Mini Monkey Bread
½ cup (cube) butter
½ cup brown sugar, packed
2 pkgs. refrigerated biscuits
¼ cup white sugar
2 + ¼ teaspoons cinnamon
Instructions:
1. Pre-heat oven to 375⁰F.
2. Line a muffin pan with 10 paper liners.
3. Cut up the cube of butter and place in a large custard cup, cover with wax
paper. Melt in the microwave for 30-45 seconds.
4. Stir the brown sugar into the melted butter; set aside.
5. Open the biscuits and separate into individual pieces. You should have 20
biscuits in all. Using pastry shears, cut each biscuit into 4 pieces.
6. Pour the white sugar and cinnamon into a gallon ziplock bag. Seal and
shake well to mix sugar and cinnamon.
7. Add a few pieces of biscuit into the bag and shake to cover each biscuit
piece. Place 8 pieces of cinnamon/sugar covered biscuit pieces into each
muffin cup.
8. Spoon about 1 tablespoon of butter/brown sugar mixture on top of each
group of biscuits.
9. Bake at 375⁰F. for 15 minutes
10.While monkey bread is baking, prepare the icing.
11.Let monkey bread cool for about 5 minutes or so. Remove from the pan
and drizzle with icing. Makes 10 individual mini monkey bread.
Powdered Sugar Icing
1 cup powdered sugar
¼ teaspoon vanilla
1 tablespoon (or so) milk
In a small mixing bowl, add the powdered sugar, vanilla and milk. Using a wire
whisk, blend until mixture it is uniform in color. Add a TINY amount of milk if you
want a thinner consistency.
