Minty Green Smoothie Ingredients 1 cup water 2 cups pineapple chunks 2 cups baby spinach, tightly packed ¼ cup fresh mint leaves, tightly packed 2 cups ice cubes Directions 1. Place all ingredients into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Switch machine to Start and slowly increase speed to Variable 10. If necessary, use the tamper to press the ingredients into the blades. 4. Blend for 1 minute and 30 seconds or until desired consistency is reached. Basil Arugula Pesto Sauce Ingredients 3 whole garlic cloves, peeled 3 TBS pine nuts 1 cup fresh basil leaves 1 cup fresh baby arugula Salt and pepper to taste ½ cup freshly grated parmesan cheese ½ cup Extra Virgin Olive Oil heated in measuring cup in microwave for 60 seconds Directions 1. Place all ingredients EXCEPT for the warm olive oil, into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Switch machine to Start. Remove lid plug and slowly pour in warm olive oil and slowly increase speed to Variable 10. If necessary, use the tamper to press the ingredients into the blades. 4. Blend for 30 seconds or until desired consistency is reached. 1 Simple Sweet Potato Soup Ingredients 1 ½ cups organic vegetable broth 1 cup 2% Fage plain yogurt Salt and pepper to taste. 12 ounces, approx. 1 ½ baked sweet potatoes, peeled Garnish: minced green onion or chives Directions 1. Place all ingredients except the green onion, into the Vitamix container in the order listed and secure lid. 2. Select Variable 1. 3. Switch machine to Start and slowly increase speed to Variable 10.
