Saskia’s birds are free to roam in the beautiful and idyllic Barossa Valley and live only on a vegetarian-tailored corn diet. We wanted to take the stress and heartache out of cooking your Christmas turkey……. so we’ve done it for you! If you would like to serve warm, just take your bird from the fridge for an hour before you plan to heat it, and preheat your oven to 160°C. Pour a glass of water, wine or stock into the bottom of your roasting pan and add a few chopped onions. Place your turkey on top and bake for an hour and 15 minutes covered with foil. For the ballotine, heat the bird for 40mins in the oven at 160°C (foil not required). You can add pan juices to your gravy pot or red wine jus. Yum! Serve with my aromatic and sweet cranberry relish and beautiful red wine jus with pan juices added. If you want to serve your turkey cold, that’s no problem! We can carve and platter it for you. All you have to do is ask. I love studding the gorgeous double smoked ham with cloves and taking in the magical and romantic aroma of Christmas…. My glaze is a mix of garlic, thyme, orange juice, seeded mustard and honey. I’ve been using the same recipe for years, handed down from my gran. Serve the ham with my lovely pickled pineapple relish or eggplant kasundi. It’s a real treat! This year I’ve sourced our hams from a country butcher and they are truly the best hams I have ever tasted! Tip: Soak a cotton pillow case in hot water with a glug of white vinegar. Store your ham in the pillow case for up to three weeks! Layer nice, fleshy leaves of peppery rocket with flaked trout, shaved fennel, capers, avocado and red onion. Squeeze fresh lemon and drizzle olive oil over the top. Serve with my dill mayonnaise on the side. Add a petite Chablis and, really, you’ve got your Boxing Day lunch sorted! My Thai dressing is the best dipper known to man – so make sure to keep a bottle handy in your pantry! Why not make some late night toasties with your leftover ham – cut thick slices of sourdough and smear with mayonnaise and Dijon mustard. Add slices of freshly carved ham, grated gruyere cheese and season well. Fry in butter and oil in a non-stick fry pan on low heat until the cheese is all gooey and the sourdough golden brown.
