Buying:
Choose winter squash that has a smooth, dry rind
and is free of cracks and soft spots. Choose winter
squash that has a deep color and is heavy for its
size. The squash should have a firm, rounded, dry
stem. There are many varieties of winter squash,
they are: acorn, banana, buttercup, butternut,
hubbard, spaghetti, and sweet dumpling.
Storage:
Store unwashed winter squash in a cool, dry
place for up to 3 months. If a squash must be
refrigerated, store unwashed squash, for up to 2
weeks.
Dry Storage: Up to 3 months
Refrigerator: Up to 2 weeks
Use:
Generally, winter squash should be halved before
cooking. Large squash can be cut into serving size
pieces. Winter squash can be baked, boiled,
microwaved, sautéed, or steamed.

Weigh produce to find out exactly how much it will
cost. Place the amount of winter squash you would
like to buy on the scale provided, and round up to the
closest pound or half pound. The cost is the total
weight in pounds multiplied by the price per pound.

Roasted Butternut Squash
Recipe:
Preparation Time: 30 minutes
Serves 4
Cups of Vegetables per Serving: 1
Ingredients:
1 butternut squash (about 1½ to 2 pounds)
⅛ teaspoon allspice
⅛ teaspoon salt
¼ teaspoon pepper
Preparation:
1.) Preheat oven to 350ºF.
2.) Cut the squash into 4 wedges and remove the seeds.
3.) In a small bowl, combine allspice, salt, and pepper.
4.) Very lightly spray each wedge with non-stick
cooking spray and sprinkle with allspice, salt, and
pepper mixture.
5.) Bake for 40 minutes until soft.
