • AOCS Member: $110
This book discusses the current research on monochloropropanediol
diol
(MCPD) and glycidyl esters in edible oils. These potentially harmful contaminants
are formed during the industrial processing of food oils during deodorization. The
mechanisms of formation for these contaminants, as well as research identifying possible precursor molecules are reviewed. Strategies which have been used successfully
to decrease the concentrations of these contaminants in edible oils are discussed, including the removal of precursor molecules before processing, modifications of deodorization protocol, and approaches for the removal of
these contaminants after the completion of processing. Analytical strategies for accurate detection and quantitation of MCPD and glycidyl esters are covered, along with current information on their toxicological properties.
This book serves as a single point of reference for the significant research related to these contaminants.

A Chemical Study of Oils and Fats of Animal Origin,
by M. E. Chevreul
Edited by Gary R. List and Jaime Wisniak, annotated and translated by Albert J. Dijkstra
2009. Softbound. 388 pages. ISBN 978-2-9533244-0-2. Product code 251

M. E. Chevreul’s “Recherches chimiques sur les corps gras d’origine animale” is
important not only because it established the chemical nature of fats, but because
it also conveys a historical perspective. Berzelius commented that Chevreul’s work
should serve as a model for young chemists wishing to do research in any field of chemistry and went on to
say that Chevreul’s investigations were the most complete and best executed series of experiments in all of
chemistry. The translator of this first English language edition has produced a formidable work and valuable
contribution to the literature.

2013. Hardback. 548 pages. ISBN 978-0-9830791-6-3. Product code 269
List: $250 • AOCS Member: $190
Lipid oxidation in food systems is one of the most important factors affecting food
quality, nutrition, safety, color, and consumers’ acceptance. The control of lipid
oxidation remains an ongoing challenge as most foods constitute very complex
matrices. Lipids are mostly incorporated as emulsions, and chemical reactions
occur at various interfaces throughout the food matrix. Recently, incorporation of
healthy lipids into food systems to deliver the desired nutrients is becoming more popular in the food industry. Food ingredients contain a vast array of components, many of them unknown or constituting diverse or
undefined molecular structures, requiring the food industry to develop effective approaches to mitigate lipid
oxidation in food systems. This book provides recent perspectives aimed at a better understanding of lipid
oxidation mechanisms and strategies to improve the oxidative stability of food systems.
Also available as an eBook on iTunes and Kindle.

This book summarizes current modern approaches in the quantification of the
physical structure of fats and its relationship to macroscopic functionality. The
approach taken here is a general one, and the principles and techniques presented
can be applied to any lipidic material. With increased maturity of a field such as the
physics of fats and oils, comes an increased need for more quantitative approaches
to common problems encountered by industry. This book outlines modern methods used for this purpose by some of the leading authorities in the field today.

In an effort to provide alternatives to trans and saturated fats, scientists have been
busy modifying the physical properties of oils to resemble those of fats. In this
fashion, many food products requiring a specific texture and rheology can be
made with these novel oil-based materials without causing significant changes to
final product quality. The major approach to form these materials is to incorporate
specific molecules (polymers, amphiphiles, and waxes) into the oil components that will alter the physical
properties of the oil so that its fluidity will decrease and the rheological properties will be similar to those
of fats. These new oil-based materials are referred to as oil gels, or “oleogels,” and this emerging technology
is the focus of many scientific investigations geared toward helping decrease the incidence of obesity and
cardiovascular disease.

Epidemiological studies have continued to increase awareness of how
trans fats impact human nutrition and health. Because of the adverse
effects, the trans fats labeling regulations came into effect in 2006. Since
ce
then, the fats and oils industry and food product manufacturers researched
esearched and
implemented a number of novel, practical, and cost-effective solutions to replace
trans fats with alternate products. This book provides a comprehensive understanding of the trans fats chemistry, labeling regulations, and trans fat replacement technologies. It also deals with
world-wide trends and scenarios in terms of regulations and trans fat replacement solutions.

The first 90 years of vitamin E research has produced prolific and notable discoveries. Until the last few decades, attention has been given mostly to the biological
activities and underlying mechanisms of α-tocopherol, which we now know is one
of more than eight vitamin E isomers. Tocotrienol discovery came much later, in
1965, but existed for almost 20 years as an obscure vitamin E. Currently, tocotrienols have reached a new measure of research height; more than one-third of all vitamin E research of the last
30 years has been published since 2009. The thriving field of tocotrienol research gives ground for publication of the second edition, a compilation of the latest tocotrienol research in all new chapters.

Fatty Acids in Health Promotion and Disease Causation has four main focuses and
sections. The first focuses on heart disease and the role of fatty acids in its prevention and causation. The second focuses on body composition, diabetic disease
and health promotion, and actions after transformation by oxidation. The third
section is on fatty acids in health promotion including cancer, intestinal microbes,
and membrane functions. In the last section, the actions of presumed health-promoting omega-3 fatty acids
are extensively investigated by experts from around the world.

Dietary fat is an important source of nutrients and plays a key role in all aspects
of human health. Dietary Fats and Risk of Chronic Disease is based on an AOCSJOCS Joint Symposium on Bioscience, and many of the chapters were developed
from key sessions at the symposium. It covers the effects that different dietary
fats have on the development of chronic diseases, such as cardiovascular disease,
diabetes, cancers, inflammation, and immune functions. Those involved in health
and nutrition, including researchers, physicians, formulators, and dietitians will
benefit from the information in this book.

This book discusses the current research on monochloropropanediol
ol
(MCPD) and glycidyl esters in edible oils. These potentially harmful contamtaminants are formed during the industrial processing of food oils during deodorization.
eodorization
The mechanisms of formation for these contaminants, as well as research identifying
possible precursor molecules are reviewed. Strategies which have been used successfully to decrease the concentrations of these contaminants in edible oils are discussed, including the removal of
precursor molecules before processing, modifications of deodorization protocol, and approaches for the removal
of these contaminants after the completion of processing. Analytical strategies for accurate detection and quantitation of MCPD and glycidyl esters are covered, along with current information on their toxicological properties. This book serves as a single point of reference for the significant research related to these contaminants.

The revised first edition includes much of the content of the first edition, but incorporates updated data, details, images, figures, and captions. This book addresses
alternative green technologies at various stages of oilseed and vegetable oil processing, including: oil extraction technologies such as expeller, aqueous, and supercritical
methods; and green modifications of conventional unit operations such as degumming, refining, bleaching, hydrogenation, winterizing/dewaxing, fractionation, and deodorization. While most
chapters describe soy oil processing, the techniques described are equally applicable to oils and fats in general.

Since the first edition was introduced, the fats and oils industry has undergone a
number of changes and challenges that have prompted the development of new
and revised products, technologies, and processing techniques. This second edition provides a more complete coverage of the pertinent subjects in fats and oils
technology; at the same time it follows the original objective, which is to provide
an overview of the fats and oils industry and serve as a starting point for new fats and oils scientists and
engineers. This edition has been expanded from 19 to 29 chapters and subdivided into five sections, covering raw materials, processing, quality, applications, and new developments. The material covered in the 16
chapters retained from the first edition has been updated to include the advances in technology and practice.
Thirteen new chapters that pertain to new areas of fats and oils technology have been added to supplement
the original material.
