I ntroduction
The word whiskey literally means Water of Life – Uisce Beatha
in Gaelic.
The origins of Irish whiskey are buried in the depths of
unwritten Irish history. It is however nearly certain that the
art of distillation was broughtto Ireland by

century, Irish whiskey had a
superior quality image and was regarded as
being much more drinkable than Scotch.
Despite Ireland’s dominance of the 19th century whiskey
export market, many social and economic factors were to
affect the production, consumption and export of Irish
whiskey. The story of Irish whiskey is one punctuated with
political and economic upheaval, disasters, poor decision
making and more than a fair share of bad luck. In 1838, the
charismatic Capuchin Monk, Father Matthew, began a personal
and highly successful crusade against whiskey.
Good luck prevailed for a time for the Irish whiskey industry,
when in 1870 the wine louse decimated European vines, and
with them, the wine and brandy industry. Irish whiskey soon
became the drink of choice for the gentry in Europe and sales
soared until the advent of World War I. This was followed by
American prohibition in 1919, Irish independence in 1921, civil
war in 1921-22 and a trade war with Great Britain and her
colonies, all of which combined to cause a complete collapse
of the Irish whiskey industry. Distilleries in Ireland closed by
the dozen.

I ntroduction
Prohibition in the USA was probably the severest blow. Due to
a misplaced sense of loyalty to the American government, and
despite many requests, the Irish passed over the opportunity
to supply thousands of gallons of whiskey, both during and
even after Prohibition. It was essentially after Prohibition that
Scotland quickly made a name for itself in the world of whisky.
An entire generation of Americans never had the opportunity
to drink and appreciate Irish whiskey. Scotch, and
not Irish, became the word for good
whisky.
Irish political
decisions regarding
whiskey exports during World War II
also lacked basic economic foresight. Whilst
production was heavily boosted in Scotland for the post-war
export market and domestic consumption was restricted,
while exports were criminally neglected. The result? The
export market collapsed completely after the war and even
more distilleries closed down.
In 1975 the new Midleton Distillery was commissioned on a site
next to the old Paddy Distillery in County Cork. Since then
Jameson, Paddy, Powers and Tullamore Dew have been
produced in this ultra modern distillery.
In 1988 Irish Distillers was taken over by the French drinks
giant, Pernod Ricard, which offered the benefit of its worldwide
distribution channels and networks and which gave Irish
whiskey sales a very substantial thrust into world markets.
In 1989, the Cooley distillery started
distilling whiskey and it remains to
this day the only independent Irish
distillery. In 2006, the Bushmills
Distillery in Antrim was sold by Irish
Distillers and now forms part of the
Diageo Group.
Irish whiskey, is today enjoying
once again a golden era and
has become one of the fastest
growing categories of spirit in the
world.

Still as it is now known) has been matured for up to
15 years in ex bourbon and ex Oloroso Sherry Casks.
Ireland is the only country in the world producing
Single Pot Still Whiskey, which is distilled from
malted and unmalted barley.

For true aficionados of Irish Whiskey, the words Green
Spot make the pulse quicken. This is Mitchell’s own
label Irish Whiskey for the past 100 years. Mitchell &
Son Merchants was founded in 1805 and both the 5th and
6th generations of the family run the business. Green
Spot is produced by Irish Distillers, and is distilled
in Midleton, Co. Cork. It’s made up of 7 and 8 year old
pot still Whiskey, and 25% of it is matured in sherry
wood.

Cooley/ K ilbeggan Distillery
Cooley is the smallest and the youngest of the three
distilleries operating in Ireland, having started distilling
in 1989. It is also the only one which is independently
owned. It is located in the Cooley Peninsula in Co.
Louth. It currently produces over 1.5 million litres and
filling over 12,000 200L ex-Bourbon casks annually. It
distils both grain and malt whiskey and operates a
double distillation process. Double distillation in pot
stills produces a new spirit which is more robust in
nature than triple distilled whiskey and which has very
pleasant malt and gentle fruity notes.
Cooley is also the only Irish distillery creating peated
Single Malt whiskeys and bottling Single Grain Irish
Whiskey. Their Single Grain whiskey has been distilled
from maize and malted barley in tall column stills..
All Cooley whiskeys are matured in ex-Bourbon casks
only, with the exception of whiskeys finished in special
casks, such as the Tyrconnell collection.
Cooley produce many different brands of whiskey, such
as: Locke’s – Tyrconnell – Connemara – Kilbeggan.
Cooley also manage the oldest continually licensed
distillery in the world, the Kilbeggan Distillery which
is situated on the Brosna River in Co. Westmeath.
Originally opened back
in 1757, it closed in 1957
due to tough economic
circumstances in Ireland
at the time. In 2007
however, 50 years after
its closure, production
started
again
in
Kilbeggan and the first
new whiskey - The
Kilbeggan Malt - to
come
from
this
distillery in over 50
years was bottled in
2010.

Tullamore Dew – Brand Background
Ireland was once the world’s greatest whiskey producing
nation, Tullamore Dew was one of Ireland's most famous
whiskey brands. Today, as the world number 2 Irish whiskey,
Tullamore Dew has once again returned to international
prominence.
The origins of Tullamore Dew’s legendary Irish whiskey can be
traced back to 1829 when the Tullamore Distillery was founded
in Tullamore, County Offaly by Michael Molloy. Daniel E
Williams was the major influence on the development of the
distillery. His initials, D-E-W, inspired the whiskey to be named
‘Tullamore Dew’ with the original slogan "Give every man his
Dew" still in use today.
Daniel E Williams was a great customer in The Palace in the
40’s often holding court in the snug with the Fitzgeralds the

Bushmills Distillery
Bushmills is the second largest distillery and the
oldest working distillery in Ireland. It is located in the
village of Bushmills, in Co. Antrim in Northern Ireland.
It currently produces over 500,000 cases a year and
aims to double this output by 2013. It only distils malt
whiskey and all their whiskeys are triple distilled.
Bushmills however also bottle blends as well as single
malt whiskeys. The grain whiskey for their blends
comes from Midleton.
Bushmills mature their whiskeys in ex- Bourbon and
ex- Oloroso Sherry casks, but also regularly use other
types of casks such as Port and Madeira to produce
brands such as Bushmills 16 Year Old and Bushmills
21 Year Old.
The Bushmills Distillery is owned by the Diageo Group.
Black Bush and all whiskeys bearing the name
Bushmills are produced by the

Midleton Distillery
Midleton Distillery is the largest and has the largest
production capacity of all the Irish distilleries. It is
located in Co. Cork in the south-east, next to the old
Cork Distilleries Co. distillery (which produced Paddy).
Annually more than 100 million bottles of whiskey are
produced in Midleton. It produces both grain whiskey
from maize and malt in column stills and pot still
whiskey from malt and barley in pot stills.
All whiskeys distilled in Midleton are distilled 3 times.
Triple distillation produces a new spirit which is lighter,
smoother and has fruitier, sweeter and more floral notes
than double distilled whiskey.

this design; austere and simple but yet vibrant, quaint and
enchanting. Note the high alter style Victorian back bar typical of the era - with Romanesque arches and very clever
use of mirrors.
Reflect over a Tullamore Dew, small Kilbeggan from the
oldest distillery in the world or a Blackbush and soak up the
atmosphere of this fine Victorian jewel. Here at The Palace we
have a singular devotion to the promotion of Irish Whiskey in

Flann O’Brien was a regular in The Palace . He drank
whiskey in the intensive care unit (lounge room at the
back). He was once asked why he wore a velvet glove
when he drank whiskey.
