FROM THE BUTCHERS AT DARTS FARM
Welcome to our Christmas
magazine and catalogue.
Christmas is upon us and we are particularly
looking forward to this festive season after
coming such a long way in the past 12 months.
Now under the wing of Darts Farm and with a
continuation of the hands-on team, expertly
lead by master butchers Alastair and Philip
David, we have had a chance to refocus on
what the values of the business are and what
we are truly passionate about. Hence, we have
strengthened our local food chain and worked
with local suppliers to provide you with the
finest quality produce.
Most of our pork comes direct from
Kenniford Farm, only 2 miles farm Darts Farm,
the rest comes from other local farms. The
free-range chickens and ducks are supplied by
Creedy Carver in Crediton. The lambs are
hand-picked by Philip and Alastair from Exeter
Market or bought direct from local farms,
including David and Di Ginger of Cheddar,
Somerset. Our cattle are supplied by Paul
Dart at Darts Farm and David Lockwood in
Cullompton.
As always, we are here to help you, and all of
our experienced butchery team can advise
you on every aspect of your Christmas order,
including what size turkey you will need,
dinner party and recipe ideas and cooking
times.

Lets talk turkey
As usual our Christmas turkeys have been
supplied by Nigel Broom of Colyton,
Devon, a relationship we have cherished
for over 25 years.
We are also proud to be working with Steven
Slade, Aylesbeare, Devon. Both are members of
the Traditional Farmfresh Turkey Association
who are dedicated to rearing the most succulent,
flavoursome and traditional turkeys on their
family farm.
We have sourced our turkeys from Nigel Broom
and Steven Slade because they share our high
standards in traditional animal husbandry and
concern about welfare, which means that all the
birds live a healthy life, enjoying natural diets and
the freedom to roam grassy paddocks. The
turkeys are traditionally dry hung and hand
finished. All this contributes to the turkeys’
distinctive taste and texture – that will make our
customers Christmas dinners extra special.

TOP TURKEY TIPS AND HINTS
Top tips for
your turkey
The turkey is undoubtedly our best seller at Christmas, with our
wonderful traditional white and free range bronze turkeys (pg 15)
providing tender, juicy meat with a real old-fashioned flavour. Here
are our top tips for getting the best out of yours.
We specially select our turkeys to ensure that
when cooked the meat will be mouthwatering
and flavoursome. Our birds start at 8–10lb and
have a proper layer of fat under the skin, which
will lock in the flavour and moisture.
What size?
For 2–4 people go for our minimum size of an
8lb (3.63kg) turkey. For 6 people we recommend
you opt for a 10–12lb (4.54–5.44kg) bird, or for
8–10 guests go for 12–14lb (5.44–6.35kg). For

larger parties of 12–14 guests opt for a 16lb
(7.26kg) turkey, and for 16-20 guests look for
a 17lb (7.71kg) plus bird. This will allow for a
generous portion at dinner as well as a decent
amount of leftovers for those famous turkey
sandwiches!

TOP TURKEY TIPS AND HINTS
to your door via our nationwide delivery service.
However, if you do have to freeze your bird
you should ideally defrost it in the fridge and
allow 10–12 hours per kg (approx. 2lb 3oz).
Alternatively, defrost it at room temperature
allowing 2 hours per kg (approx. 2lb 3oz) but
make sure it’s covered loosely with foil and
doesn’t touch any other foods. It must be
thoroughly defrosted before it goes in the oven
– check there are no ice crystals in the cavity
and insert a fork into the thickest part of the
bird to test the texture.
Giblets
Remember to remove these from the turkey
as soon as you get it home and store them
separately so you can make delicious stock and
gravy later.
To stuff or not to stuff ?
We recommend that you stuff your bird in the
traditional way but many people now prefer to
cook their stuffing separately. It’s completely up
to you but remember to weigh your turkey
after stuffing to ensure your cooking times are
correct. For the ideal basis for homemade
stuffing see our tasty sausage meat or why not
try our delicious stuffing mixes, all on.
Locking in the flavour
Why not try laying some streaky bacon over the
bird to help lock in the moisture and flavour?
You could also try softening some butter and
flavouring it with your favourite herbs (rosemary
and thyme work well) before rubbing it on to the
skin (or even better – underneath it!). Always
place loose foil over it in the oven, as this will
help seal in the moisture and remember to
baste regularly.
And finally …
Remember to let your turkey rest for at least 20
minutes after removing it from the oven. As long
as it’s covered it won’t go cold and will be so
much easier to carve.
Not a turkey fan?
Why not consider a traditional goose, a richly
flavoured duck, a succulent chicken or a
multi-bird roast. You could even try a French
Trimmed Fore Rib of Beef, a tender leg of lamb
with garlic and rosemary or even a loin of
pork stuffed with plum and ginger. Who says
Christmas isn’t Christmas without turkey?
The perfect timing
As a rough guide an unstuffed bird in a
190°C/375°F (gas mark 5) preheated oven
will take:

+ 70 minutes at the end
Over 4kg (approx. 8lb 13oz)
= 20 minutes per kg (approx. 2lb 3oz)

Remember – fan assisted ovens will cook more
quickly so check your manufacturer’s guidelines.
Test it’s cooked by piercing the thickest part
(usually the leg) and checking the juices run clear.

The forgotten cuts of beef
Our regular customers will know that we’re
passionate about bringing back ‘the forgotten cuts’
of meat that may not be fashionable but still
provide fabulous meal solutions. Our Aitch-Bone,
for example, is a delicious roasting joint similar to
a rump steak, available on or off the bone. There’s
also our 2-Bone Fore Rib, which we think is one of
the most succulent, tender pieces of beef available.
It’s taken from the middle of the animal next to the
sirloin. Roasted for 15 minutes per lb (0.45 kg), it can
serve up to 10 guests and is sure to impress!
