Newcastle Permanent Charitable Foundation has provided more than $1.7 million in grants to not-for-profit and community organisations across regional New South Wales over the past 12 months. The grants have been used to fund more than 40 vital projects and initiatives. These are focused on supporting the health and wellbeing of those in need and achieving better life outcomes for young people. Ingredients (serves 4) Method 500g chicken thighs 1 tablespoon of olive oil 1/2 tablespoon of fresh lemon juice 3/4 tablespoon of ground cumin 1 teaspoon of ground coriander 1 tablespoon of smoked paprika 1/2 tablespoon of chilli powder 1 x can diced tomato salt and pepper to taste 4 x 12-inch tortilla 1 x corn cob in husk Black beans Shredded cheese 1 x lime 1. Mix the oil, lemon juice, spices and tomato with chicken thighs in a deep dish 2. Slow cook on a low heat for 4 to 6 hours until tender (add a small amount of liquid smoke if you want to achieve a smokey flavour) 3. Remove the chicken from the liquid and shred the meat with two forks 4. Heat a large frypan to a medium/high heat and drizzle with olive oil 5. Strip the husk from the corn and strip the sweet corn from the cob 6. Place 1 tortilla in the pan and place chicken, cheese, corn kernels and black beans evenly across the tortilla 7. Place a tortilla on top of the mixture. When cheese has melted, flip the tortilla and toast the other side. Once both sides are golden and crispy, remove from heat and cut into sections to serve 8. Serve with lime Welcoming Graham Batten as Executive Officer Variety’s Future Kids Scholarships The Charitable Foundation’s Board of Directors welcomed Graham Batten as its new Executive Officer in March. The Executive Officer role provides organisational and strategic support to the Foundation’s Board of Directors. Graham was formerly the Procurement Manager at Newcastle Permanent Building Society and brings with him considerable corporate experience complemented by a passion for working with his local community and business partners in regional NSW. The Charitable Foundation is helping talented young people who face disadvantage from the Hunter and Mid North Coast to access the resources they need to reach their full potential in the sporting and performing arts fields. The Charitable Foundation provided a $55,000 grant to Variety – the children’s charity to fund the first ever ‘Future Kids’ Scholarships specifically for this region. Sixteen exceptional young people received scholarships to help pursue their dreams. Hunter Medical Research Institute builds innovative lightsheet microscope Researchers now have access to new technology that can assist in developing treatments and possibly cures for diseases affecting thousands of Australians. A $38,500 grant from the Charitable Foundation helped three young University of Newcastle biologists to hand-build a state-of-the-art laser microscope at Hunter Medical Research Institute. The microscope will help to improve health outcomes for those in our community battling diseases we don’t yet understand. Do you know an important community project that needs funding?
