Yummy Bunny Cake
Ingredient List
Cake:
1 box Betty Crocker® SuperMoist® carrot cake mix
1 cup water
2/3 cup vegetable oil
3 eggs
Frosting:
1 container Betty Crocker® Whipped fluffy white frosting
2 cups shredded coconut
1 package M&M's
1 sandwich bag
green food coloring
Serving tray
Steps
1. Bake the Cake
Bake the cake per the instructions on the box. Use an 8" pan
for a fatter bunny, 9" for a skinnier one. You'll need to let it
cool before icing, so you can make your green grass garnish
while you're waiting.
2. Make the Grass
Take a cup of the shredded coconut and put it in a sandwich
or food-storage bag. Add a few squirts of the food coloring
gel, seal the bag and start shaking/kneeding the outside of
the bag to mix in the coloring. You may need to add a few
more drops of the green coloring to get the hue just right. Be
sure to distribute the color evenly. Once done, set aside until
the next step.
3. Assemble Cake Pieces
On a cutting board, start by cutting the round cake in half.
(Use a serrated bread knife for best results). Add icing to top
of one, then stand it up on the flat end. Fold the other end up
and gently press together. (The icing will help hold it
together). Gently move to the serving tray. Cut a notch out
for the head. Use that piece for the tail.
4. Add Icing
Start by icing the entire cake with the fluffy white icing. Next, you'll
want to add the green "grass" coconut around the base of the iced
bunny. This will help by keeping you from getting green coconut on
the white later, which you add next. Finally, add the M&M's as eyes
and a nose. You can use gel icing for the whiskers, or toothpicks look
good, also. Place some M&M's around the grass as Easter eggs.
Don't like coconut? If your taste buds are different, try using almond
slivers over the top of your icing. You can also use toothpicks for the
whiskers - just snap two or three in half and insert next to the nose.
