The Wheatsheaf Bar & Grill will be a new 100 cover fully refurbished grade 2 listed pub in the centre
of the lovely town of Farnham providing customers with a comfortable, exciting and innovative ‘pub
and grill’ concept with rustic authentic decor and furnishings, including an open kitchen.
Key aspects of our offer will include;





Fresh high quality food, sourced locally with seasonal ingredients and produce including
prime Surrey Beef.
Fresh fish from the south coast of England delivered and prepared fresh each and every day.
Direct tie in with local farms including Meadow End Farm in Tilford, Bills Sausages.
Open all day, lunch and dinner served Mon to Fri and also breakfast at weekends.

The Role
Overall Objective:
We are looking to recruit a talented innovative and passionate Sous Chef for a new and challenging
role.
The successful candidate will deputise in the Head Chefs absence ensuring a high standard of food is
served at all times and to assist the Head Chef in effectively running the kitchen, achieving all
operational and commercial targets.
Maintaining the overall standard of food offer with a continuous focus on innovation, sourcing of
quality local produce, creativity and above all passion will be a key aspect of the Sous Chef role.
Responsibilities:








To ensure we deliver a high standard of food at all times ensuring all dishes are served at the
correct portion size, quality and temperature and enforcing strict ticket times on service
In the Head Chefs absence take complete ownership over the running of the kitchen, making
decisions, managing staff and implementing new procedures where necessary.
To ensure that all Health and Safety legislation and guidelines are implemented, adhered to
and reviewed regularly, in respect of kitchen production, employees, machinery, equipment
and hygiene.
To ensure that all products used are of a high standard.
To supervise the kitchen team and a willingness to 'get hands dirty' and leading by example
To ensure all areas are clean and tidy after service.
Jointly responsible for preparing kitchen cleaning rotas, supervising cleaning schedules and
signing off on a weekly basis.
To ensure when ordering on behalf of the Company, the most competitive price is obtained.






Effectively managing and developing the kitchen team, providing training and development
to fellow team members to ensure best practice across the kitchen and to develop you staff.
To understand the unit budget and recognise the importance of maximising sales,
controlling costs and achieving margins.
To achieve and where possible exceed the budgeted food margin.
To minimise wastage through poor management or over preparation of produce. Fresh food
means fresh food and running out of menu items occasionally is not a problem.
To assist the Head Chef with new ideas and initiatives to generate higher sales and increase
customer footfall at the pub
To work at other sites of the Group as required.

You must be a fun person with a good sense of humour who can enjoy work and the
interaction with customers and other staff members.
You must be organised and comfortable working under pressure. The ability to work
autonomously and independently is as crucial as being a team player amongst a small team
of chefs.
